LOW CARB SEARED SCALLOPS AND SPAGHETTI SQUASH RECIPE
A restaurant quality spaghetti squash recipe with seared scallops that looks and sounds fancy, but is so easy to make! From stove top to table top in 30 minutes!

Steps:
- Prepare the ingredients: cook the spaghetti squash (this post will give you step by step instructions), slice the tomatoes in half, and pull apart each mushroom "leaf". This article does a great job of explaining how to prepare maitake mushrooms.
- Heat a non-stick pan with 1 tbsp of olive oil on medium-high heat. Add the panko and toast for 2-3 minutes, stirring constantly until lightly browned. Set aside.
- Melt 2 tbsps butter, garlic, white cooking wine, and lemon juice in a small sauce pan on medium-low heat, then slowly whisk in half and half, thyme, oregano, and flour. Stir constantly until fully combined and sauce has thickened. Then remove from heat and sprinkle in 1 tbsp of grated parmesan cheese, return the sauce to the burner and simmer until ready to use.
- Pat the scallops dry with a paper towel.
- Heat 1 tbsp of butter and 1/2 tbsp of olive oil in a large non-stick pan on high heat.
- Add scallops to the pan, being careful not to overcrowd. Sear for 3-4 minutes on one side, then flip and finish searing for and additional minute. Immediately remove scallops from pan and transfer to a plate.
- Using the same pan you cooked the scallops in, sauté the mushrooms with 1 tbsp of olive oil for 2-3 minutes.
- Reduce the heat to low and add the spaghetti squash, tomatoes, and spinach to the pan with the mushrooms and slowly mix in the cream sauce. Adjust the amount of cream sauce added to your liking.
- Transfer scallops back to pan and garnish with toasted panko, parmesan cheese and fresh chopped parsley.

GARAM MASALA SCALLOPS OVER ACORN SQUASH

- Prepare squash:
- Preheat oven to 375°F.
- Halve squash lengthwise, reserving 1 half for another use. Halve remaining squash piece diagonally crosswise and season with salt. Arrange wedges, cut sides up, in a small roasting pan filled with 1/2 inch water. Cover roasting pan tightly with foil and roast until tender, about 1 hour.
- Prepare scallops after squash has been roasting 30 minutes:
- Pat scallops dry and season with salt. Heat 1 tablespoon oil in a 10-inch nonstick skillet over moderately high heat until hot but not smoking, then brown scallops on both sides, 4 to 6 minutes total (scallops will be almost cooked through). Remove from heat. Add turmeric and toss until scallops are yellow, then transfer to a bowl.
- Cook jalapeño, garlic, ginger, and 1 tablespoon lime juice in remaining 1/2 tablespoon oil in skillet over moderately high heat, stirring, 1 minute. Add water and simmer until water is evaporated and chile mixture is softened, 3 to 4 minutes. Add cream and garam masala and simmer 2 minutes. Remove from heat and cover.
- When squash is tender, add remaining 2 teaspoons lime juice and scallops with any liquid that has accumulated in bowl to sauce and simmer until scallops are just cooked through and sauce is slightly thickened, about 2 minutes.
- Put a squash wedge on each of 2 plates and spoon scallops and sauce over squash.

This is one of my favorite recipes. It's a great salad for a summertime party. For a little extra crunch add a can of water chestnuts minced.

PAN-FRIED SCALLOPS WITH BUTTERNUT SQUASH TWO WAYS
Serve up a restaurant-style starter at home - much of it can be made ahead so you can relax with a glass of wine on the night

