CORIANDER AND MINT CHUTNEY
This is the famous Indian Chef, Sanjeev Kapoor's no-fat chutney that he recommends to dab on your sandwiches to make them look more appetising! Enjoy these with the Paneer cutlets recipe that has been posted separately:)

Steps:
- Put the corriander and mint leaves alongwith the green chillies and a little water in your mixer and process until you have a smooth paste.
- Remove from mixer into a serving bowl.
- Add salt and sugar.
- Stir in lemon juice.
- Serve alongside cutlets, kebabs, etc.
- or as a sandwich spread.
- NOTE: As a variation, add plain low-fat yogurt to the chutney and mix well (1 cup yogurt for 2 tbsps. of chutney).

Steps:
- Snip of the roots from both the bunches.
- Peel the garlic cloves and clean the ginger piece.
- Remove stalks from green chillies.
- Put all ingredients in a blender, add salt, sugar, and lime juice.
- Grind to make a smooth paste.
- Remove in a bowl.
- Chill to serve.
- Green chutney can be refrigerated for up to 6-7 days.
GREEN CORIANDER CHUTNEY
This is Nigella's recipe and is really delicious. I serve it as a side to Indian meals, or as a dip with poppadoms. I use 5 chilis which gives it a nice kick but does not burn the palate.

Steps:
- Put the chilies, ginger, garlic and creamed coconut into a food processor and make into a paste.
- Add the coriander and mint and pulse until they are blended.
- Add the salt and sugar. With the motor still running, pour the juice of 2.5 of the limes down the funnel, processing to mix thoroughly. Taste to see if the juice of the other.5 lime is needed.
- This can be kept for up to a month in a sealed jar in the fridge. It will solidify due to the creamed coconut, but can be restored by bringing back to room temperate, blitzing and adding a little more lime juice if needs be.
CORIANDER MINT CHUTNEY
This is a delicious, fresh-tasting chutney from Madhur Jaffrey's Indian Cooking. I love it! I generally serve it with any Indian meal I make, but I think it's equally delicious served along-side a grilled steak or chicken. I'll have to try it with my Wedding Chicken or with steak fajitas. Bet it would be great as a marinade for grilled shrimp too. Ok - you get that I think it's delicious.

- First of all remove (just) the hard stalks of coriander from the bottom, pluck the leaves of mint from the stem and cap from chillies. Now wash coriander, mint and green chillies thoroughly.
- Add them to a blender jar and grind them to a fine paste with the help of little water. You need to add only little water, so that grinding is easy.
- Now add roasted cumin powder, black salt and normal salt. Add juice from the lemon and give one more grind for few seconds just to mix everything evenly.
- Transfer the chutney to an airtight jar and keep it in Fridge. You can keep this easily for one week.
