Tender center-cut pork chops are wrapped with bacon and rosemary are grilled on the pellet grill at 325° until the internal temperature is 145° and the bacon is crisp.

2 tablespoons dry bbq rub*
6 sprigs rosemary
6 slices of bacon

Steps:

  • Preheat your Traeger to 325° and liberally coat the pork chops with the dry rub.
  • Place a sprig of rosemary on top of each pork chop, and wrap in bacon. Secure with a toothpick, and place each on the grill.
  • Let cook for 10 minutes and flip. Continue cooking until the internal temperature reaches 145°.
  • Remove from the grill and serve hot!

Nonstick cooking spray, for the wire racks
24 strips bacon (approximately 1 pound)
1 fresh pineapple, peeled, cored and cut into forty to forty-two 1-inch cubes
3 tablespoons honey
3 tablespoons Dijon or spicy brown mustard
3 tablespoons hot sauce
Dash liquid smoke

Steps:

  • Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
  • Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
  • Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
  • Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
  • Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

1 (8 ounce) can pineapple rings, juice drained and reserved
¼ cup brown sugar
¼ cup soy sauce
¼ teaspoon garlic powder
4 pork chops
1 pinch ground black pepper

Steps:

  • Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. While the meat is grilling, place 4 pineapple rings onto the grill, and allow to cook until hot and the slices show grill marks; serve the chops topped with the grilled pineapple rings.

1 (20 ounce) can pineapple slices, in juice
1/2 cup brown sugar
1/2 cup Italian dressing
1/4 cup pineapple juice
3 tablespoons soy sauce

Steps:

  • Drain pineapple, reserving 1/4 cup of the juice for marinade.
  • Combine all marinade ingredients; use 2/3 cup to marinate pork, and reserve the rest for basting.
  • Let meat marinate for at least 3 hours.
  • Grill pork chops on medium heat for 8 minutes on each side.
  • Grill pineapple for a total of 5 minutes.
  • Baste both pork and pineapple with reserved marinade.

4 boneless pork chops (about 1 inch thick)
1/2 cup barbecue sauce
8 slices bacon
4 sprigs fresh rosemary
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400°F.
  • On work surface layer slices of bacon side by side. Place each chop on 2 pieces of bacon (picture 2 slices of bacon as the upright part of an H, and the pork chop as the across section). Season with salt and pepper.
  • Slather the chops with barbeque sauce. Flip the chops and slather the other side as well, until barbeque sauce is used up.
  • Lay a sprig of rosemary on each chop (letting the ends hang over the edge, for easy removal before serving).
  • Wrap bacon slices tightly around each chop.
  • Prepare broiler pan (or any roasting pan with a rack), by spraying surface with cooking spray.
  • Bake for 30 to 35 minutes until a meat thermometer inserted in thickest part of the meat should register about 150°F
  • Turn oven to broil and broil on each side until bacon is crisp.
  • Let chops rest for a few minutes. Remove rosemary sprigs before serving.
  • If desired, serve with additional warmed barbeque sauce.
  • Note: To cook on grill, cook over direct heat for about 5 minutes per side, then transfer to indirect heat and continue cooking until internal temperature is 150°F (about 30 minutes).

1/2 cup Italian salad dressing
1/4 cup pineapple juice
3 tablespoons soy sauce

  • In a 2-cup measuring cup, combine the brown sugar, salad dressing, pineapple juice and soy sauce. Pour 2/3 cup into a large resealable plastic bag; add the pork chops. 1 (20 ounce) can pineapple chunks in juice, drained
½ cup packed brown sugar
½ cup mayonnaise
¼ cup chili sauce

  • Preheat the oven to 350 degrees F (175 degrees C).

I have to give Credit for these Pork Chops to Friends, "Shari and Hubby Tim of Ken Montgomery Trucking". Whom Invited me over for dinner this week as a retired Driver (DON) we all know so well was in town. They entertained us with these fantastic "Stuffed Porkchops" on the BBQ Grill. She said "she had never made these before" boy-Oh-Boy, were we in for a treat, with the Help of Hubby Tim. These are melt in your Mouth, & so good, So I have adopted this from them.

MARINATE FOR 1 HR ACCORDING TO PKG DIRECTIONS
1 Pkg - "grill mates "pork marinade" mix according to pkg directions.
STUFFING; ACCORDING TO PKG DIRECTIONS
1 box - stuffing mix, corn bread (stove top)
PORK CHOPS
4 - 1 1/2" thick, pork chops, slit to make a pouch for the stuffing.

Steps:

  • Heat your BBQ GRILL, on high heat. Mix Marinade and set aside in 9X12 pan
  • Pork chops need to be Slit ready to be stuffed. Place Pork Chops in marinade, covering all sides well. Making sure the Pouch is filled also with marinade. marinade 1 hr. mininum. turn 1/2 way thru to marinate & coat well all over again.
  • Mix stove top stuffing according to Pkg. after 1 hr . . stuff pouch of Pork chops with stuffing.
  • Place on grill. . . grilling on high 3-4 min on each side. To Score Chops with grill Marks. NOTE:(COOKING TIMES are Approximate.) reduce heat, grilling another 5-8 min on each side. Checking for doneness you desire. Watch carfully, as every grill heat is different. Remove From grill @ desired doneness.
  • Serve with the Additional stuffing and corn on the cob. or a garden salad. Very tasty fast dinner. Many Thanks to Shari and Tim, for a wonderful visit & dinner.

YUMMY GRILLED CHOPS WITH BACON & PINEAPPLE
4 - center cut pork chops 3/4
4 - strips of good bacon
1/2 - fresh pineapple cored and sliced to 1/2
- salt and pepper to taste
- just a sprinkle of chili pdr over each side of chops
- olive oil, or canola oil (to coat grill and drizzle).

Steps:

  • Heat Coals of the grill to Med hot to Hot. Oil Grats with Olive oil.
  • Par Cook Bacon just to remove some of the grease. Drain on paper towels. Wrap each chop with bacon, Secure with toothpick.
  • Drizzle Chops with Olive oil, Season Chops with Salt and pepper Then Sprinkle with Chili pdr. to your desired tastes.
  • Core and Slice Pineapple to 1/2" thick, Drizzle with a little Olive oil.
  • Place Chops on Heated Grill . Score on Grill 5 min on one side, Turn. Grill 5 More min on the other side, till 160 degrees in the center with meat thermometer.
  • When You turn the Chops @5 min, Place your Pineapple on the Grill, heat and score and turn. Remove Both Chops and pineapple From grill Rest 3 Min. and serve with Your favorite baked Beans, or Salad.
