SIMPLE GREEN SALAD WITH LEMON DRESSING

Simple green salad with lemon dressing image

If you use lovely fresh leaves and dress them properly, even the most basic salad like this one will taste absolutely amazing. The combination of oil and acid in the dressing helps our bodies to absorb more of the nutrients from the greens. Super clever!

Yield 4 as a side

Number Of Ingredients 8

SALAD
1 soft round lettuce
1 little gem lettuce
1 small radicchio (or an extra little gem)
a few sprigs of soft mixed fresh herbs, such as basil, flat-leaf parsley, mint
LEMON DRESSING
1 lemon
6 tablespoons extra virgin olive oil

Steps:

  • To make the dressing, halve the lemon, then squeeze the juice into an empty jam jar, using your fingers to catch any pips.
  • Add the oil and a pinch of sea salt and black pepper to the jar.
  • Put the lid securely on the jar and shake well.
  • Have a taste and see whether you think it needs a bit more lemon juice or oil - you want it to be slightly too acidic, so that it's still nice and zingy once you've dressed your salad leaves.
  • Use a knife to trim the roots away from all the lettuces. Separate out the leaves, throwing any tatty ones away.
  • Pop them in a colander and give them a good wash under cold running water over the sink.
  • Spin them dry in a salad spinner, or wrap in a clean tea towel and shake dry, then pile the leaves into a large salad bowl.
  • Pick and add the herbs to the bowl, discarding the stalks.
  • From a height, drizzle 3 tablespoons of the dressing over the leaves and gently toss together with the tips of your fingers until every leaf is coated - try not to be heavy-handed and don't be tempted to overdress or the leaves will go limp.
  • Have a taste and add a splash more dressing, if needed - remember you can always add more but you can't take it away, so be cautious. Pop the lid securely on the jam jar and keep the leftover dressing in the fridge for another day. Serve the salad straightaway.

GREEN GODDESS DRESSING

Green Goddess Dressing image

This bright and vibrant dressing has evolved since it originated in 1920s California. Earlier versions contained tarragon, anchovies, Worcestershire or avocados. Our reimagined classic is full of fresh, tender herbs, lemon and a balanced blend of yogurt and mayonnaise.

Categories     condiment

Time 10m

Yield About 2 cups

Number Of Ingredients 10

1/2 cup plain whole-milk yogurt
1/2 cup mayonnaise
1 tightly packed cup fresh basil leaves
1 tightly packed cup fresh dill, tough stems removed
1 tightly packed cup fresh parsley leaves
1/2 cup fresh chives (about 1 small bunch), roughly chopped
1 clove garlic
1 teaspoon lemon zest, plus 3 tablespoons freshly squeezed lemon juice
1 tablespoon sherry vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Add the yogurt, mayonnaise, basil, dill, parsley, chives, garlic, lemon zest, juice, vinegar, 1 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper to a blender. Puree until smooth, scraping down the sides with a rubber spatula as needed. Season with salt and pepper to taste. Refrigerate in an airtight container for up to 5 days; stir well before using.

CHEF JOHN'S GREEN GODDESS DRESSING

Chef John's Green Goddess Dressing image

This creamy, herby, addictively delicious sauce is not only my favorite salad dressing, but is one of my favorite dips as well. You can of course tweak the acidity with more or less lemon, as well as play with the salt and pepper, but please do not change the trio of herbs. The way the parsley and chive play against the sweet tarragon makes this unlike any other herb dressing.

GREEN GODDESS DRESSING

Green Goddess Dressing image

Green Goddess is a California classic. It makes a great dip for crudités and a wonderful dressing for robust lettuces like romaine hearts, but it's too thick and intense for delicate spring mixes. Although I've made the anchovies optional, I recommend them because they add depth to the flavor. If salt is an issue for you, leave them out.

3 tablespoons minced chives

1 tablespoon plus 1 teaspoon Champagne vinegar or sherry vinegar

  • You'll need a selection of freshly picked lettuces such as round lettuce, oak leaf lettuce, lamb's lettuce, watercress, cos lettuce, little gem lettuce, chicory and radicchio (about 4 large handfuls). You'll also need a jam jar dressing of your choice. To wash your salad leaves:
  • When you get your lettuces home, remove the roots and any not-so-nice outside leaves first, then click or tear off the rest of the leaves and give them a good old wash in cold water. Once they’re clean, give them a spin in a salad spinner or shake them dry in a tea towel. To store your salad leaves:
  • If you line a salad crisper drawer in your refrigerator with a couple of clean kitchen towels and lay your leaves on top, covering them with another towel, they’ll keep there happily for 4 days. This way you can simply make up your own mixed salads, dressing the leaves with one of my jam jar dressings. To dress your salad leaves:
  • Pour the dressing from a height and gently toss the leaves, using the tips of your fingers, until every single leaf is coated.
