GREEN EGGS & HAM
When my kids were all little they loved Dr. Seuss, and his book Green Eggs and Ham was their favorite. In an effort to get them to eat eggs, I came up with the idea of making 'Green Eggs & Ham' for breakfast. They loved it and would often demand it for breakfast. Just multiple the ingredients by the number of small children you are serving. If the kids are a little older, then you can double serving sizes. This recipe also served as a good 'science experiment' when the kids were learning about primary and secondary colors...after-all, yellow and blue make green! :-) I look forward to the day when I'll be able to make 'Green Eggs & Ham' for my grandkids.

Steps:
- Crack egg into a small bowl.
- Add milk and blue food coloring.
- Whisk together.
- Add diced ham.
- Pour into preheated and greased skillet.
- Stir a couple times while cooking until water begins to separate from eggs (this is moisture from the milk).
- Serve immediately with hot toast and jelly and juice.

This recipe originated in a cookbook my childs' playschool put together as a fund raiser. Reading Dr Suess's Green Eggs and Ham prior to cooking is a "must do" to create a memorable experience. Amount can easily be doubled, tripled, etc.

Steps:
- Read green eggs and ham.
- Beat egg and milk together till frothy.
- Saute in small amount of oil the onions, peppers and chopped ham.
- Stir in spinach and add the egg mixture.
- Add salt and pepper and stir constantly with spatula.
- Serve with toast.

Steps:
- Heat the oil in a large frying pan. Add the leeks and a pinch of salt, then cook until soft. Add the garlic, coriander, fennel and chilli flakes. Once the seeds begin to crackle, tip in the spinach and turn down the heat. Stir everything together until the spinach has wilted and reduced, then scrape it over to one side of the pan. Pour a little oil into the pan, then crack in the eggs and fry until cooked to your liking.
- Stir the yogurt through the spinach mix and season. Pile onto two plates, top with the fried egg, squeeze over a little lemon and season with black pepper and chilli flakes to serve.

- Heat 1 tablespoon oil in a large pot over medium heat. Add ham (or prosciutto) and cook, stirring often, until lightly browned, about 3 minutes. Transfer to a plate; set aside.
- Add the remaining 1 tablespoon oil and onion to the pot. Cook, stirring often, until softened, about 3 minutes. Add garlic; cook, stirring, for 1 minute. Add broth, broccoli, cauliflower, thyme and salt. Reduce heat to a simmer, cover and cook until the broccoli is very tender, about 6 minutes. Add spinach and parsley. Remove from heat and let stand, covered, until the spinach is wilted, about 5 minutes. Puree the soup in the pot with an immersion blender or in batches in a regular blender. - Meanwhile, bring water and vinegar to a boil in a large saucepan. Reduce to a bare simmer. Gently stir in a circle so the water is swirling around the pan. Cook 4 minutes for soft set, 5 minutes for medium set and 8 minutes for hard set.

- Place all the ingredients for the Lemon Dill Pesto in your blender or food processor. Process on low until everything is finely minced, but not completely smooth.
- Heat the tablespoon of olive oil in a cast iron or ovenproof frying pan over medium-high heat. Add the onion and cook for 2-3 minutes, until translucent. Lower the heat to medium and continue to cook until the onion is very soft and starting to brown, about 8 minutes. Add the ham or sausage to the pan and cook through, about 5 minutes. Add the garlic, Aleppo pepper, cumin, and sea salt and cook for 1 minute, until the spices are fragrant. Add the kale to the pan and let it wilt. Add the kale in batches if needed, letting some wilt before adding more.
- Take the pan off the heat and make 4 wells in the kale. Crack the eggs into the wells and place the pan in your oven for 5-7 minutes, or until the white are just set. Note: you can cook the eggs on the stovetop by keeping the pan on medium heat and covering it for 3-4 minutes. The only difference is the eggs will turn cloudy this way. They will taste the same.
