Raspberry Frost Sodas Food

RASPBERRY ICE CREAM SODAS

Steps:

• Using an ice cream scoop, put 1/2 cup of sherbet into each glass. Scoop 1/2 cup of vanilla ice cream on top of the sherbet. Pour 1/3 cup club soda on top of the ice cream. Drizzle each glass with 2 tablespoons of raspberry syrup and garnish with fresh raspberries. Serve immediately with straws and sundae spoons.
• In a small saucepan, whisk together the orange juice and cornstarch until smooth. Add the raspberries, raspberry jam and sugar. Bring the mixture to a boil over medium-low heat, stirring frequently. Reduce the heat to medium-low and simmer for 5 minutes. Pour the mixture through a fine-mesh sieve into a small bowl, pressing on the solids with a wooded spoon to extract as much liquid as possible. Cool the syrup for 30 minutes.

RASPBERRY FROST SODAS

Steps:

• Pour 1/4 cup cranberry juice in each of 24 short, wide glasses.
• Place 1 scoop (about 1/2 cup) sherbet in each glass. Fill with ginger ale.

RASPBERRY SODA

Steps:

• Put the raspberry concentrate in a glass. Top off with seltzer. Add ice and serve.

RASPBERRY FROST SODAS

Steps:

• Pour 1/4 C cranberry juice in each of 6 short, wide glasses.
• Place 1/2 C sherbert in each glass.
• Fill with ginger ale.

FROSTY FRUITY SODAS

Steps:

• Pour 1/4 cup juice into each of 8 glasses or paper cups. Top each with 1/4 cup sherbet and 3 ounces ginger ale.
• Sprinkle with candies. Serve immediately.

FRENCH SODAS (BLUEBERRY, STRAWBERRY OR RASPBERRY)

Steps:

• Boil the sugar and water until it begins to dissolve. Add the berries and simmer for an additional 15-20 minutes. The berries will turn to mush and the liquid will thicken.
• Strain over a bowl keeping the juice and discarding the fruit. Cool completely and refrigerate until ready to use.
• To make a French Soda: Fill a tall glass with crushed ice. Pour over 1/4 part of the berry syrup. Pour over with sparkling water. Add a splash of half-and-half (or to taste). Serve with as straw which is used to gently stir the mixture together.

RASPBERRY FROSTING

Steps:

• Puree berries with granulated sugar in a food processor until smooth. Pass mixture through a fine sieve into a bowl, pressing on solids to extract as much liquid as possible.
• In another bowl, beat butter on medium-high speed until pale and fluffy, about 2 minutes. Reduce speed to medium and add confectioners' sugar, 1/2 cup at a time, beating well after each addition and scraping down sides of bowl as needed. Beat in berry puree. Frosting can be stored in refrigerator up to 2 days; bring to room temperature and beat on low speed until smooth again before using.
