Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. , In a large skillet over medium heat; cook walnuts in oil for 1-2 minutes or until lightly browned, stirring occasionally. Add beans, garlic, seasoned salt and pepper. Cook until heated through.

2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
  • Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.

2 tablespoons water
1 stick butter
1 teaspoon crushed garlic
1/2 cup pine nuts
Salt and freshly ground black pepper

Steps:

  • Place green beans with 2 tablespoons of water in a microwave-safe bowl. Cover and cook for 6 to 7 minutes.
  • Meanwhile, melt butter in a large skillet over medium low heat. As the butter bubbles it will start to turn brown and give off a nutty aroma. Once it has reached a light brown color, add garlic, cooked and drained green beans and pine nuts. Toss to combine and saute for 1 minute until heated through. Season, to taste, with salt and pepper.
  • Serve immediately.

2 tablespoons butter (do not use margarine or vegetable oil spreads)
2 tablespoons chopped pecans
1 teaspoon grated lemon peel

Steps:

  • In 2-quart saucepan, place beans in 1 inch of water. Heat to boiling. Boil uncovered 6 to 8 minutes or until crisp-tender (they shouldn't be "squeaky" when you bite into one); drain. Keep warm.
  • Meanwhile, in 1-quart saucepan, melt butter over low heat. Be careful not to let butter burn or it will taste bitter. Stir in pecans. Heat, stirring constantly, until butter is golden brown. (If bottom of saucepan is dark, it may be difficult to see the difference between brown butter and burnt butter. Try spooning a little of the butter onto a white plate to see the color more clearly.) Immediately remove from heat. Pour butter mixture over beans; toss to coat. Sprinkle with lemon peel.

These green beans almondine are made in one skillet, steaming the beans right in with the butter and almonds then finishing them off with some lemon juice.

1 pound fresh green beans
3 tablespoons butter (divided)
1/2 cup slivered sliced almonds
1-2 tablespoons water or chicken broth
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Juice of 1 lemon (to taste)

Steps:

  • Trim the ends of the green beans and rinse well, set aside.
  • In a large skillet over medium low heat, melt 2 tablespoons of the butter. Add the almonds and cook for 2-3 minutes , stirring, until the nuts and butter become fragrantly nutty and begin to brown.
  • Add the green beans, and the kosher salt and freshly ground black pepper. Add 1 or 2 tablespoon of water or chicken broth to the pan to add more steam to the pan and cover with a lid and simmer until the beans are al denté, 4-5 minutes more, tossing the beans and almonds occasionally so the nuts don't burn.
  • Add the remaining tablespoon of butter with the juice of 1/2 off the lemon, and season with more salt and pepper and toss. Add more lemon juice to taste.

3 cup green beans (, stem ends trimmed)
1/3 cup hazelnuts (, toasted)
3 tbsp butter
Sea salt
Freshly ground pepper
2/3 cup chèvre (, crumbled for garnish)

Steps:

  • You'll begin by toasting and skinning the hazelnuts. Spread the hazelnuts out on a pan evenly and bake at 350°F for about 10-15 minutes on the middle rack. The skins should begin to blister and the nuts should have a slightly darker color to them. Keep a close eye on them because you don't want to burn the nuts! (While the nuts roast, trim the green beans and start the water.)
  • Once you pull the hazelnuts out of the oven, wrap them up in a kitchen towel for about a minute. This will slightly steam them and loosen the skins. Rub them all together inside the towel and discard the loose skins. Don't worry if some skins stay on. Essentially you just want to get rid of the majority so they don't get stuck in your teeth! Coarsely crush up the nuts and set aside.
  • Bring 3 quarts of water to a boil with about 2 tablespoons salt, or enough water to cover the beans. Once the water boils, throw the beans in and boil for 3-4 minutes. Test one of the beans for tenderness and preferred doneness. I tend to boil for the shortest period of time because I like crunchy beans, and you don't want to overcook them because you'll lose that delicious snap. Strain out the water and set aside.
  • Brown butter is simple but delicate. Using a medium sized skillet, put 3 tbsp of butter in the pan over medium heat. The butter will melt and start to bubble as it rises in temperature.
  • Reduce heat to medium-low, add the crushed hazelnuts and cook in butter until fragrant, about 2-3 minutes. You're looking for a sweet spot of golden brown butter. Remove from direct heat.
  • Transfer the green beans to the pan with the butter and hazelnuts to get everything to serving temperature while stirring to coat the beans. Salt and pepper to taste, mix it up. Place into a serving bowl and garnish with a fair amount of chèvre. Enjoy thoroughly.

