Green Onion And Watercress Soup With Cheese Croutons image

This soup can be made easily in the workplace. Pack the bouillon cube, scallions, and watercress in an airtight container; stir in hot water when ready to serve. The croutons can be made ahead and packed separately.

1 slice multigrain bread, cut into 1/2-inch cubes
1/2 ounce (about 1/2 cup) Gruyere cheese, coarsely grated
1 cube low-sodium vegetable bouillon
2 scallions, finely chopped
1 cup (2 ounces) coarsely chopped watercress, toughest stems discarded
1/4 teaspoon coarse salt

Steps:

  • Preheat oven to 375 degrees. Toss bread cubes with cheese on a rimmed baking sheet. Bake until cheese has melted and bread is lightly crisp, about 10 minutes. Let cool.
  • Bring 2 cups water to a boil. Divide bouillon cube, scallions, watercress, and salt between 2 mugs. Pour 1 cup boiling water into each; stir to dissolve bouillon. Serve immediately with cheese croutons.

Not everyone knows what wedding soup is but I like mine with soft, spongy cheese croutons. This is an old Italian recipe handed down for generations. Try it, you'll love it! I like to use a combination of both cheeses.....

12 eggs, beaten
1/4 cup romano cheese
3/4 lb provolone cheese or 3/4 lb swiss cheese, shredded
6 teaspoons baking powder
1 teaspoon salt
1/2 cup flour

Steps:

  • Mix all ingredients together and pour into a greased and floured jelly roll pan. Bake for 30 minutes at 350*.
  • When cool, cut into very small squares and serve in your soup.
  • These freeze well in ziploc bags.

Feed your friends this simple freeze-ahead starter, topped with goat's cheese croutons for added crunch

4 leeks , washed and sliced
50g butter
1 tbsp olive oil
1 celeriac , peeled and diced
1 ½l vegetable stock
2 x bags watercress
6 slices toasted baguette
100g soft vegetarian goat's cheese
a few sprigs watercress , to serve

Steps:

  • Gently cook the leeks in the butter and olive oil until soft but not coloured. Add the celeriac and stock, bring to the boil and simmer until the celeriac is soft. Add the bags of watercress and blend until smooth, then season. Cool. Will freeze for up to 3 months.
  • To serve, defrost the soup in the fridge overnight, then tip into a saucepan and reheat. Top each toasted baguette slice with some goat's cheese, then add a slice to each bowl with a sprig of watercress.

Classic onion soup gets even better with caramelized onions, silky cream and zesty croutons for the finishing touch. It's worth the time it takes to cook the onions for the wonderful depth of flavor.

2 tablespoons butter
4 onions, halved and thinly sliced
1/2 teaspoon dried thyme
salt and pepper
2 garlic cloves, minced
1/4 cup dry sherry or 1/4 cup red wine
4 cups reduced beef stock
1 cup water
1 cup 35% cream
thick slices baguette
1/4 cup crumbled canadian blue cheese, softened

Steps:

  • In pot, melt butter over medium heat; add onions, thyme and 1/4 teaspoons each salt and pepper and sauté for 2 minutes or until starting to soften. Reduce heat to medium-low, cover and cook, stirring often, for about 20 minutes or until onions are very soft. Uncover and cook, stirring often, for 15 to 20 minutes or until caramelized. Increase heat to medium-high; add garlic and sauté for 1 minute. Add sherry and bring to a boil, scraping up bits stuck to pot. Add beef stock and water and bring to a boil. Reduce heat and boil gently for about 10 minutes or until flavours are blended.
  • CROUTONS:.
  • Preheat broiler. On a baking sheet, lightly toast both sides of baguette slices. Spread one side with softened blue cheese.
  • To serve, stir cream into hot soup and season to taste with salt and pepper. Ladle soup into ovenproof soup bowls . Float one crouton in each bowl and broil for about 2 minutes, or until cheese is melted. Serve immediately.

The onions may make you cry, but this soup will make you smile. The mix of two kinds of both mix with sherry and congnac make this soup yummy, but the Gruyere Croutons put it over the top.

2 1/2 lbs yellow onions, halved, and sliced 1/4-inch thick (8 cups)
1/4 lb unsalted butter
1 bay leaf
1/2 cup medium-dry sherry
1/2 cup cognac or 1/2 cup brandy
1 1/2 cups dry white wine
4 cups beef stock
4 cups chicken stock
1 tablespoon salt
1/2 teaspoon white pepper
cheese crouton
1 small baguette, cut into 1/2-inch slices
2 1/2 cups gruyere cheese, shredded

Steps:

  • In a large stockpot on medium-high heat, saute the onions with the butter and bay leaf for 20 minutes, until the onions turn a rich golden brown color. Deglaze the pan with the sherry and brandy and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes.
  • Add the beef and chicken stocks plus salt and pepper. Bring to a boil, then simmer uncovered for 20 minutes. Remove the bay leaf, taste for salt and pepper.
  • *For the croutons*.
  • While the soup simmers, arrange the baguette slices in single layer on baking sheet and bake in a 400-degree oven until the bread is dry, crisp, and golden at edges, about 10 minutes. Set aside.
  • *To serve*.
  • Adjust oven rack 6 inches from broiler element and heat broiler. Set individual broiler-safe crocks on baking sheet and fill each with about 1 3/4 cups soup. Top each bowl with 1 or 2 baguette slices (do not overlap slices) and sprinkle evenly with Gruyère. Broil until cheese is melted and bubbly around edges, 3 to 5 minutes. Let cool 5 minutes before serving.

This delish recipe comes from Southern Living. The original recipe said it serves 8, but I think it serves 4-6. It's just DH and I, so I cut the recipe in half and use 2 large oven-safe soup mugs. The amount is perfect for dinner plus seconds! Enjoy!

6 medium onions, thinly sliced
4 garlic cloves, minced
1/4 cup extra virgin olive oil
1 tablespoon butter
1 teaspoon cracked black pepper
1 tablespoon fresh thyme or 1 teaspoon dried thyme
1/2 cup dry red wine
8 cups water
3 tablespoons beef bouillon granules (or to taste)
1 cup swiss cheese, shredded
2 tablespoons fresh basil or 1 teaspoon dried basil
2 tablespoons mayonnaise
1/2 teaspoon cracked black pepper (to taste)
1 sourdough baguette, sliced on the bias

Steps:

  • Sauté onions and garlic in oil and butter in a large soup pot over medium heat until soft and golden brown, about 20-25 minutes.
  • Add black pepper and thyme to onions. Cook 1 minute. Then add red wine, cook about 1 minute while stirring and scraping any bits off the bottom of the pan.
  • Add water and bouillon to pot. Bring soup to a boil. Reduce heat to low. Cover and simmer, stirring occasionally for 20 minutes. (Double check to see if it needs any salt and pepper added to taste).
  • In a bowl, combine cheese, basil, pepper and mayo. Spread over one side of each bread slice.
  • Ladle soup into oven-safe bowls. Top each soup bowl with bread, cheese side up, making sure to cover entire soup surface with a layer of bread. (My soup mugs are quite large, so I use 2-3 baguette slices per serving).
  • Broil 2-3 minutes until the cheese begins to melt and brown a bit.
