HEALTHY GRILLED CHICKEN, RED PEPPER, AND GOAT CHEESE SANDWICH

Healthy Grilled Chicken, Red Pepper, and Goat Cheese Sandwich image

Make and share this Healthy Grilled Chicken, Red Pepper, and Goat Cheese Sandwich recipe from Food.com.

Provided by slaterbugs

Categories     One Dish Meal

Time 25m

Yield 1 sandwich, 1 serving(s)

Number Of Ingredients 13

1 wheat bun (I use Merita Light Wheat Buns, they're 80 calories and delicious)
4 ounces boneless skinless chicken breasts
1/2 lemon, juice of
fresh rosemary (1-2 sticks is plenty)
paprika
salt
pepper
non-stick olive oil flavored cooking spray (I use PAM, but any kind will do...you also don't have to use the olive oil kind, just non-stick spra)
2 ounces red peppers
1 1/2 ounces red onions (one big slice)
1 ounce goat cheese (any kind, I made this with only .5 oz goat cheese last night and it was still delicious and 40 calor)
shredded lettuce
1 teaspoon Grey Poupon Dijon Mustard

Steps:

  • Spray chicken breast with non-stick cooking spray on each side (I use PAM extra virgin olive oil, but any kind will do).
  • Squeeze about 1/4 of a lemon over each side of the chicken breast.
  • Wash and chop fresh rosemary and sprinkle about HALF of the amount you have over the entire chicken breast.
  • Salt, pepper, and paprika both sides of the chicken (just a pinch of salt, a good amount of pepper, and enough paprika to give your chicken breast some beautiful red color).
  • Keep the red onion in its circular shape if you can (it's easiest for grilling in that shape) and slice the red pepper into pieces no bigger than the palm of your hand.
  • Spray red onion and red pepper with olive oil spray
  • Put chicken breast, red onion, and red pepper on grill and cook until chicken breast is no longer pink on the inside (I like to butterfly my chicken breast, which means that after the chicken has cooked on both sides for about 4-5 minutes, you give it a slice down the side, open it up, and put the inside back on the grill. You don't have to slice the entire chicken, I usually just try to open up the thickest part of the chicken, which is sometimes still pink, and make sure that part gets put directly on the grill).
  • When the chicken starts looking like it only needs a few more minutes, add the splash the other 1/4 of the lemon and sprinkle the remaining rosemary on both sides (rosemary needs to be cooked for at least a minute or so, so make sure that wherever you put the rosemary gets grilled up a little bit).
  • The chicken should take around 10 minutes, depending on how thick it is.
  • Flip the red pepper and red onion when they start to get some darker grill marks (you want to make sure that they are nicely cooked, but not charred black). They shouldn't take longer than your chicken breast to cook.
  • Toast your wheat bun (either throw it on the grill for a minute or warm it up in the toaster oven until it starts to brown.
  • Spread the goat cheese on the warm bun.
  • Spread the dijon on the other side of the bun
  • Slice your grilled red pepper and onion into strips.
  • Top the bun with red pepper, onion, chicken breast, and shredded lettuce.
  • Enjoy!
  • *I ate this last night with a side of Harvest Cheddar Sun Chips (which was a great combination), but for guests, I would recommend either a homemade light pasta salad or oven baked sweet potato steak fries to go with this dish!*.

GRILLED CHICKEN SANDWICHES WITH ROASTED PEPPER AIOLI

Grilled Chicken Sandwiches With Roasted Pepper Aioli image

Make and share this Grilled Chicken Sandwiches With Roasted Pepper Aioli recipe from Food.com.

Provided by Burgundy Damsel

Categories     Lunch/Snacks

Time 40m

Yield 4 sandwiches, 4 serving(s)

Number Of Ingredients 16

4 chicken breast halves, skinless, boneless and split, about 6 oz each
salt & pepper
1 tablespoon fresh lemon juice
2 tablespoons extra virgin olive oil
2 teaspoons chopped fresh thyme
1 small red bell pepper
1 large egg yolk
2 garlic cloves, minced
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon tomato paste
2 tablespoons fresh parsley, flat leaf, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup extra virgin olive oil
8 thick slices country bread

Steps:

