CREAMY CILANTRO CHICKEN
Chicken breasts in a light cajun and cilantro cream sauce are best served with cubed red potatoes and green beans or asparagus. Dish can also be served over rice, pasta, or egg noodles.

Steps:
- Pat chicken breasts dry and sprinkle with 1/2 the Cajun seasoning, salt, and pepper. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken to the very hot oil and cook, turning occasionally, until juices run clear when chicken is pricked with a fork and both sides are browned, 5 to 7 minutes. Transfer chicken to a plate and set aside, reserving drippings in the skillet.
- Add green onions and bell pepper to the drippings in the skillet. Cook until tender, about 1 minute. Add chicken broth and wine and bring to a boil, about 5 minutes. Simmer until juices have reduced to about 3/4 cup, about 5 minutes more. Add cream and continue to simmer to reduce slightly, 1 to 2 minutes. Stir in tomatoes and cilantro, plus remaining Cajun seasoning. Season with salt and pepper.
- Add chicken to the skillet, cover, and cook until heated through, about 3 minutes more.

CHICKEN CILANTRO
Don't let the color scare you! It's bright green! This is an extremely easy and tasty family recipe. Variations can definitely be made to taste...sometimes I use chicken (boneless or not)...sometimes I use shrimp...sometimes I use both. My family makes it with chicken innards (gizzards, heart, etc.) which I'm not too keen on eating. Hey, but with this soup it's to each his or her own.

Steps:
- Heat the oil in a large pot over medium-high heat, and saute the onion until tender. Place the chicken in the pot, and cook until lightly browned.
- Puree the cilantro, garlic, and 1/3 cup water in a blender or food processor. Mix into the pot with the chicken and onions. Cook and stir about 5 minutes, until mixed and heated through. Pour enough water into the pot to cover all ingredients.
- Mix the hominy, rice, and bouillon into the pot. Bring to a boil, reduce heat, cover, and simmer 20 minutes, or until rice is tender. Increase the amount of water as needed to attain desired consistency. Season with salt and pepper.

GREEN CURRY CHICKEN
Steps:
- Place a large, deep skillet over medium heat and coat with the oil. Saute the onion and green peppers for 3 minutes to soften. Split the piece of lemongrass down the middle and whack it with the flat side of a knife to open the flavor. Add the lemongrass, ginger, curry paste and lime leaves to the skillet and stir for 2 minutes. Pour in the coconut milk and chicken broth. Lay the chicken pieces in the mixture to poach; add a pinch of salt. Stir together and simmer over low heat for 10 to 15 minutes. Squeeze in the lime juice and shower with basil and cilantro; serve in dinner bowls with lime wedges.
- Heat the coriander, cumin seeds, and peppercorns in a small dry skillet for 2 minutes until fragrant. Put the seeds in a clean coffee grinder or spice mill and buzz the spices to a powder.
- Put the spice blend and remaining ingredients in a food processor, and pulse to combine. Pour in the water to help grind everything down into a paste.
GREEN ONION CILANTRO SAUCE
This is a great sauce to serve over grilled or baked chicken or fish, as well as a wonderful sauce to make tamales with (mix with cooked chicken, pork or tofu).

- Boil 4 Chicken breast in large pan of water till cooked through.
- Chop Garlic & Onions into small pieces. Saute Onions and Garlic till a carmel brown. Do not burn.
- Add Dried Spices to Onions and Garlic.
- Puree Tomatoes and Green Chillies.
- Add to Sauteed Onions, Garlic & Spices.
- Add Chicken Breasts cut into bite size pieces to sauce.

GREEN CILANTRO CHICKEN
Steps:
- Cut chicken breast in half (if you have thighs don't cut in half) Season with half of the salt and the pepper.
- In blender, mix 1/2 cup of water with the cilantro. Drizzle in the olive oil, salt, and lime juice. Put in onion and jalapeno (optional).
- Put chicken in bowl or shallow pan and pour over marinade. Let marinade for 30 minutes or more (the longer the better) but not overnight.
- Cook on medium heat in shallow fry pan with a little olive oil or put on indoor or outdoor grill (better if grilled). Cook chicken until done.
- Before chicken is done, cook your rice (according to package directions). Serve chicken over rice.
- For presentation, serve a slice of a ripe tomato on the side with a few sprigs of cilantro. You may drizzle with a little more olive oil if desired.

CILANTRO CHICKEN WITH GINGER
This recipe comes from the little info card packed with the cilantro. It calls for skin on chicken legs, but you do what you use what you want. It is baked one and a half hours in the oven.

- Preheat oven to 425 degrees F.
- Combine olive oil, soy sauce, ginger, cilantro and jalapeno in a small bowl.
- Place chicken legs in a single layer in a baking dish; pour mixture over chicken and turn to coat.
- Place garlic cloves between the chicken in the baking dish; add 1/4 cup water and cover with aluminum foil.
- Cook in oven for 1.5 hours; remove foil for the last 10 minutes of cooking to crisp the skin.

- Mix all ingredients except cilantro in a 3 1/2 qt or larger slow cooker.
- Cover and cook on high 5-6 hours or on low 8-9 hours.
- Stir in cilantro, serve with lime and sour cream and shredded cheese.
- Variation: Don't have enough salsa verde? Use less, but add about 1 cup of chicken broth (or cup of water and bouillon cube) Also, I used mild Hatch chiles and mild salsa - use whatever heat you can stand!
- Another thought - make on the stove if no time for crockpot. Bring to boil, simmer covered for about 45 minutes.

- Preheat the oven to 500°. Heat 1 tablespoon of the olive oil in a small saucepan. Add the onion, ginger, garlic, cinnamon and saffron and cook over moderate heat until the onion softens, about 5 minutes. Add the chicken stock and season with salt and pepper. Increase the heat to high and simmer, stirring occasionally, until the liquid reduces by three-quarters and becomes syrupy, about 20 minutes. Remove from the heat.
- Season the chicken with salt and pepper. Heat 2 tablespoons of the olive oil in a large ovenproof skillet. Add the chicken, skin side down, and cook over moderately high heat until lightly browned, 5 to 8 minutes. Turn the chicken and cook for 2 minutes. Turn the pieces skin side down and roast in the oven for about 25 minutes, or until the juices run clear when a thigh is pierced.
- Remove the cinnamon stick from the sauce. Add the olives and the remaining 1 tablespoon of olive oil and season with pepper. Rewarm the sauce over low heat for 1 minute. Remove from the heat and stir in the lemon juice and the 1 tablespoon of chopped cilantro. Arrange the chicken on plates and spoon the sauce around it. Garnish with cilantro and serve.
