2 tablespoons olive oil
1 pound fingerling potatoes, scrubbed and halved
Kosher salt and freshly ground black pepper
2 tablespoons herbs de Provence
8 cloves garlic
Extra virgin olive oil
1/2 pound haricots verts (French green beans)
Kosher salt
4 quail eggs (quartered chicken eggs are a good substitution)
4 equally thick 3-ounce pieces 'sushi grade' ahi tuna
Freshly ground black pepper
2 tomatoes, seeded and quartered
1 pound fresh baby tatsoi or baby arugula
1/2 cup, pitted and coarsely chopped nicoise olives
4 slices country bread or baguette, toasted
Balsamic vinaigrette:
1/4 cup balsamic vinegar
Kosher salt and freshly ground black pepper
3/4 cup olive oil
1 teaspoon minced fresh thyme leaves
3 tablespoons minced shallots
1 tablespoon smooth Dijon mustard
2 tablespoons whole grain mustard
1/4 cup red wine vinegar
Kosher salt and freshly ground black pepper
3/4 cup olive oil
2/3 cup chopped capers
3 tablespoons minced shallots
1 teaspoon minced thyme

Steps:

  • To roast the potatoes: Preheat the oven to 400 degrees F.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil, potatoes, salt and pepper. Transfer the skillet to the oven and roast the potatoes until they begin to color, about 10 minutes. Turn the potatoes over, add the herbs de Provence and continue cooking until the potatoes are tender, about 7 minutes more. Set the potatoes aside to cool.
  • To prepare the salad: Wrap the peeled garlic cloves in aluminum foil and roast in a 400 degree F oven until soft, about 15 minutes. Cool slightly then mash the garlic to a paste adding a tablespoon or 2 of olive oil. Set the garlic paste aside.
  • Blanch the haricots verts in boiling salted water, until crisp but tender, about 4 minutes. Refresh the beans in an ice bath, then set aside.
  • Boil the quail eggs in salted water for 2 minutes and 15 seconds. Shock them in an ice bath, peel, and set aside.
  • To prepare the balsamic vinaigrette: Whisk 1 tablespoon of Dijon mustard with the balsamic vinegar and a pinch each of salt and pepper. Slowly whisk in 3/4 cup olive oil. Add minced thyme and shallots.
  • To prepare the caper vinaigrette: Whisk 1 tablespoon of Dijon mustard with the grain mustard, red wine vinegar and a pinch each of salt and pepper. Slowly whisk in 3/4 cup olive oil. Mix in the capers, shallots, and minced thyme.
  • To finish the salad: Season the tuna on both sides with salt and pepper. Heat and oil a grill or cast iron pan and sear the tuna on both sides (the tuna is best rare¿the cooking time will depend upon the thickness of the pieces).
  • In a large mixing bowl, combine the tomatoes, tatsoi, haricots verts, potatoes, and olives. Dress the salad with balsamic vinaigrette and season with salt and pepper, to taste. Arrange the salad on 4 plates. Spread the toast with garlic puree. Put a piece of toast on each salad and place a piece a tuna on top. Spoon caper vinaigrette over the tuna, garnish with a quail egg, season with salt and pepper and serve.

GRILLED MEDITERRANEAN AHI TUNA

Grilled Mediterranean Ahi Tuna image

Ahi Tuna (Yellowfin) Steaks Grilled with a Mediterranean Flair. Yellowfin Tuna or Ahi Tuna is usually served either Raw, as in sushi or Seared. or Grilled. When I first had this tuna grilled in spain with olive oil and salt I couldn't believe it was fish at all. This recipe is a bit of a cross between seared italian style and Spanish grilled.

Categories     Fish     Spanish     Spanish Fish     Low Carb     Low Carb Fish     Dinner     Fish Dinner

Yield 4

Number Of Ingredients 9

4 5oz Uncooked Fresh or Frozen ( thawed) Ahi Tuna Steaks 1 inch thick
1 tbsp Extra Virgin Olive Oil
1/2 tsp Salt - Kosher
Lemon Juice from 1 wedge of lemon 1/2 tsp
1/4 tsp Cracked black pepper freshly ground
1/2 tsp finely chopped oregano or 1/4 tsp dried
1/4 tsp red pepper flakes or dash crushed dried
1 tsp finely chopped basil or 1/4 tsp dried
Garlic, 1 clove minced fine

