GREEN CHILE QUICHE



Green Chile Quiche image

Flaky pie crust filled with fluffy, creamy eggs, spicy green chile, and cheese add up to this Green Chile Quiche - a delicious breakfast any day of the week.

Number Of Ingredients 7

6 eggs
1 cup heavy cream
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup chopped roasted green chile (frozen or canned is fine)
1 cup shredded Mexican cheese blend
1 prepared pie crust, store-bought is fine

Steps:

  • Preheat the oven to 425 degrees. Whisk together the eggs, cream, salt, and pepper. Place the crust in a deep pie plate or round 9"pan. Prick the crust with a fork several times. Spread the green chile across the bottom of the crust and then cover with cheese. Pour the egg mixture over the cheese and chile.
  • Bake for 15 minutes at 425 degrees. Reduce the heat to 300 degrees and bake an additional 30-40 minutes, until the quiche is puffy and lightly browned. Let cool 5-10 minutes before serving. Enjoy!
  • FREEZER INSTRUCTIONS: Let the quiche cool completely. Cover tightly with foil and freeze until ready to use. Thaw completely in the refrigerator and then warm covered with foil in the oven or slice and warm individual servings in the microwave. You can also freeze individual servings of leftover quiche in airtight containers or ziploc bags. Simply warm in the microwave when ready to serve.

Zucchinis and green chiles combine for amazing flavor in this delicious quiche recipe!

Number Of Ingredients 11

1 to 2 pie crusts (1 for a standard size quiche, 2 if making mini quiches)
1 zucchini (medium size)
1 tbsp vegetable oil
1/2 cup shallots (diced )
1/4 cup all-purpose flour
1/4 tsp Kosher salt
1/2 tsp baking powder
3 eggs
2 1/2 to 3 cups cheese (two or more kinds)
1 cup cottage cheese
4 oz green chiles (1 can - drained, chopped)

Steps:

  • Preheat the oven to 375 degrees. Press the crust into the bottom and up the side of the pan. Use a fork to poke holds into the bottom of the crust.
  • Bake the crust in the center of the preheated oven until golden brown. If making mini quiches - the crust will only take 2-3 minutes, for a full-size quiche, about 7 minutes. Remove the crust from the oven and reduce the temperature to 350 degrees.
  • While the crusts are baking, grate the zucchini onto a clean kitchen towel and squeeze dry. Add the oil to a skillet and heat over medium heat until hot. Add in the shallots and cook until nice and soft. Add in the zucchini and turn up the heat to high. Cook the zucchini and shallots for an additional 3-5 minutes.
  • Combine the flour, baking powder, and salt in a small bowl. In a separate bowl, beat the eggs until nice and fluffy (2-3 minutes). Grate the cheese - I used a sharp cheddar and Dubliner cheese mix for this quiche. I've had it with Monterey Jack, pepper jack, white cheddar - ALL are good so use your favorite combination. Add in the grated cheese, cottage, zucchini mixture, green chiles, and flour mixture and beat until combined.
  • Pour the mixture into the crust(s). Bake the quiche until the top is puffed and golden brown and a toothpick inserted into the center comes out clean. For the mini quiches, around 25 minutes, for a full-sized quiche, 35 -40 minutes. Let stand for several minutes before removing from pan and serving. Enjoy!

2 scallions, finely chopped
1 4.25-ounce can chopped green chiles, drained
1/2 cup grated pepper jack cheese (about 2 ounces)
1 frozen 9-inch deep-dish piecrust, thawed
Paprika, for sprinkling
1 5-ounce package mixed salad greens (about 8 cups)
2 tablespoons extra-virgin olive oil
Juice of 1 lemon

Steps:

  • Position a rack in the upper third of the oven; set a baking sheet on the rack and preheat to 400 degrees F.
  • Whisk the eggs, milk, heavy cream, 1/2 teaspoon salt and 1/8 teaspoon pepper in a medium bowl. Whisk in the scallions,chiles and cheese. Pour the mixture into the piecrust and sprinkle with paprika. Place on the hot baking sheet in the oven and bakeuntil golden brown and set, 25 to 30 minutes.
  • Toss the salad greens in a large bowl with the olive oil and lemon juice; season with salt and pepper. Cut the quiche into wedges and serve with the salad.

