Comfort food at its best. Many people will tell you to soak your beans first (however, I have been told that you should soak dry beans when using a pressure cooker. Please follow manufactorers instructions in this case). I never do. I just wash them and cook them as below. For a really hearty winter meal, serve these with a loaf of hot fresh bread or a pan of corn bread and a pan of old fashioned crisp fried potatoes. These may also be made in the pressure cooker and crockpot.

1 bag dry beans (my favorite is a 15 bean mix)
4 -6 ham hocks
1 large onion, chopped
6 cloves garlic, minced (more if desired)
1 large bay leaf
1 tablespoon oregano
1 teaspoon pepper
salt

Steps:

  • Wash beans and remove all gravel and such.
  • Place beans, ham hocks, onions and garlic in a large dutch oven filled with water.
  • Add spices.
  • Bring to boil.
  • Simmer on med-low heat for 4 to 5 hours, adding more water as needed.
  • Remove hamhocks when they are tender and falling apart; allow to cool so they can be handled.
  • Remove meat from ham hocks (discarding fat and bones) and return to the soup.

A hearty, one-pot, traditional Pennsylvania Dutch meal great for using up left-over ham from holiday dinners.

2 ham hocks OR a 3 to 4 pound bone-in ham end
Cold water (to cover in pot)
3 to 4 pounds cleaned (ends removed) fresh green beans OR frozen green beans
1 large onion, large dice
2 to 2 1/2 pounds peeled potatoes, cut into chunks approximately 1 to 1 1/2 inches.
Optional if needed - ham flavor bouillon to taste
Optional when cooking - small splash cider, white, or red wine vinegar
Salt and pepper to taste (add salt after tasting the final broth!)

Steps:

  • Place ham in a large pot with lid, cover with water, and bring to boil. Reduce to simmer and cook 1-1/2 to 2 hours to get nicely tender ham and a rich broth. Ham hocks may take longer to cook to fall-apart tender, but that is the stage you want them at.
  • Remove ham from pot, set aside, and allow to cool enough to handle. When cool, pull ham from bone and cut into chunks or pull into shreds.
  • Taste broth. You want a nice rich broth, if necessary, add some ham bouillon to enrich to your taste.
  • Place chunks of ham, diced onion, green beans, and potatoes into pot with broth and bring to boil. Reduce to simmer and cook slowly until beans and potatoes are very tender, about 45 minutes to an hour.
  • Serve in bowls with plenty of broth and, if desired, vinegar on the side to add to taste.

4 (1/2-pound) ham hocks, scored
3 tablespoons olive oil
1 cup minced yellow onions
1/4 cup minced celery
1/4 cup minced green bell pepper
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried Mexican oregano
1/4 teaspoon dried thyme leaves
2 bay leaves
1 tablespoon minced garlic
1 pound navy beans, rinsed, picked over, soaked overnight and drained
8 cups chicken stock
1 teaspoon salt
1/4 cup minced parsley
1/2 cup minced green onions

Steps:

  • In a large, heavy stockpot, heat the oil over medium-high heat. Add the ham hocks, onions, celery, bell pepper, red pepper flakes, oregano, thyme and bay leaves, and saute until soft, about 5 minutes. Add the garlic, and saute for 1 minute. Add the stock and bring to a boil over high heat. Reduce the heat to medium-low and simmer covered for 1 1/2 hours, stirring occasionally.
  • Add the navy beans and stir. Continue simmering over medium-low heat for 45 minutes to one hour, or until the beans are almost cooked and ham hocks are very tender. Season with salt and continue cooking 15 to 30 minutes, until beans are done and ham hocks are beginning to fall apart.
  • Remove from the heat. Serve the ham hocks with the beans at the table, sprinkled with parsley and green onions, or cut the meat from the bones in the kitchen before serving, return the meat to the pot and serve with the beans at the table.

1/2 cup sugar
2 pounds small red new potatoes
2 tablespoons seasoned salt

Steps:

  • In a large pot, fill with enough water to just cover ham hocks and bring to a boil. Cover and simmer 45 minutes. Add beans and sugar and continue cooking another 25 minutes. Add potatoes and salt and cook until potatoes are tender, about 20 minutes more. Remove hocks from pot and remove meat from the bone. Add meat back to the pot, add salt and pepper, to taste, and serve.

1 pound dried navy white beans
Freshly ground black pepper

  • In a medium Dutch oven with a lid, over medium heat, add the oil. When the oil is hot, sear the ham hocks in batches, until brown, about 4 to 6 minutes. Remove the ham hock and set aside. Add the onions. Season with pepper. Saute for 2 minutes. Stir in the beans and bay leaves. Season with pepper. Saute for 1 minute. Add the reserved ham hocks and water. Bring to a boil and reduce the heat to medium low and simmer for 2 hours, or until the meat falls of the bone and the beans are creamy. Remove the bay leaves and season with salt and pepper.

It has been cold and snowing here. Just the right weather for soups and comfort food. These green beans and ham hocks are so good. They do not need any added spices or seasoning but you can add them if you desire. There is no need to add salt to these since the ham hocks/shanks are already salty. I am sensitive to pepper so I did not add any to these but you can if you want to. I just don't know how much to add. They can be served as a meal with cornbread or as a side dish with meat This can easily be turned into soup by adding other vegetables. Cook time varies according to your crockpot. When I lower my 3.5 quart crockpot to low, it does not boil or even simmer so I cook these on high the whole time. Stovetop method time is approximate. These smell so good while they cook.

2 -3 smoked ham hocks or 2 -3 smoked pork shanks
1 (12 ounce) can beer
1 can chicken broth

Steps:

  • Snap or cut green beans in one inch pieces.
  • Rinse off with cold water and place them in a crockpot or large pan.
  • Trim outer skin and fat from the ham hocks/shanks.
  • Cut into smaller pieces if possible Cut around the bones but do not remove them.

It's easy to prepare and one of my family's "comfort food" favorites. NOTE: not every crockpot cooks the same. My Rival crock pot is 20 years old and on the "high" setting food actually comes to a low boil. If your crock pot does not get that hot, then you will need to adjust for a longer cooking time.
