Number Of Ingredients 9

2 slices thick-cut bacon
1 teaspoon brown sugar
1/2 yellow onion, sliced thin
3 tablespoons salted butter, at room temperature
2 thick slices hearty multi-grain bread
1 tablespoon mayonnaise
3 ounces grated white Cheddar
1/2 Granny Smith apple, sliced
1 tablespoon whole-grain Dijon mustard

Steps:

  • In an 8-inch nonstick skillet over medium heat, cook the bacon until crisp, about 5 minutes. Tear in half and set aside.
  • Into the same skillet, add the brown sugar, onions and 1 tablespoon of the butter. Cook, stirring as needed, until the onions are golden, about 5 minutes. Transfer to a plate and set aside.
  • Build the grilled cheese by spreading one piece of bread with the mayonnaise. Sprinkle half of the grated cheese on top, followed by the onions. Place the apple slices and bacon on top of the onions, then add the rest of the cheese. Spread the other slice of bread with the mustard and put it mustard-side down on top of the cheese. Spread the outside of the top bread slice with 1 tablespoon butter.
  • Transfer the sandwich to the skillet over medium-low heat, butter-side down. Spread the top of the sandwich with the remaining tablespoon butter. Toast each side of the sandwich until golden on the outside and the cheese is melted, 3 to 4 minutes per side. Cut in half and serve.

I love sweet sandwich, such as fruit sandwich or adding ice cream or whipped cream to my sandwich. But for my husband, he needs something salty and meaty. To make both of us happy, I created this recipe. It was a big experiment but worked very well thanks to bacon! When I made this for the first time, I didn't cook the sandwich...

1 brioche sandwich roll, split horizontally
2 slice bacon
1/2 apples, red delicious, washed, cored
1/3 c cheddar cheese, shredded
2 oz cream cheese, room temperature
1/4 c packed minced fresh parsley
1 1/2 tsp sugar
1/2 tsp lemon juice
1 Tbsp butter, unsalted, divided

Steps:

  • 1. Make parsley cheese spread. In a bowl, put parsley, sugar and lemon juice. Stir to combine. Cover the bowl with plastic wrap and refrigerate for 2 hours (until parsley is wilted and develops the flavor. you can refrigerate up to overnight).
  • 2. After 2 hours, put cream cheese into a bowl. With hands, squeeze the parsley to remove excess liquid then put into the bowl. Mix to combine.
  • 3. Slice apple into 1/4 inch thick lengthwise.
  • 4. In a non-stick skillet, cook bacon over medium heat until crisp (but not too crisp) flipping once. Drain on paper towels.
  • 5. Discard the excess bacon fat in the skillet, return the skillet on the stove and add apple slices to the skillet. Cook apples over medium heat until lightly brown flipping once.
  • 6. On the bottom of brioche, put half of shredded cheddar cheese, bacon slices, apple slices, parsley cheese spread and the rest of shredded cheddar cheese. Put the top of the brioche to close sandwich.
  • 7. In a cast iron skillet, melt 1/2 tablespoon of butter over medium heat. Place the sandwich and cook swirling occasionally until golden brown. Take the sandwich out of the skillet and place on a plate or cutting board.
  • 8. Melt 1/2 tablespoon of butter in the same skillet. Return the sandwich to the skillet, cooked side up, and cook swirling occasionally until the second side is golden brown and cheese melt

2 slices bread (sourdough is recommended)
3 tbsp butter softened, divided
1 cup shredded cheddar cheese

Steps:

  • Spread 1 tbsp of butter on one side of each slice of bread.
  • With butter side down, add cheese and then fold the sandwich closed, leaving the cheese on the inside and butter on the outside.
  • In a skillet over medium heat, melt ½ tbsp of butter. Reduce heat to medium-low and add the sandwich. Cook for about 2 minutes, however the key is to attend to the sandwich closely to achieve perfection.
  • Flip the sandwich to toast the reverse side once the cheese begins to melt and the down facing side begins to brown.

Cook for 6-7 minutes. Take off heat and set aside. Heat skillet to medium (we really like cast iron for this if it’s available, but if not use a non-stick pan). Assemble the sandwich: one slice of Gouda first, top with bacon, then the apple, two spoonfuls of sautéed chard, and finally, more sliced of cheese.
