10 bratwursts
2 (12 ounce) cans beer
1 large onion, chopped
10 bratwurst buns

Steps:

  • Put 2 beers in a pot.
  • Throw in a chopped onion and the brats. If you need more liquid to cover the brats, add water.
  • Bring the beer to a simmer (Don't let it boil - ever! When steam begins to rise from the top of the liquid, it's just right. Boiling will cause the brats to burst).
  • Simmer the brats for 20 minutes.
  • Throw out the beer/onion mixture.
  • Place brats on the grill 7-9 inches above the coals.
  • Use tongs to turn the brats often until golden brown on all sides, about 10-15 minutes if you have pre-simmered them.
  • Cover grill between turns.

6 large uncooked bratwursts
2 large onions, sliced
1 large green pepper, sliced
2 (12 ounce) cans beer
6 brat buns

Steps:

  • Grill brats over hot coals browning on all sides.
  • Remove from grill and place in large kettle or dutch oven,.
  • Cover with beer, onions and pepper.
  • Simmer at least 1 hour not over direct heat.
  • The heat removes the alcohol from the beer.
  • Brats may be simmered for several hours just add more beer if it gets too low.
  • Serve hot on toasted buns, with the peppers and onion or the toppings of your choice.

One 12-ounce bottle hard apple cider
1 1/2 cups beef broth
6 fresh bratwurst sausages (about 1 1/2 pounds total)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 large sweet onions, thinly sliced
Kosher salt and freshly ground black pepper
6 pretzel rolls, split
Spicy brown mustard

Steps:

  • Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
  • Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
  • Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
  • Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.

2 pints fresh local blackberries
2 tablespoons baker's sugar, plus 1/2 cup, plus more for cream
1 lemon, zested and juiced
1/8 teaspoon ground cinnamon, plus more for cream
1 loaf pound cake
1 pint whipping cream
3 to 4 sprigs mint, leaves chiffonade

Steps:

  • In a medium bowl, add 1 pint of blackberries, 2 tablespoons of baker's sugar, half of the lemon zest, half of the lemon juice and 1/8 teaspoon of cinnamon. Stir to combine. Cover the bowl and refrigerate overnight.
  • Preheat a grill to medium.
  • Cut the pound cake into 8 even rectangular slices. Cut a V-shape out of 1 side of each section and grill the slices over medium heat until grill marks appear.
  • For the blackberry sauce: Blitz together in a blender the remaining 1/2 cup of baker's sugar, 1 pint of blackberries, remaining lemon zest and lemon juice and a little water, if needed, to make a smooth sauce.
  • Whip the cream in a small bowl with a hand mixer, and add some sugar and cinnamon, to taste. Arrange the pound cake on a serving platter. Put some of the macerated berries inside the cut out V-shape of each pound cake section. Top with blackberry sauce and whipped cream. Garnish with sprig of mint and serve.

Sheboygan Grilled Brats image

Growing up on a lake in the Sheboygan area, this was a standard way that the German folks would grill their brats. We always served them on the old-fashioned hard rolls. By finishing them in the beer sauce they just get better and better. Though it's expensive, on special occasions I use a dark beer which is not German at all: Guinness Irish Stout. Around our house, we eat them with ketchup and mustard, and the cooked onions from the brat sauce.

¼ cup butter
2 medium onions, thinly sliced
3 cloves garlic, chopped
4 (12 ounce) bottles dark beer
2 pounds fresh bratwurst
10 hot dog buns

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Melt butter in a large skillet over medium heat, cook and stir the sliced onions for 5 to 10 minutes, or until tender and translucent. Add the chopped garlic and cook, stirring, for an additional 2 minutes. Add the beer and let simmer while the bratwursts are cooking on the grill.

  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper.
