1/2 cup chopped cucumber
2 teaspoons chopped fresh mint leaves
1 teaspoon fresh lemon juice
1 box (9 oz) frozen chopped spinach
1 1/4 lb lean (at least 93%) ground turkey
1/4 cup fat-free plain yogurt
1 teaspoon dried oregano leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
5 thin slices medium tomato, halved
5 whole-grain pita bread halves (6 inch)

Steps:

  • Set oven control to broil. In medium bowl, mix Cucumber Sauce ingredients; cover and refrigerate until ready to use.
  • Cook spinach as directed on box; cool slightly. Squeeze to drain well. In large bowl, mix cooled spinach, turkey, 1/4 cup yogurt, the oregano, garlic salt and pepper. Shape into 5 oval patties, each about 1/2 inch thick. On broiler pan, place patties. Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of burgers reads 165°F.
  • Place 2 tomato slice halves in pita pocket halves; place burgers over tomato slices. To serve, top each burger with about 3 tablespoons sauce.

1 pound ground turkey
½ cup fresh spinach leaves (, chopped)
⅓ cup sun-dried tomatoes (, chopped)
1/4 cup red onion (, minced)
¼ cup feta cheese (, crumbled)
2 cloves garlic (, pressed or minced)
1 egg (, whisked)
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 soft whole-wheat hamburger buns
Bibb lettuce leaves
Sliced red onion
½ cucumber (, halved with skin and seeds removed)
3/4 cup low-fat plain Greek yogurt
2 cloves garlic (, pressed or minced)
1 tablespoon red wine vinegar
1 tablespoon fresh dill (, minced)
Pinch of kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion and feta. In a small bowl, whisk together the garlic, egg, olive oil and dried oregano and kosher salt and freshly ground black pepper then pour over the turkey and mix with your hands to combine.
  • Divide the burger mixture into 4 portions and mold into patties. Place on a cutting board or plate dividing the patties with parchment paper and refrigerated for 30 minutes up to overnight. You could also individually freeze the patties at this point for up to 3 months.
  • Prepare the tzatziki sauce by grating the cucumber. Gather the cucumber together and place in a paper towel and press the water out of the shredded cucumber and place in a medium size bowl. Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
  • Heat a non-stick grill pan over medium heat and spray well with cooking spray.
  • Place the turkey burgers on the grill, cover with an upside down sheet pan or lid and cook for about 5 minutes per side. Be sure to watch the burgers and monitor your heat as the burgers will brown quickly if the heat is too high.
  • Slather buns with tzatziki sauce and garnish with lettuce leaves and red onion. Or serve bunless in the bibb lettuce leaves.

1 ½ pounds 93% lean ground turkey
1 tablespoon minced garlic
1 teaspoon ground cumin
2 teaspoons dried oregano
1/3 cup Kalamata olives (finely chopped)
3 ounces crumbled feta cheese
1 cup finely chopped and packed fresh spinach
Pinch each of sea salt and black pepper
Olive oil spray

Steps:

  • Preheat the oven to 420°F.
  • Add all the ingredients to a large bowl and mix together thoroughly.
  • Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
  • Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
  • Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.
  • Cook on one side for 3 to 4 minutes, until the edges are brown and seared, then flip the patties over.

1 cup grated cucumber
1/2 cup Greek yogurt
1 tbsp dill
1 tbsp olive oil

Steps:

  • (If using store-bought tzatziki - skip to step 3) Place grated cucumber in a sieve placed over a bowl and season with a pinch of salt. Let sit for about 5 minutes then squeeze as much liquid from the cucumbers as you can.
  • Mix together the strained cucumber, Greek yogurt, lemon juice, olive oil, garlic, dill, and salt in a small mixing bowl. Set aside for assembly.
  • In a medium bowl combine ground turkey, Kalamata olives, garlic, minced red onion, oregano, salt, and pepper.
  • Divide the meat mixture into 4 equal portions and roll into balls. Use your hands or the bottom of a plate to flatten to about a half-inch. Place on a plate and chill in the fridge until grilling.
  • Preheat your barbecue on high heat. Remove the burgers from the fridge and season each with a pinch of salt. Oil your barbecue grates and grill the burgers for 5 minutes per side, until cooked through, then set aside to rest for three minutes.
  • If you're toasting your buns then arrange them on the bbq for one minute while the turkey burgers are resting.
  • To assemble, load the bottom bun with tzatziki and place a turkey burger on top. Lay a slice of tomato, red onion, a few cucumber slices, and couple thick slices of feta cheese. Dollop with a little more tzatziki and enjoy.