1 unbaked pastry shell (9 to 10 inches)
2 tablespoons Dijon mustard
3 cups grated zucchini
salt
8 large mushrooms, sliced
2 tablespoons butter
2 cups grated monterey jack cheese
1 (8 ounce) package cream cheese
1/2 cup whipping cream
2 egg yolks
1 egg
salt and pepper

Steps:

  • Preheat oven to 450.
  • Spread the bottom of the pastry shell with the mustard and bake for 10 minutes.
  • Cool.
  • Reduce oven heat to 350.
  • Place zucchini in colander, sprinkle with salt and drain for 5 minutes.
  • Saute the mushrooms in butter.
  • Sprinkle one cup of Jack cheese in the bottom of the pastry shell.
  • Spoon mushrooms on top.
  • Squeeze zucchini to remove the excess moisture.
  • Place in the shell, separating and fluffing with fingers.
  • Beat together the cream cheese, cream, egg yolks and egg, season with salt and pepper.
  • Place the pastry dish on a baking sheet and carefully pour in egg-cream mixture.
  • sprinkle the remaining Jack cheese on top.
  • Bake in a 350-degree oven for 45 minutes, until top is puffed and golden and a knife inserted in center comes out clean.
  • Let stand for 5 minutes before cutting.

2 tablespoons vegetable oil
1/2 onion, thinly sliced
2 garlic cloves, smashed
1 teaspoon dried oregano
2 tomatoes
1/3 cup drained pickled jalapeno pepper, chilli slices chopped
1 1/4 lbs zucchini
1/2 cup cream cheese, cubed (i used light)
salt & fresh ground pepper
fresh oregano sprig, if desired (to garnish)

Steps:

  • Heat oil in a large frypan.
  • Add the onion, garlic and dried oregtano.
  • Fry for 3 to 4 minutes, until onion is soft and translucent.
  • Cut a cross in the base of each tomato.
  • Place in a heatproof bowl and cover with boiling water.
  • Leave in the water for 3 minutes, then lift out on a slotted spoon and plunge into a bowl of cold water, drain.
  • The skins will have begun to peel back from the crosses.
  • Remove the skins and cut the tomatoes in half and squeeze out the seeds, chop the flesh into strips.
  • Top and tail the zucchini, then cut into 1/2 wide strips.
  • Slice the strips into matchsticks.
  • Stir the zucchini into the onion mixture and fry for 10 minutes, stirring occasionally, until just tender.
  • Add the tomatoes and chopped jalapenos and cook for 2 to 3 minutes more.
  • Add the cream cheese, reduce the heat to the lowest setting.
  • As the cheese melts, stir gently to coat the zucchini.
  • Season with salt and pepper to taste, pile into a heated dish and serve, garnished with fresh oregano if desired.
  • If serving as a main dish, rustic bread makes a good accompaniment.

2 teaspoons olive oil
1 medium onion, sliced thin
6 -8 hatch green chili peppers, roasted, peeled, seeded and chopped
1 cup grated muenster cheese, or
1 cup grated monterey jack cheese
3 -4 thin slices deli ham, chopped
3 eggs
2 tablespoons flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup low fat cottage cheese

Steps:

  • Preheat oven to 350 degrees, warm the olive oil in a medium size skillet; when hot add in the sliced onions and cook stirring frequently until wilted and they begin to color.
  • Add in the chili and cook for 2 to 3 minutes, stir in ham and warm through.
  • Place the eggs through cottage cheese in a blender container and blend until smooth.
  • Place the onion mixture into the bottom of the pie crust, top with grated cheese and pour blender mixture over all.
  • Place in oven and bake for 40 minutes or until sharp knife inserted off center comes out clean. Allow to stand 5 to 10 minutes before cutting and serving.
