Green beans have never tasted so good. The sweet and savory flavors of the balsamic roasted shallots take this holiday side dish to a new level.

6 large shallots
4 teaspoons olive oil (divided)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup low-sodium vegetable or chicken broth
2 teaspoons granulated sugar
1 tablespoon balsamic vinegar
1 1/4 pounds green beans (ends trimmed)

Steps:

  • Preheat oven to 450 degrees F. Coat a large baking sheet with cooking spray.
  • Peel and cut shallots in half through the root, leaving the root intact. Place the shallots in a medium bowl and toss with 2 teaspoons olive oil, salt, and pepper. Place the shallots, cut side down, on prepared baking sheet and roast until the bottom side of the shallots are deep brown, 15 to 18 minutes.
  • While the shallots are roasting, pour vegetable or chicken broth into a large skillet. Set over medium-high heat and boil until the chicken broth reduces to ¼ cup, 5 to 6 minutes. Add granulated sugar and balsamic vinegar, bring to a boil, and stir until the sugar is dissolved. Add the roasted shallots to the chicken broth mixture, reduce heat to medium-low, and simmer about 5 minutes, until the sauce coats the shallots. The shallot mixture can be made up to a day ahead, then gently reheated over low heat before serving.
  • Bring a large pot of salted water to a boil over medium-high heat. Add green beans and cook until the green beans are tender-crisp, about 2 minutes. Drain immediately. Toss the green beans with 2 teaspoons olive oil. Arrange on a serving platter and top with roasted shallots. Serve.

1 ½ pounds fresh green beans, trimmed
6 shallots, peeled and thinly sliced
5 large cloves garlic, thinly sliced
¼ cup sliced almonds
2 tablespoons olive oil, or more as needed
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Place green beans in a large bowl. Mix in shallots, garlic, and almonds. Drizzle olive oil over the top; sprinkle salt and pepper evenly on top. Toss until everything is evenly coated with oil. Spread in a single layer on the prepared baking sheet.
  • Roast in the preheated oven until beans are slightly shriveled and shallots are lightly browned, 10 to 15 minutes.

1/2 teaspoon sugar
2 tablespoons olive oil
3/4 lb green beans
1 shallot, sliced
2 garlic cloves, smashed
salt, pepper
1/4 cup water, more if needed
1 tablespoon butter, cut in 4 pieces
1/4 cup toasted sliced almonds

Steps:

  • Add 1 tbsp balsamic vinegar to sugar, mix and set aside.
  • Heat a skillet on high heat, add oil.
  • Add garlic, shallots and green beans, salt and pepper; stir fry for a few minutes until beans start to shrivel.
  • Reduce heat to low, add water and balsamic mixture and cover, cook for 5 minutes more.
  • Stir in remaining balsamic, add butter and almonds, swirling pan to blend.

2 large shallots, finely chopped
4 tablespoons butter, room temperature
2 lbs green beans, trimmed

Steps:

  • Combine vinegar and shallots in heavy small saucepan. Boil over medium heat until most vinegar is absorbed (about 1 tablespoon liquid should remain in pan), stirring frequently, about 6 minutes. Transfer mixture to small bowl; cool completely. Add butter; mix with fork until blended.
  • Cook beans in large pot of boiling salted water until crisp-tender, about 6 minutes. Drain. Refresh under cold water; drain. Pat dry with paper towels. (Balsamic-shallot butter and beans can be made 1 day ahead. Cover separately; chill.)
  • Combine beans and balsamic-shallot butter in large nonstick skillet. Toss over medium heat until beans are heated through, about 5 minutes. Season to taste with salt and pepper and serve.

1 pound fresh green beans
1 large shallot
1 to 2 tablespoons extra-virgin olive oil
Freshly ground black pepper

Steps:

  • Bring a medium pot of cold water to a boil over high heat and salt it generously. Trim the stem end off the green beans. Peel and finely chop the shallot.
  • Drop the green beans into the boiling water and cook, uncovered, until crisp-tender, about 4 minutes. Drain in a colander set in the sink and rinse with very cold water until cool. Drain well and pat dry with paper towels. (The vegetables can be prepared up to this point, up to 4 hours ahead.)
  • Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until the shallot is just golden, about 2 minutes. Add the green beans, increase the heat to high, and cook, stirring occasionally, until the beans are heated through, about 4 minutes. 2 lbs green beans, trimmed
ice water
2 tablespoons olive oil
1/2 cup minced shallot
salt
fresh ground pepper
1 -2 tablespoon fresh dill
1 teaspoon grated lemon, rind of
fresh lemon juice

Steps:

  • Blanch the green beans in boiling salted water for 6 to 7 minutes, or until just tender.
  • Drain and transfer to a bowl of ice water to set the color.
  • Drain and pat dry.
  • Transfer to a plastic storage bag& chill.
  • (Beans may be prepared 1 day in advance.) In a large skillet set over moderate heat, cook the shallots in the olive oil, stirring occasionally, until lightly golden.
  • Add the green beans and salt and pepper and cook until heated through.
  • Add the dill, lemon peel, and lemon juice.
  • Toss to coat, and transfer to a serving dish.
