NEW MEXICO GREEN CHILE AND CHEESE SCONES

New Mexico Green Chile and Cheese Scones image

These savory scones still have a hint of sweetness giving a nice balance to the subtile heat of the chile.

Provided by Flos Kitchen Blog

Time 45m

Number Of Ingredients 10

2 1/2 cups all purpose flour, or 312 g
2 tbsp sugar
1 tbps baking powder
1 tsp kosher salt
1/2 cup unsalted butter
2 large eggs
1/2 cup plain full fat yogurt
add milk to yogurt so the 2 ingredients together total 2/3 cup
2/3 cup sharp cheddar cheese
3 whole green chiles, roasted, seeded, skin removed, or about 1/4 to 1/3 cup frozen diced green chile

Steps:

  • Seed, chop and blot excess moisture from green chile. Set aside
  • In a large bowl, whisk to combine, flour, sugar, baking powder and salt.
  • In a seperate bowl, whisk together 2 eggs.
  • Add the yogurt and milk to the eggs.
  • Stir to combine.
  • Cut the cold butter into small cubes. Add the butter to the flour mixture.
  • Using a pastry cutter or fork, cut butter into flour. Do not over mix. You want this mixture to be lumpy. You should have pea size pieces of butter distributed through-out the flour. This will produce a light textured scone.
  • Add the milk and egg mixture to the flour. Stir to combine. Add the green chile and cheese and mix agin just to evenly combine. The dough will be moist and sticky
  • Tip mixture out onto a well floured board. With floured hands, knead dough lightly. Just enough fo the dough to all come together. Divide the dough in half.
  • Form each half of the dough into a disk about 3/4 inch thick. Cut each disk into four equal wedges. Place scones on an ungreased sheet pan.
  • Preheat oven to 375°F. While oven is preheating, allow scones to rest.
  • Bake for 20 minutes or until golden brown.

GREEN CHILE NEW MEXICAN STYLE

Green Chile New Mexican Style image

New Mexican Green Chile, of which I prefer Hatch chiles is amazing. Spicy and fresh roasted this chile can't be beat.

Provided by Abbe Odenwalder

Categories     Chile/Soup

Time 1h

Number Of Ingredients 10

3 T vegetable oil
1 large onion chopped (At least 1 c)
3 garlic cloves minced
2 T flour
1 1/ 2 c chopped mild green chiles or use 2 c of your choice of chile
½ c chopped hot green chili
1/2 t ground cumin
Pinch of Mexican oregano
2 c chicken stock (I make this with Better Than Bouillon) Just mix a good spoonful into the hot water or directly into hot soup.
1 t salt - you may want to test as the bouillon does give it a nice degree of saltiness

Steps:

  • Heat oil and add onion. Cook about 5 minutes and add garlic.
  • Cook another minute and stir in flour. Cook for 1-2 minutes stirring so flour doesn't burn and also so that it cooks and you don't get a floury taste.
  • Add chilies. Pour in stock and seasonings. Taste for salt and adjust if necessary.
  • Bring to boil over medium heat and cook for about 15 to 30 minutes on a low simmer covered.
  • If you want it thicker add more broth or water. This can cook for longer if you want your chile a softer texture.

  • In a small bowl combine the chili powder, cumin, garlic powder salt and pepper. Coat the chicken breast evenly with the spice mixture and place them in the baking dish. Top the chicken with the strips of green chiles and pour the remaining enchilada sauce on top. Sprinkle on the shredded cheese and cover the baking dish with foil.
  • Bake for 20 minutes then remove the foil and bake another 5-10 minutes or until the chicken is cooked through and the internal temperature is 165°. Garnish with chopped cilantro before serving.
  • While the chicken is baking prepare the rice. In a bowl stir together the cooked rice, enchilada sauce, green chiles, cilantro, salt and pepper. Taste for seasoning and serve with the green chile chicken.

  • Preheat oven to 400 degrees. Place halved hatch chiles on a large lined baking sheet. Roast for 30 minutes, or until slightly charred and softened. Let cool slightly, then roughly chop.
  • In a large pot, combine all ingredients (except salt and lime juice). Bring to a boil. Reduce heat and simmer for 30 minutes.
  • Place solid ingredients in a blender and pulse until well blended. Add about 2 cups of the strained liquid and blend until smooth. (You may have to do this in batches. Alternatively, you can add the solid ingredients back to your cooking pot and blend with an immersion blender – much easier!)