- To make the purée, heat the butter in a small saucepan and add the squash. Sweat it over a very low heat for 5 mins, then pour over the stock. Cover and gently simmer for 10-12 mins until the squash is very soft.
- Take off the heat and add the parmesan. Use a hand blender or food processor to blitz the squash until smooth, then press through a sieve into another saucepan. Season to taste and set aside.
- To make the warm salad, trim the squash into a neat block, then neatly dice the flesh into cubes no larger than 1cm. Heat half the oil in a non-stick frying pan. Fry the squash for 10 mins, or until tender and coloured, then tip onto a plate.
- Place the pan back on the heat and gently fry the bacon for 10 mins, or until crisp and brown. Add the onion and cook for 2 mins to soften in the fat, then add the capers and squash, drizzle over the sherry vinegar and toss together for 1 min. Off the heat, stir in the chives and the rest of the oil, then tip everything into a bowl and keep warm.
- Have the scallops to hand as you will need to work fast when cooking them. Clean out the frying pan and place it back on the heat with a drizzle more oil. When the oil starts to shimmer, carefully lay the scallops in the pan one at a time, like points on a clock face, starting at 6 o'clock, so you remember which one went in first.
- Scallops take very little time to cook, so by the time the last one is in the pan, the first will be brown and ready to turn over. Flip all the scallops over and give them about 1 min more, then lift onto kitchen paper on a plate to drain the oil. With the salad and the purée still warm, you are now ready to plate up.
- Spoon half the warm salad down the middle of each plate. Overlap 6 pieces of scallop along the salad. Use a spoon to swipe the purée around the outside of the food. Drizzle everything with a touch more oil, and you are now ready to serve.

GOLDEN SUMMER SQUASH
This is a brightly colored, simply prepared summer squash recipe that can be prepared in a matter of minutes, so there is no prolonged sweating over a hot stove! It tastes delicious hot, warm or at room temperature, so you can make it ahead of time without sacrificing any of its quality. This recipe can be expanded into more of a light vegetarian main dish if served over brown rice or barley (or a combination), and topped with the optional pine nuts and cheese. I cut this out of a recent newspaper article.

- Place a large skillet over medium heat.
- After about 1 minute, add 1 T of the olive oil, and swirl to coat the pan.
- Add the onion and salt.
- Cook, stirring often, for about 10 minutes, or until the onion becomes very tender and lightly golden.
- Transfer to a bowl and set aside.
- Return the pan to the heat and slick the pan with just a teaspoon or two more of olive oil.
- Add the squash in a single layer, and cook, without stirring, until very golden on the bottom, for 1-2 minutes.
- Toss or stir to flip the squash and continue cooking, undisturbed, for 1-2 minutes longer, or until deeply golden brown on the other side.
- Toss in the garlic, and return the onions to the pan.
- Mix well, and season to taste with additional salt, if needed, and with a good amount of freshly ground black pepper.
- Serve hot, warm or at room temperature, garnished with a light sprinkling of thyme, and pine nuts and/or cheese, if desired.
- NOTE: You can make this with any of the thin-skinned, quick cooking squash varieties such as yellow patty pan, zucchini, crooknect, etc.
- Peeling the squash is optional.

- Chop the squash very fine and crumble crackers. Saute onion in salad oil until soft. Beat eggs with seasonings and combine with squash. Grease a 10 inch square casserole. Add squash to casserole, then grated cheese, top with cracker crumbs. Bake at 325 degrees about 45 minutes or until set and top is golden.

- Preheat oven to 400 degrees and place rack in upper third of oven. Place a sheet of parchment paper on rimmed cookie sheet and set aside
- Peel and cut squash into ½ inch cubes, place on a rimmed cookie sheet covered with parchment paper, drizzle lightly with olive oil, sprinkle with sea salt and pepper, add whole garlic cloves and toss

- In a blender or a mini processor, chop the parsley, chives and tarragon. With the machine on, pour in 1/2 cup of the olive oil and blend until fairly smooth. Season the sauce with salt and pepper.
- In a large skillet, heat 1 tablespoon of the olive oil until shimmering. Add the squash and zucchini and cook over high heat, stirring occasionally, until crisp-tender, about 5 minutes. Stir in the thyme and 2 tablespoons of the herb sauce; season with salt and pepper. Add the prosciutto and keep warm.
- In a medium skillet, heat the remaining 1 tablespoon of olive oil until shimmering. Season the scallops with salt and pepper and add them to the skillet. - Spoon the squash onto plates and top with the scallops. Drizzle with the remaining herb sauce, garnish with the Parmesan shavings and serve.