1 1/2 pounds string beans, stems trimmed
2 tablespoons butter, at room temperature
2 tablespoons freshly squeezed lemon juice
Salt and freshly ground pepper

Steps:

  • Fill a large pot with 2-inches of water and place a steamer inside. Bring water to a boil. Add string beans and cover for 5 minutes, or until beans are cooked throughout but still crisp to the bite. If you don't have a steamer, toss beans in a large pot of boiling water for 4 minutes.
  • Thoroughly drain water then return beans to the emptied pot. Let beans sit, uncovered, for 2 minutes so that any water coating them has evaporated. Pour out any accumulated water.
  • Melt butter in a saucepan over medium heat. Cook for 3 minutes, or until melted butter has turned golden brown (this adds a slightly nutty flavor). Remove from heat and add lemon juice and beans and toss thoroughly. Sprinkle with salt and pepper and toss again.

1/4 cup shelled whole hazelnuts (unroasted and unsalted)
1 lb green beans, trimmed
2 tablespoons butter
1 -2 large shallot, very thinly sliced
1 tablespoon balsamic vinegar
1/2 teaspoon kosher salt (1/4 teaspoon table salt) or 1/2 teaspoon sea salt (1/4 teaspoon table salt)
freshly ground black pepper

Steps:

  • Heat a saute pan over medium-low heat. Add the hazelnuts and toast the hazelnuts until the skins are dark brown but not burned. Keep the heat low so that you don't burn the hazelnuts. It should take about 6-7 minutes. Let cool enough to handle and rub the skins off. You can use a towel or a garlic peeler. Coarsely chop and set aside.
  • Add 1 cup water to the saute pan and bring to a boil over medium heat. Add the green beans and cover with lid. Steam the beans for 3-4 minutes, until just tender. Immediately drain and rinse with cool water to stop the cooking.
  • Wipe the saute pan dry and return to the stove on medium-high heat. Add the butter and let the butter brown and bubble. Once the butter is browned, add the shallots and saute for 1 minute. Pour in the balsamic vinegar and the green beans. Use your spatula or large spoon to scoop up some of the browned balsamic butter up and over the green beans. Season generously with salt and pepper to taste. Stir in the chopped hazelnuts.

  • This is a very simple dish, but it is easiest and quickest done with 2 pans. Heat one large pan (use either a skillet or a shallow pot) over medium high heat and place the green beans in it. Add the water and cover the pan. Reduce heat to medium. While the beans steam, turn your attention to the glaze.
  • Heat a medium pan that you are comfortable using to watch butter for browning in (I prefer stainless steel, as I might miss the butter burning in a dark bottomed pan). Add the butter on medium high heat. When it is melting, start to whisk it. Keep whisking, nearly constantly, as the butter browns. You are looking for a rich mahogany brown, but you do not want a single black fleck (black indicates burnt), so as soon as it is fragrant with nutty caramel notes and browned, turn off the heat, stand back, and add the soy sauce and vinegar (be careful! It will seriously froth and spit at first). As soon as it is safe to come back closer to the cooktop, whisk the sauce until it is incorporated.
  • Return your attention to the beans: lift the cover and use tongs to toss the beans. There should still be water at the bottom of the pan--if it is dry, add a tablespoon or 2 more. The beans should be mostly done--but if you like your beans more done, return the cover, and continue to steam them.
