GRILLED STEAK TACOS WITH CHERRY TOMATO-AVOCADO SALSA
In this supremely summery taco recipe, chile-rubbed grilled steak is topped with a spicy tomato-avocado salsa before being rolled into warm corn tortillas. Grilling the onions, garlic and jalapeño for the salsa adds a concentrated sweetness, while lime zest keeps everything sharp and bright. If you don't have access to a grill, feel free to use your broiler.

- Prepare the steak: In a small bowl, mix together the salt, chile powder, coriander, cumin, garlic and lime zest. Rub mixture all over the steaks, cover and refrigerate for at least 1 hour or preferably overnight.
- Prepare the salsa: Light the grill or heat to medium-high (or heat the broiler). Grill onion, garlic and 1 jalapeño until tender and charred on all sides, 5 to 10 minutes (or place on a broiler pan and broil). Remove from heat until cool enough to handle, then roughly chop onions, peel garlic and remove seeds and stem from jalapeño.
- Transfer grilled onion, garlic and jalapeño to a blender or mini food processor. Halve the fresh jalapeño and seed it, if desired, then add it to the blender. Process to a chunky paste. Scrape into a serving bowl and toss with tomatoes, avocado, cilantro, lime juice and salt.
- Add more charcoal to the grill, if needed, and grill the steaks until done to taste, about 2 minutes per side for rare (or broil). Let meat rest on a cutting board covered with foil for at least 7 minutes. Meanwhile, grill or broil the tortillas until warm.
- To serve, slice the meat across the grain, and serve with the warm tortillas, radishes, lime wedges, salsa and crema. Let people assemble their own tacos at the table.

GRILLED LOBSTER AND SHRIMP TACOS
Steps:
- Prepare a grill for medium-high heat.
- In a mixer with the paddle attachment, combine the butter, chipotle peppers, 1 tablespoon of the adobo sauce and 1 tablespoon of the lime juice. Season with salt and pepper, then paddle the mixture until the ingredients are distributed evenly.
- In a bowl, mix the sour cream with the remaining 1 tablespoon adobo sauce. Season with salt and pepper. Refrigerate until ready to use.
- In a bowl, combine the shrimp, tequila, olive oil, minced cilantro and remaining 1 tablespoon lime juice. Season with salt and pepper.
- Spread a heaping tablespoon of the butter mixture onto each lobster split. Put the lobster butter-side up on the grill, along with the shrimp. Grill the shrimp until just cooked through, about 3 minutes per side. Grill the lobster until the butter is melted and the meat is just heated through. Remove the lobster meat from the shells and chop into 3/4-inch pieces.
- Grill the tortillas until warmed. Assemble the tacos by distributing the lobster and shrimp among the tortillas, then topping with the radishes, sliced avocado, Fresno chile slices, cilantro leaves and sour cream mixture. Serve with a lime wedge.

- Place tomatoes, garlic, red onion, jalapenos, 1/2 cup of cilantro, and 1/4 cup of the oil into a food processor. Pulse until the consistency of the mixture is course, about 5 (1 second) pulses. Transfer to a serving bowl and season with salt and pepper. Garnish the salsa with the remaining cilantro and oil.

- Place all of the salsa ingredients into a medium size bowl. Gently mix well to combine. Cover and refrigerate until ready to use. Preheat an outdoor grill to medium high. Season the fillet and the lobster tail with salt and pepper to taste; set aside. Mix the lemon juice and 1 teaspoon of the oil and sprinkle over the lobster; run a metal or wooden skewer (that has been soaked in water for at least 30 minutes) through the middle and set aside. Skewer the onion and jalapeno peppers. Brush with one teaspoon of the oil. Place the onion and jalapeno and the fillet skewers toward the center or hottest part of the grill. Grill each skewer for approximately 5 minutes on each side. Just before turning the steak, place the lobster tail on the hottest part of the grill next to the steak. Grill the lobster for approximately 3 minutes on each side or the tail turns opaque and brown around the edges. Remove the meat and vegetables when done, transfer to a cutting board; cover and allow resting for five minutes or so. After resting, cut the fillet, lobster, onion and jalapeno into small bite size pieces; set aside and keep warm until ready to use. Lay the tortillas in a single layer on flat, clean surface. Sprinkle each of the tortillas with equal amounts of the grated cheese. To one side of the tortilla, sprinkle equal amounts of the steak, lobster, onion and jalapeno. Fold the tortilla in half and spread the outside with equal amounts of the butter; set aside. Clean the hot grill with a grill brush. Place the quesadillas onto the hot grill and, watching very carefully, toast on both sides until they are golden brown and the cheese is melted on the inside. Remove from the heat and transfer to a serving platter and allow cooling for 3 minutes or just until they are hot but cool enough to handle. Open tacos up with your fingers and stuff with equal amounts of the lettuce and arugula blend and top with desired amounts of the Salsa Fresca.
GRILLED TUNA STEAKS WITH ROASTED CORN AND TOMATO SALSA