Steps:

  • 1) Preheat Outside Grill on Medium High setting when you start your prep. Or start your charcoal grill about 30 minutes before you plan to grill tuna.
  • 2) Pat tuna steaks with paper towels to remove excess moisture then place in a shallow dish.
  • 3) Mix all spices with oil and lemon juice in a small bowl with a fork or wisk. Allow to rest for at least 5 minutes to blend together.
  • 4) Brush mixture on both sides of Tuna steaks and allow steaks to rest for another 5 minutes.
  • 5) Grill steaks on hot grill 2-5 minutes on each side to attain desired doneness. For well done there should still be some pinkness to the center. Most prefer barely warm red centers. Be Brave, you will be surprised at the flavorful moistness and un-fishyness of this Tuna!
  • Overcooking to a uniform color would be a sad waste of a great dish!

GRILLED AHI TUNA WITH SESAME SOY SAUCE

Grilled Ahi Tuna With Sesame Soy Sauce image

From Williams-Sonoma Kitchen. This is what they say in their intro. A member of the mackerel family, tuna is a large fish with rich, oily, firm flesh. This recipe calls for ahi tuna, also known as yellowfin, a variety that is slightly more flavorful than the mild-tasting albacore. Because its meat is oily and firm, tuna takes well to grilling and pan roasting.

  • Prepare a grill for medium heat (350° to 450°). In a small bowl, combine honey and mustard. Rub tuna with mixture and let marinate at room temperature, 10 minutes.
  • Use an oil-soaked paper towel to wipe grill grates. Cook tuna just until grill marks appear, 1 to 2 minutes on each side, leaving tuna rare inside. Cut each steak across the grain into 1/4-in.-thick slices.
  • In a small bowl, combine 1/3 cup olive oil, the vinegar, and lime juice. In a medium bowl, combine greens, onion, salt, pepper, oranges, avocados, and 2/3 of vinaigrette; toss to coat. Divide salad among 4 plates and arrange tuna slices on top. Serve with remaining vinaigrette on the side.
  • *Look for troll- or pole-caught Pacific albacore tuna; it's more sustainably fished than longline, and the fish have lower mercury levels. U.S. ahi is next best.

  • Combine the soy sauce, green onions, lemon juice, garlic, and sesame oil in a bowl and whisk together well.
  • Add your ahi tuna steaks to a large plastic bag. Pour all of the marinade (except for 1/4 cup we’ll save for later) you just whisked together into the bag and seal it tight, pressing out all of the air as you do so.
  • Lay the bag flat and make sure the marinade is coating all of the tuna steaks. Let them marinate for about 30 minutes.
  • Spread the sesame seeds on a plate in a flat even layer. Remove the tuna steaks from the bag and press each one into the sesame seeds making sure all sides are coated.

  • If you're including quinoa, prepare is first. If not, move onto the next step.Rinse 1 cup of quinoa (*see notes) in a sieve under cool water for about 15-30 seconds. Shake any excess water and add to a saucepan. Add 2 cups of liquid (I always use vegetable broth when cooking quinoa, because it's friggin' tasty), and bring to a boil. Cover, turn the heat to low, and simmer for about 15 minutes or until the quinoa has absorbed all of the liquid and can be fluffed with a fork. Set aside 1/4 cup, and pack up the rest of your quinoa for use later in the week. While the quinoa cooks, make your dressing.
  • Add all of the dressing ingredients into a high-powered blender and blend until the dressing is cohesive. Set aside.
  • Remove your tuna from the fridge and set it on the counter to come to room temperature. This will ensure an even cook. Since tuna doesn't take long to grill at all, prepare your veggies and get your bowl set up before grilling the tuna. It should go without saying, but don't feel obligated to make your bowl fancy. I had to make mine look pretty, because I had to entice you to come see this recipe ;)
  • Bring a charcoal or stove-top cast-iron grill to high heat. Brush the fish with olive oil, and sprinkle with a generous pinch of salt and pepper on each side. Carefully place the steaks onto the grill and grill each side for 2 to 2.5 minutes. The center should be raw, like sushi. If you overcook it, the tuna will be rubbery, dry, and overall unpleasant.Let the tuna rest for about five minutes, then slice across the grain into 1/2 inch pieces. Lay the tuna over your salad bowl, drizzle with the vinaigrette, and dig in.
