- In a small bowl, combine the pineapple, onion, green pepper, cilantro, 1 teaspoon lime juice, 1/8 teaspoon salt and cayenne. Chill until serving., Combine oil and remaining lime juice; drizzle over fillets. Sprinkle with pepper and remaining salt., On a greased grill rack, grill fish, covered, over medium heat or broil 4 in. from the heat for 3-4 minutes on each side or until fish flakes easily with a fork. Serve with salsa.

GRILLED TILAPIA AND MANGO SALSA
This is my boyfriend's absolute favourite meal. It is very easy to prepare, and goes great on top of lemon basmati rice. I like to present it by placing the tilapia on top of lemon basmati rice, with the mango salsa spread over top of the fish.

Steps:
- Stir the olive oil, garlic, basil, black pepper, and salt together in a bowl. Put the tilapia fillets in a resealable plastic bag; pour the olive oil mixture over the fillets and seal the bag. Marinate in refrigerator for 1 hour.
- Make the salsa by stirring the mango, lime juice, orange juice, jalapeno pepper, red onion, red bell pepper, green bell pepper, parsley, and black pepper together in a bowl. Refrigerate for 1 hour to allow the flavors to blend.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Remove the tilapia from the marinade, shaking off any excess oil, and wrap each fillet in a piece of aluminum foil.
- Cook the tilapia on the preheated grill until the flesh easily with a fork, 3 to 4 minutes per side. Spoon the salsa over the tilapia to serve.

How to wrap and grill bacon wrapped tilapia

Steps:
- Preheat the grill to 400º F.
- Spray coat a grilling basket with cooking spray.
- Put the tilapia in a dish. Coat with salt and pepper.
- Brush a small amount of olive oil onto the fish.
- Take two raw pieces of bacon and wrap it around the tilapia.
- Do this with all of the pieces of tilapia.
- Put into the grilling cage.
- (I kept a plate under the basket as I prepared the fish so it wouldn't drip all over the kitchen.)
- Put grill basket with the fish onto the grill.
- Cook on one side for 5 minutes on high heat and then flip the basket to cook the other side.
- Cook until the fish is flaky and white. Bacon may need a few extra minutes, and that is okay.
- Serve warm with parsley sprinkled on top.

- In a small bowl combine 2 tablespoons olive oil, with orange rind, orange juice, ginger root and 1/4 cup coriander. Season with salt and pepper. Spray 4 large pieces of aluminum foil with cooking spray and place on fish in the center of each.
- Divide orange mixture in 4ths and spoon into the body of each fish. Add 2 slices of the orange inside the fish. Wrap tightly and place on preheated grill. Grill over medium heat for about 30 minutes or until fish is done. Meanwhile combine yogurt, mayonnaise, lime juice, remaining olive oil and remaining coriander in a bowl.
- When fish are done remove from grill and unwrap. Be careful of the hot steam. Place on plate and pour 1/4th of the sauce over each fish.

- Remove 16 husks from corn, being careful to keep husks intact. Remove remaining husks; discard. Soak corn and husks in water 30 min. Meanwhile, pour 1/2 cup dressing over fish in shallow dish. Refrigerate until ready to use. Combine remaining dressing with half the tomatoes.
- Heat grill to medium-high heat. Grill corn 15 min. or until tender, turning occasionally. Cool slightly. Cut kernels off cobs; place in medium bowl. Add remaining tomatoes, avocados and onions; mix lightly.
- Remove fish from dressing; discard dressing. Place 1 fillet on each of 8 corn husks. Cover with remaining husks, completely enclosing each fillet.
- Grill 4 min. on each side or until fish flakes easily with fork. Transfer to platter; remove top husks. Top fish with tomato mixture and corn salsa. (Do not eat corn husks.)

