GRILLED CITRUS AND HERB CHICKEN
This grilled citrus and herb chicken is juicy, tender, and flavored with the best marinade. A super easy dish that's ready in no time!

Steps:
- Place the olive oil, garlic, lemon and orange zest, lemon and orange juice, basil, oregano and thyme in a resealable plastic bag. Seal and shake to combine.
- Place the chicken in the bag, seal and shake until chicken is coated with the marinade.
- Refrigerate for at least 30 minutes or up to 4 hours.
- Preheat the grill or a grill pan over medium high heat.
- Remove the chicken from the marinade and season both sides generously with salt and pepper.
- Grill for 4-5 minutes on each side or until chicken is cooked through.
- Remove from grill and let the chicken rest for 5 minutes. Sprinkle with parsley and serve, with lemon wedges if desired.

- In a mixing bowl whisk together all ingredients except chicken until well combined.
- Place chicken in a gallon size resealable bag or dish.
- Pour marinade over chicken. Transfer to refrigerator and let rest at least 1 hour and up to 6 hours.
- Preheat a grill over medium-high heat. Remove chicken from marinade and cook on grill until center registers 165 degrees in center of thickest portion, turning once halfway through cooking (reduce grill temperature as needed if chicken is browning too quickly).
- Let chicken rest 5 minutes before serving. Garnish with chopped fresh parsley if desired.
GRILLED BONELESS CHICKEN BREASTS WITH CITRUS MARINADE

- Whisk the marinade ingredients in a large bowl. Reserve 1/4 cup of the marinade, then pour the rest into a gallon zip-top bag. Add the chicken breasts to the bag, squeeze out as much air as possible, and seal the bag. Refrigerate for 1 to 4 hours, flipping the bag every now and again to make sure the chicken is evenly marinated. (Or, marinate in a shallow baking dish just large enough to hold the chicken in one layer.)
- Set your grill up for direct medium heat, 350°F. I preheat my gas grill on high for 10 minutes, then brush the grates clean and turn the burners down to medium. In my kettle grill, I light a chimney starter 3/4 full of coals; when the coals are lit and covered with gray ash, I pour them in a loose single layer on half of the charcoal grate. Then I put on my grill grate and brush it clean.
- Put the chicken on the grill grate directly over the heat. (Keep the lid closed as much as possible). Grill the chicken until it has good grill marks on the bottom, about 3 minutes, then flip the chicken. Grill until it has good grill marks on the other side, about 3 more minutes. Flip the chicken and rotate each piece 90 degrees (for a crosshatch of grill marks), then grill until you have another good set of grill marks. Flip the chicken one last time - it is done when it reaches an internal temperature of 160°F, about 3 more minutes.
- Put the chicken breasts on a serving platter and drizzle with the reserved marinade. Let them rest for 5 minutes, then serve.
GRILLED CITRUS MARINATED CHICKEN THIGHS

- Season the chicken thighs generously with salt and pepper. In a non-reactive baking dish large enough to hold all the chicken to marinate, whisk together the vegetable oil, citrus zests and juices, cayenne pepper and the thyme. Add the chicken thighs and turn to coat. Let marinate for at least 30 minutes or up to a couple hours in the refrigerator.
- Preheat the grill. Remove the chicken from marinade and let excess drip back into dish. Place chicken on the hot grill, without overcrowding the pieces. Grill until fully cooked through, turning occasionally, about 15 minutes total, depending on how hot your grill is. Serve immediately.

PERFECT GRILLED CHICKEN BREAST
This isn't so much a recipe as it is how to grill a skinless, boneless chicken breast that comes out tender, juicy and perfectly cooked. I was always afraid of the BBQ because my chicken breasts would always come out dry and flavourless....not any more. Try this and I guarantee you a perfectly cooked chicken breast every time. - Brush chicken breast with olive oil on both sides.
- season with garlic powder, seasoned salt and pepper.
- Preheat grill on medium heat. Place seasoned breasts on the grill, close the lid and set a timer for 4 minutes.

- Whisk 2 Tbsp. oil and next 4 ingredients in a large bowl; stir in 2 tsp. salt. Add chicken breasts; turn chicken to coat, cover, and chill overnight.
- Build a medium-low fire in a charcoal grill, or heat a gas grill to medium. Remove chicken breasts from marinade; set marinade aside. Place chicken breasts on grill, skin side up. Cover and grill, moving chicken to different spots on the rack for even cooking but without turning, until slightly charred and almost cooked through, about 20 minutes. Turn chicken. Brush orange and lemon quarters with oil and arrange around chicken breasts on grill. Continue grilling until chicken breasts are golden brown and cooked through and orange and lemon quarters are caramelized, 10-15 minutes longer.
- Meanwhile, bring marinade to a boil in a small saucepan and cook until reduced to glaze consistency (about 1/3 cup); season with salt. Transfer chicken to a platter and surround with grilled oranges and lemons for squeezing over. Spoon glaze over chicken and garnish with parsley.
