1 tsp. Dry Mustard
1 tsp. Kosher Salt
1/2 tsp. Freshly Ground Black Pepper

Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. GREEN CHILE BACON STRATA

I love finding a basic recipe and then making it my own. My mother was a fabulous cook but, passed away when I was only 23 and just married. She made almost everything without a recipe. So, when she passed, I could only guess how she made her wonderful dishes. Let this be a lesson to you, teach your kids how to make your...

Time 1h5m

Number Of Ingredients 18

5 - 6 slice bread, i used 100% whole grain for this recipe but you can use most types of breads, even english muffins
1 c crumbled bacon, i love using the ready crumbled bacon. (hormel)
8 eggs
3/4 c sour cream (reg. lite or fat free)
1/2 c milk, you can use a low fat but..2% or higher is better.
1/2 tsp ground cumin or to taste
1/2 tsp garlic salt or to taste
1/2 tsp pepper (i like fresh ground)
7 oz can(s) diced green chile's
8 oz mexican blend shredded cheese or what ever you have.
MARINATED TOMATOES
6 roma tomatoes chopped
1/2 bunch cilantro (fresh, appx 1 cup, chopped)
1/2 tsp garlic salt ( i also add a little garlic powder)
1/2 tsp fresh ground pepper
1 tsp ground cumin
1 dash(es) cayenne pepper (to taste, or eliminate)
1/4 c finely chopped onion (optional)

Steps:

  • 1. Tear up bread into 1.5 inch size, cover the bottom of the (non stick sprayed) baking dish. Top with crumbled bacon.
  • 2. In a bowl, add eggs, sour cream, milk, green chili's and spices. Beat until the sour cream is no longer visible.
  • 3. Pour egg mixture over the top of the bread and bacon (use a fork and make sure all bread is covered by pushing it down into the eggs, if you find you don't have enough egg mixture to the bread, just beat up a couple more eggs and milk and add it to the dish and mix it around a little) , top with cheese and bake uncovered preheated oven at 350 for appx 45 mins. +-.(make sure the middle isn't still runny, might need to cook a little longer) Let sit for 10 mins. and serve! Top with Marinated tomatoes and sour cream...oh yum!
  • 4. Makes for great left overs or you can store it in the refrig. unbaked for a day until you're ready to bake it. Remember, I make this without measuring but this is pretty close. You can change it up and use other types of meat or no meat, add cilantro to the eggs etc. It's just a fun recipe to play around with.

  • On the day of baking, preheat the oven to 325 degrees F.
  • Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

CHEESY CHILE STRATA

Cheesy Chile Strata image

Provided by Food Network Kitchen

Categories     main-dish

Time 2h30m

Yield 6 to 8 servings

Number Of Ingredients 12

4 poblano chile peppers, halved lengthwise and seeded
1 bunch medium spring onions, stems cut into 2-inch pieces, bulbs quartered
1/4 cup masa harina (instant corn flour) or all-purpose flour
Vegetable oil, for frying (3 to 4 cups)
10 corn tortillas, cut into 2-inch pieces
8 ounces Oaxaca or muenster cheese, grated (about 2 cups)
8 ounces pepper jack cheese, grated (about 2 cups)
8 large eggs
3 cups whole milk
Kosher salt and freshly ground pepper
1/2 teaspoon chili powder
Sour cream, chopped jalapenos and/or chopped cilantro, for topping (optional)

Steps:

  • Preheat the broiler. Arrange the poblanos skin-side up on a baking sheet. Add the spring onions and broil until the poblano skins are charred and the onions are blackened around the edges, 7 to 8 minutes. Transfer the poblanos to a large bowl, cover with plastic wrap or a plate and let cool 10 minutes. Rub off the skins with your fingers, then pat dry. Roughly chop the poblanos and onion bulbs, then toss with the masa harina in a medium bowl; set aside while you fry the tortillas.
  • Line a baking sheet with paper towels. Heat about 1 inch of vegetable oil in a high-sided skillet or Dutch oven over medium-high heat until a deep-fry thermometer registers 350 degrees F. Working in batches, fry the tortillas, stirring, until stiff but not browned, about 5 minutes. Transfer to the paper towels to drain.
  • Spread half of the fried tortillas in a 3-quart baking dish. Top with half of the poblano-onion mixture and half of each cheese. Layer the remaining tortillas, poblano-onion mixture and cheeses on top.
  • Whisk the eggs and milk in a large bowl; whisk in 1 1/2 teaspoons salt, pepper to taste and the chili powder. Pour the egg mixture into the baking dish. Cover and refrigerate 8 hours or overnight.
  • Remove the dish from the refrigerator about 30 minutes before baking and uncover. Preheat the oven to 350 degrees F. Bake until the strata is lightly puffed and golden on top and just set in the center, 50 minutes to 1 hour. Let cool 10 minutes before serving. Top with sour cream, jalapenos and/or cilantro.