- Heat a grill pan over medium-high heat 5 minutes. As pan heats, peel pineapple half; cut lengthwise into two pieces and remove core. Slice each pineapple piece lengthwise into three strips. Arrange strips in a single layer over grill pan; cook 2-3 minutes on each side or until grill marks appear. Set aside. While pineapple cooks, chop onion and cut pepper in half lengthwise -- remove and discard seeds. Chop chile and cilantro. Combine onion, pepper, cilantro and salt in a small bowl. Zest the lime to measure 1 teaspoons zest and juice lime to measure 1 tablespoons juice. Add both to onion mixture; mix well.
- Whisk taco seasoning mix and oil in a bowl. Add tilapia; turn to coat. Place two tilapia fillets on grill pan. Cook 2 minutes or until grill marks appear. Turn tilapia over; cook 2 minutes or until tilapia flakes easily with a fork. Remove tilapia from pan. Wipe out pan and repeat with remaining fillets.
- As tilapia cooks, chop pineapple and add to onion mixture; mix well. Top tilapia with pineapple salsa.

- Combine the soy sauce, sugar, garlic, lime juice, ginger and red pepper flakes in a wide, shallow baking pan that will hold all of the fish in a single layer.
- Stir briefly to dissolve the sugar.
- Add the tilapia, then turn it over so that it's coated all over with the marinade.
- Set aside for 20 min or so.
- Heat the broiler to high, and move the oven rack to position closest to heat.
- Slide the pan into the oven, and broil the fish for 5 minute Keep the oven door ajar so the broiler element stays lit.
- Turn the pan around (back to front), and broil for 5 more minute.
- If the juices in the pan appear to burn, add a little water to the dry spot to prevent burning.
- The fish should be opaque and flaky.

- Combine apples, kiwi, strawberries, orange juice, zest, brown sugar, and apple jelly together. Cover and refrigerate.

Fresh flavors, vibrant colors, the sweet fruits of the summer harvest, juicy, succulent, and surprisingly filling, mixed with the clear, cool water taste of a white fleshed fish fillet, and the smokey flavor of apple wood smoked bacon. Grilled on charcoal, how can you go wrong? Yum! I am sad to see summer leaving but this, grilled on a warm autumn day will make reminisce of those wonderful days of BBQ's with friends and family. For a refreshing drink to to have along side, a freshly made lime margarita or a tall glass of iced tea, or for the children limeade. - For the Salsa: Find the butt of the peach and slice the peach all the way around the pit. Twist to release the flesh from the pit, and remove the pit from the other half of the flesh by prying it loose with a spoon. Do this with the other peach and set aside.
- Mince the onion and the red bell pepper and pour them in a medium sized bowl. Chop the peach halves into bite sized pieces and pour in with the onion and pepper. Squeeze the juice from one of the lime halves over the peaches, onion, and peppers, followed by the honey, and season to taste with the salt and pepper. Mince the cilantro and add to taste. Mix thoroughly, cover with plastic wrap and refrigerate 30 minutes, at least.
- For the Tilapia Fillets: Ready the grill with enough charcoal to burn around 375 to 425 degrees for at least 30 - 45 minutes. Accumulate charcoal to be sure that the heat is concentrated mostly in the middle.
- Wrap the tilapia fillets in two slices of bacon a peice, drizzle with lime juice from the other half the sliced lime, to taste. Season to taste with pepper and garlic powder. Place the tilapia fillets onto a sheet of Reynolds Wrap Alluminum Foil. Fold the wrap in half, longway, fold one side over the other to create a seal. Turn and fold the open sides to create two more seals.
- Place indirect from the heat on the charcoal grill, seal side up and grill until the fish fillets are flakey and the bacon is thoroughly cooked, about 30 to 40 minutes. Remove from heat and let set a moment before opening.
- Top the fillets with fresh peach salsa and close the wrap to warm the salsa through but not to cook. Serve in the alluminum foil on a large plate with grilled sliced seasoned tomatoes and a grilled flour tortilla. Garnish with more peach salsa and a sprig of cilantro.