  • Working with one chicken breast half at a time, place it between 2 sheets of waxed paper and, using a meat pounder, pound to an even thickness of 3/4" thick. Season on both sides with salt and pepper. Place in a nonreactive dish large enough to hold them in a single layer. Add the lemon juice, olive oil and thyme. Turn the breasts over several times to coat. Cover loosely with plastic wrap and let marinate at room temperature for 1 hour or refrigerate overnight.
  • To make aioli, preheat a broiler (grill). Set the bell pepper on a baking sheet and place in the broiler about 6inches from the heat source. Broil (grill) turning with tongs, until skin is blistered and charred black on all sides, about 15 minute Enclose the pepper in a paper bag and let cool completely.
  • If broiling the chicken, leave the broiler on. If grilling the chicken, prepare a charcoal or gas grill for direct grilling over medium-high heat. Oil the grill rack.
  • Remove the stem from the pepper and discard. Slit the pepper open, then remove and discard seeds and ribs. Remove the blackened skin with a small knife or your fingers. Coarsely chop the pepper. In a blender or food processor, combine the roasted pepper, egg yolk, garlic, lemon juice, mustard, tomato paste, parsley, salt and pepper. Process until pureed. With the motor running, add the olive oil drop by drop. As the mixture begins to emulsify, add the oil in a slow, steady stream. Continue to process until the aioli is thick and has the consistency of mayonnaise. The aioli can be made a day ahead and stored in an airtight container in the refrigerator.
  • By Broiler: Remove chicken breasts from the marinade and arrange in a single layer on a rimmed baking sheet. Broil until lightly browned, 3-5 minutes. Turn and broil until lightly browned on the second sides and firm to the touch, 3-5 minute Transfer to a plate. Place the bread on the baking sheet and toast, turning once, until golden, 3-5 minutes total.
  • By Grill: Remove chicken breasts from the marinade and place over the hottest part of the fire or directly over the heat elements and grill until lightly browned, 3-5 minute Turn and grill until lightly browned on the second sides and firm to the touch, 3-5 minute Transfer to a plate. Place the bread slices on the grill rack and toast, turning once, until golden, about 2 min total.
  • Spread the bread slices with aioli. Place the chicken breasts on four of the slices. Put the remaining slices on top. Halve the sandwiches and serve at once.

GRILLED CHICKEN BREAST SANDWICHES WITH ROASTED PEPPERS

Grilled Chicken Breast Sandwiches with Roasted Peppers image

No need to roast a chicken right now when you can barbecue it. Marinades make it easy to vary the flavor and style of what you're cooking. To keep it easy, try this great, healthy recipe for dinner this summer:

Provided by TishT

Categories     Lunch/Snacks

Time 7h30m

Yield 6 serving(s)

Number Of Ingredients 13

6 skinless chicken breast halves, boned
5 tablespoons olive oil
1 tablespoon cracked black pepper
2 tablespoons fresh thyme or 1 teaspoon dried thyme
2 red bell peppers
1/2 cup mayonnaise
1/4 cup Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon red wine vinegar
1 dash salt
3 ounces arugula leaves or 3 ounces spinach (if arugula is unavailable)
3 red ripe tomatoes, for slicing
12 slices multi-grain bread

Steps:

  • For the Chicken: Rub the chicken breasts with 3 tablespoons of the olive oil, the black pepper, and thyme leaves.
  • Cover and refrigerate a minimum of 6 hours, preferably overnight.
  • Remove from refrigerator 1 hour before cooking.
  • For the Peppers: Preheat oven to 500 degrees and place 2 red bell peppers on the rack and roast.
  • Turn the peppers occasionally until the skins are completely charred (20 to 30 minutes).
  • Place the peppers in a paper bag and seal the top.
  • This allows them to steam and aids in peeling.
  • Remove the peppers from the bag and remove the skins with your fingers.
  • Sometimes a little cold running water helps.
  • Remove the cores and seeds and slice into 1/4-inch strips.
  • Toss the peppers with 2 tablespoons olive oil and store in a glass container until ready to use.
  • For the Sauce: Mix mayonnaise, Dijon mustard, Worcestershire sauce, red wine vinegar, and dash of salt together well and refrigerate in a glass container.
  • Assembling the Sandwiches: The chicken, peppers, and mustard sauce can be prepared to this point a day in advance.
  • When you are ready to serve the sandwiches, prepare a charcoal fire or preheat the broiler for the chicken and bread.
  • Grill or broil the breasts 6 to 10 minutes per side, depending on the heat of your fire.
  • As they are cooking, brush a little butter or olive oil on one side of 12 slices of the bread.
  • When the breasts are cooked, transfer to a platter and allow to cool slightly, at which time you will need to either grill or broil the bread until slightly toasted.
  • Spread a liberal amount of the mustard sauce on the oiled or buttered side of the bread slices so that the dry sides will be on the outside of the sandwich.
  • Slice the breasts on a diagonal and place each sliced breast on a slice of toasted bread.
  • Top with some of the roasted pepper strips, 2 slices of tomato, some of the arugula, and the top piece of bread.
  • Cut and serve as you would with any sandwich.
  • Serve immediately or until ready to use.
