Green Chili Aioli takes only minutes to blend & quickly becomes a spicy, creamy, flavorful spread or dip you can enjoy with fries, rings, or on a sandwich.

2 Egg yolks
1 tablespoon lime juice (about a half to one lime)
1 teaspoon garlic (finely minced (about 2-3 cloves))
¼ teaspoon sugar
½ teaspoon salt
2-4 tablespoons roasted green chile (minced)
¾ C Vegetable oil

Steps:

  • Place yolks, lime juice, garlic, sugar, salt, and green chile in food processor. Pulse to combine and emulsify. Alternatively, you can process in a bowl or wide mouth mason jar using an immersion blender.
  • Turn processor or immersion blender on and slowly pour in oil in a slow steady stream. Process until aioli thickens, about a minute. Turn processor off, scrap sides, process again until combined.
  • Serve immediately or store in air tight container in refrigerator until ready to use, up to a week. Makes approximately one cup.

2 lbs boneless pork, cubed,fat trimmed
2 large onions, chopped
2 cans chopped green chilies
2 jalapenos, minced
4 cloves garlic, mashed
1 tablespoon cumin seed, crushed
1 tablespoon ground cumin
2 teaspoons oregano
1/2 teaspoon thyme
1/2 cup chopped cilantro
2 (16 ounce) cans white beans, do not drain (navy, cannelini, etc)
3 tablespoons chili powder
2 tablespoons red wine vinegar
salt and pepper
2 beef double bouillon cubes (knorr)
1 1/2 quarts water
2 -3 tablespoons olive oil

Steps:

  • In a fairly large soup pot, heat olive oil.
  • Sautee garlic until golden, then add onion.
  • Sautee until it begins to become translucent, then add pork.
  • Salt and pepper to taste.
  • Cook over fairly high heat, until pork browns, then add cumin, lower heat to medium, and cook meat through.
  • Add all remaining ingredients.
  • Bring to a boil, and let boil 10 minutes or so, then cover, and reduce heat to low.
  • Cook at least 1 hour on low, and up to 3, depending on how thick you like your chili, stirring occasionally.
  • Serve with grated colby-jack cheese and a big dollop of sour cream, chopped green onions or cilantro, and tortilla chips!
  • Note:Any other kind of meat could easily be substituted--chicken, turkey, beef, whatever appeals to you!

1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
1/4 cup chopped green chilies, undrained
2 cloves garlic, chopped
2 Tbsp. pickled jalapeno peppers, finely chopped
2 Tbsp. chopped fresh cilantro
1-1/2 lbs. ground beef
2 Tbsp. canola oil
4 slices Monterey Jack cheese (about 4 oz.)
4 sesame seed hamburger buns

Steps:

  • Process Hellmann's® or Best Foods® Real Mayonnaise, green chilies and garlic in food processor until smooth. Remove to medium bowl, then stir in jalapeno peppers and cilantro. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.
  • Meanwhile, shape ground beef into 4 burgers. Brush each burger on both sides with oil, then season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until desired doneness. Top burgers with cheese and cook until cheese is melted. Arrange burgers on buns, then top with a dollop of green chili mayonnaise. Serve remainder of mayonnaise in small bowl for dipping.

1/4 cup mayonnaise
2 tablespoons fat free sour cream

1 teaspoon fresh cilantro, minced
1/4 teaspoon comino or 1/4 teaspoon cumin

My mother found this recipe in a magazine years ago. We have since lost the recipe and just been slapping them together without one.

4 ounces diced green chilies, drained
1/2 cup mayonnaise
1/2 lb deli roast beef, sliced
1/4 lb swiss cheese, sliced
8 slices sourdough bread
margarine

Steps:

  • Mix mayonnaise and green chilies. Set aside.
  • Heat non-stick skillet over medium heat.
  • Butter one side bread. Spread mayonnaise mixture on second side of bread. Place butter side of four slices of bread in pan. Add one slice of cheese to each and split meat between sandwiches. Add a second slice of cheese and the remaining bread, butter side out.
  • Grill until golden brown and cheese starts to melt. Flip and repeat.

8 ounces chorizo sausage, casings removed, cut into 1-inch pieces
1 -1 1/2 lb ground pork
1 tablespoon minced garlic
2 teaspoons Worcestershire sauce
1 1/2 teaspoons creole seasoning
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
4 slices monterey jack pepper cheese
4 hamburger buns
1 poblano chile
1 cup mayonnaise
1 teaspoon minced garlic
1 tablespoon freshly squeezed lime juice
salt & fresh ground pepper, to taste

Steps:

  • To make the Green Chile Mayo: Heat the oven to 400 degrees F. Place poblano on a foil-lined baking sheet. Roast for 15 minutes, or until the skin is blistered and blackened. Place the pepper in a zip-top plastic bag, seal and let it stand for 10 minutes. Peel, remove the seeds and finely chop.
  • Combine the poblano, mayonnaise, garlic and lime juice in a food processor and process until smooth. Season to taste with salt and pepper. Refrigerate for up to 1 week.
  • The make the Chorizo Burgers: Preheat the grill to medium-high.
  • Place the chorizo in a food processor, and process until finely chopped.
  • Transfer the chorizo to a large bowl and add the ground pork, garlic, Worcestershire sauce, Creole seasoning, salt and cayenne pepper.
  • Using your hands, mix gently but thoroughly. Form the mixture into four 1-inch-thick patties, about 8 ounces each.
  • Place the patties on the grill and cook to a minimum temperature of 160 degrees F, 5 to 7 minutes per side.
  • Transfer the burgers to a plate or platter and top each one with a slice of cheese.
  • Toast the open buns on the grill, if desired.
  • Place the burgers on the bun bottoms. Generously top each burger with Green Chile Mayo, and place the tops of the buns over the sauce. Serve immediately.