- First make the salsa. Preheat the broiler. While it is heating, prepare the corn. Holding each ear upright, cut off the kernels with a sharp knife. Heat a large heavy-based skillet or frying pan without any fat over high heat until almost smoking. Add the kernels and dry-roast until tender, smoky and dark, tossing continuously as they tend to stick, 4 to 5 minutes. Cook the peppers under the broiler, turning them until the skin chars and bursts, 7 to 10 minutes. Put them in a plastic bag and leave to sweat and cool so the skins loosen. Peel the peppers, discarding cores and seeds. Dice the flesh.
- Heat 1 tablespoon of the olive oil in a large frying pan. Add the onion and saute until soft but not brown, 3 to 4 minutes. Take the pan from the heat and stir in the roasted corn, chopped tomatoes, sun-dried tomatoes, diced peppers, vinegar and remaining oil. Heat, stirring, until hot. Take from the heat and keep warm.
- Rinse fish steaks and pat dry with paper towels. Brush with half the oil, season with salt and pepper and set on oiled grill pan or grill. Broil 3 to 4 minutes. Turn steaks over, brush with the remaining oil and grill until done to taste, 2 to 3 minutes longer.
- Meanwhile, stir the cilantro and lime juice into the salsa, taste and adjust seasoning. Make a bed of salsa on 4 warmed plates and place a tuna steak on top of each. Serve at once.

Created by Bobby Flay for a wedding on FoodNetwork, and it was a big hit with all the guests at the wedding. I wanted to share this lovely recipe with you all. It took me about 3 hrs. to make this dish, but it is well worth it! Be careful when making the Charred Pineapple-Habanero Hot Sauce using the the habanero chiles, as it is HOT with 2! I would suggest only 1 if you don't like real hot and spicy.

- For Tacos:.
- Preheat grill.
- Brush fillets with oil and season with salt and pepper. Grill for 3-4 minutes per side.
- Remove from grill, and drizzle with some of the Citrus Vinaigrette. Let rest 5 minutes, and then flake with a fork.
- Fill each fried tortilla with some of the mahi, top with the Red Cabbage Slaw, Tomato And Avocado Salsa, and drizzle with Charred Pineapple-Habanero Hot Sauce.
- For Citrus Vinaigrette:.
- Combine all ingredients in a blender, and blend for 1 minute.
- For Red Cabbage Slaw:.
- Combine all ingredients in a bowl. Season with salt and pepper, to taste.
- For Tomato And Avocado Salsa:.
- Gently combine all ingredients in a bowl. Season with salt and pepper, to taste.
- For Charred Pineapple-Habanero Hot Sauce:.
- Heat a grill to high or preheat the broiler. Place the whole pineapple (do not peel it) on the grill, and grill until the entire surface is completely black and charred. Remove from grill, and let cool slightly.
- Peel the pineapple, remove the core, and coarsely chop the flesh.
- Heat oil in a medium saucepan over med-high heat.
- Add the onion, and cook until soft.
- Add the pineapple, pineapple puree, habanero, and vinegar, and cook until the mixture is completely soft, about 25-30 minutes.
- Transfer to a blender, and blend until smooth.
- Season with salt, pepper, and honey, to taste.
- Strain the mixture into a bowl.
- *Note: If you can't find the Pineapple Puree, heat up 1 20 oz. can of pineapple chunks in unsweetended pineapple juice along with 6 tablespoons of sugar. Simmer until the liquid has reduced by 1/2. Puree the mixture in a blender.

- Lightly brush oil mixture on both side of bread. Grill over high heat to mark and toast both sides of the bread.

- Lightly brush cut sides of rolls with dressing.
- Place rolls, cut sides down, on grid over medium-ash covered coals(or use on grill pan on top of stove); grill uncovered 1-2 minutes or until golden brown.
- Turn rolls and sprinkle with cheese. Grill 1 to 2 minutes or until cheese just begins to melt.
- Press dressing mix into both sides of steak; place on grid and grill uncovered 16-20 for medium rare to medium doneness, turning occasionally. Cook longer for desired doneness.
