GRILLED KOREAN-STYLE BBQ GLAZED PORK CHOPS WITH RED ONIONS AND BABY BOK CHOY
Instead of marinating the meat, which is typical of Korean BBQ, these pork chops are brushed in a nutty hoisin glaze while they're on the grill. Grilled veggies, tossed in that same sweet and spicy glaze are served alongside.

- Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
- Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
- Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.
GRILLED SOY-GINGER PORK CHOPS

- In a small saucepan, heat the oil over medium heat. Add the ginger and garlic and stir until you can really smell everything and the garlic turns golden, about 3 minutes. Add the soy sauce, brown sugar and crushed red pepper, if using, raise the heat to medium-high and simmer until slightly reduced and syrupy, stirring occasionally, about 5 minutes. Set aside to cool completely.
- Pour the marinade into a container or a zipper-top bag and add the pork chops. Seal the container or the bag, and place the chops in the fridge. Refrigerate for 3 to 24 hours.
- Preheat the grill to medium.
- Remove the pork chops from the marinade. Grill the pork chops for about 4 minutes on each side, until the pork chops reach an internal temperature of 140°. Allow them to sit for 5 minutes before serving or slicing. Top with the scallions, and serve with the lime wedges for squeezing over the chops.

ASIAN MARINATED PORK CHOPS

- Place 1/4 cup vegetable oil, sugar, vinegar, ginger, sriracha, sesame oil, garlic and orange juice and zest in a food processor and process for 15 seconds. Put the pork chops in a heavy-duty resealable plastic bag. Add half of the marinade and reserve the other half until serving. Squeeze out the air, seal and move the chops around in the bag to coat evenly. Marinate in the refrigerator at least 30 minutes, and up to 8 hours.
- Preheat the oven to 375 degrees F.
- Remove the chops from the bag. Place the reserved marinade in a small saucepot. Bring to a boil to reduce and thicken the sauce a bit, about 2 minutes.
- Heat large stainless saute pan over medium-high heat and add the remaining 1 teaspoon oil. Brown the chops in the hot pan, 1 to 2 minutes per side. Place the saute pan in the oven and cook until done (155 degrees F internal temperature). Serve with a spoonful of the glaze, with cilantro and sliced green onions sprinkled on top.

- Heat gas or charcoal grill. Rinse pork chops; pat dry. Rub with vegetable oil; drizzle with orange juice. Sprinkle with salt and pepper.
- In small bowl, beat basting sauce ingredients with whisk until well blended.
- Place pork on hottest side of grill; sear 1 to 2 minutes on each side, being careful not to burn pork. Move pork to cooler side of grill; cook 10 to 20 minutes, turning several times and basting both sides generously with soy sauce mixture, until pork is firm to the touch, juices run clear and center is just pink when cut with knife. - Trim excess fat from chops; then prick with a fork on both sides and set aside.
- Combine soy sauce, ginger and garlic in a small bowl; pour half of this in a shallow pan and add the chops.
- Pour remaining sauce/marinade over the chops, then refrigerate for up to 8 hours, turning occasionally.
- Prepare grill; spray grill rack with non-stick spray before heating.
- Combine sugar, honey and sesame oil in a small saucepan; cook on low until sugar dissolves then remove from heat.
- Remove chops from marinade and discard marinade.

- In a bowl, combine the lemongrass, cilantro, mint, ginger, garlic, sugar and lime zest. Stir in the fish sauce, soy sauce, pineapple juice, and oil. Put the chops in a large zip-top bag and pour in the marinade. Seal the bag, squeeze out the excess air and refrigerate for 8 hours or overnight, turning the bag occasionally.
- When you're ready to grill the chops, remove them from the marinade and drain off and discard the liquid. It's okay if some solids adhere to the chops.
- Build and light a charcoal fire with coals banked on one side only. If using a gas grill, set one side to medium high and leave the other side off. When the fire is medium hot (you'll be able to hold your hand just above the grate for about 2 seconds), set the chops directly over the heat. Sear them for about 2 minutes per side, and then use tongs to move them to the area with no direct heat, arranging them so the bone side of the chop (if there is one) faces the heat (the bone acts as a barrier to the heat). Cover the grill and cook the chops indirectly until their internal temperature reaches 145° to 150°F, another 3 to 5 minutes per side.
- Transfer the chops to a clean platter and let them rest for 5 minutes so the juices redistribute and the chops finish cooking. Sprinkle with more cilantro and mint and serve with the lime wedges.

- Prepare the pork chops by removing all of the fat.
- Then poke both sides of each chop with a fork.
- Place the chops in a container with a tight fitting lid to be marinated.
- In a separate bowl, mix together thoroughly all of the ingredients for the marinade.
- Pour the marinade over the pork chops and stir them to coat.
- Place them in the refrigerator and marinate overnight.
- When you are ready to cook the chops, pre heat the grill to medium high.
- Once the grill is hot remove the chops from the marinade and immediately place them on the grill.
- Reserve the marinade in the container and let the pork chops sit for 2 minutes.
- After 2 minutes, rotate the chops, don't flip them yet.
- Just turn them to make nice grill marks on the one side.
- Then using the reserved marinade, lightly baste each pork chop.
- Let them cook another 2 minutes and then flip them.
- Lightly baste again with the remaining marinade.
- After another 2 minutes, rotate them to create grill marks on the other side and lightly baste them one more time.
- After 2 more minutes check to make sure that the internal temperature of each pork chop has reached 140 degrees.
- Once they are done, remove them from the heat, cover them with foil and let them sit for about 10 minutes and then serve.
