GREEN BEANS ON THE GRILL
I grill just about every other night so I've tried to perfect how to cook certain vegetables along with the main course. I've found they cook to my liking when I put then on while the grill is heating up to get them going. It gives them a good 10 minutes for extreme heat before moving them aside for the main dish. They are basically roasted and steamed at the same time. Try adding some onion or tossing with lemon pepper before serving.

Steps:
- Put green beans on a sheet of aluminum foil large enough to fold and seal. You may need to fold two sheets together.
- Note: I also use one sheet of foil to set the pouch on. This way if any liquid seeps out or it pulls apart it doesn't leave a mess.
- Drizzle olive oil over the beans.
- Add minced garlic and crushed red pepper, salt and pepper to taste.
- Toss green beans with tongs until well coated.
- Add water and fold aluminum foil together at the top and pinch the sides closed.
- Cook green bean pouch on the grill.
- Notes: When I put my main dish on the grill I open the beans and toss with tongs. If all the water is gone, add a little more, reseal and move to top rack. If I lift the grill lid to flip main dish I usually give the pouch a shake.

GREEN BEANS GRILLED IN FOIL
While grilling out, we decided to try grilling fresh green beans. After having this, we will never have green beans another way. I use my own mixture of 'silly salt' for this recipe--equal amounts of pepper, salt, onion powder, and garlic powder, but seasoned salt works as well.

GRILLED GREEN BEANS WITH HARISSA
From Ted Allen's In My Kitchen. His notes are: A quick toss in a vinaigrette spiked with spicy North African chile paste, aka harissa, really livens things up; in a pinch, you could use the same amount of Sriracha, or just Tabasco with a chopped garlic clove. Or, if you prefer, skip the heat-these are still really good.

Steps:
- Snap off any stems that may still be attached to the individual bean pods and rinse the green beans in cold water. Pat them dry.
- Prepare all other ingredients before starting to cook.
- Prepare the grill to a two-temperature zone and make sure the hot zone is set to hot temperature, about 425°-450°. You will be cooking over cooler side or you'll burn butter and garlic.
- Set a cast iron skillet over indirect heat once the grill is preheated and let the skillet preheat for a few minutes.
- Add butter to the skillet and once it starts to melt, add minced garlic and squeezed lemon juice.
- When butter is melted, toss in green beans and season with salt, pepper, and garlic powder. Use long metal tongs to toss the green beans with butter and seasoning. (It's best to use long tongs to keep your hands away from the heat and preferably ones coated in silicone so you don't scratch the skillet.)
- Cook grill beans, stirring them often, until it's reached desired tenderness. This will take somewhere between 10 and 15 minutes.

GRILLED HALIBUT WITH CRISPY RICE AND GREEN BEANS VINAIGRETTE
Steps:
- Bring a large pot of salted water to a boil. Preheat a grill to medium-high heat. Preheat a wood-fired or regular oven to 400 degrees F.
- Coat the bottom of a 14-inch cast-iron pan with canola oil and turn on the heat to medium-high. Meanwhile, portion the rice into 4 flattened discs, about 3/4 cup each. Once the oil is heated, add the rice cakes and cook until golden brown and crisp, 5 to 6 minutes for each side.
- Add the haricots verts to the boiling water and cook until slightly softened and brightened in color, about 2 minutes. Immediately transfer the haricots to an ice water bath until cool to the touch. Slice each haricot into thin rings. Transfer to a bowl and dress with some Fish Sauce Vinaigrette. Fold in the tobiko and set aside.
- Prepare the fish for the grill by rubbing the fillets with olive oil and sprinkling with salt and pepper. Rub the grill grates with an oiled towel and lay the fillets down. Cook with the grill open until you have nice grill marks and the fish releases easily from the grill, 5 to 7 minutes on the first side. Flip and let cook another 5 minutes. Remove the fish to a sheet tray. Transfer to the oven until cooked through, 3 to 5 minutes.
- Place the crispy rice cakes on a platter and top with the grilled halibut fillets. Drizzle the Vinaigrette over the fish and around the platter. Garnish each halibut fillet with a teaspoon of the tobiko and a few sprigs of the wood sorrel and serve.
- Whisk together the olive oil, fish sauce, rice wine vinegar, honey, sugar, chives, curry powder, ginger, sesame oil, chile, garlic, lime zest and juice in a small bowl until combined.
