1100g octopus, cleaned (35 ounces)
2-3 tbsps red wine vinegar
100-120 ml dry white wine (1/2 cup)
1-2 tbsps honey
3 tbsps balsamic vinegar
3 white onions, sliced
3 tomatoes, chopped
2 cloves of garlic, finely chopped
extra virgin olive oil
2 bay leaves
some chopped parsley

Steps:

  • Into a large pan, add the tentacles of the octopus, along with the red wine vinegar, the wine and bay leaves and bring to the boil. Boil with the lid on, on medium low heat, for 40-60 minutes. Do not add any water, because the octopus, will shrink and emit enough water. Be careful not to add any salt, as the octopus is salty enough and not to over-boil it, because it will get mushy. When cooked nicely, the octopus should be crunchy.
  • When done, remove the octopus from the pan and keep the juices into a bowl.
  • Into a very hot pan, add the octopus, without the juices, and color nicely for 1 minute. This will allow the octopus to get crispy on the outside.
  • Add the sliced onions and chopped tomatoes into the pan, along with 1-2 tbsps of olive oil and the garlic and stir. Let it cook for about 5 minutes, stirring every now and again, until the onions caramelize.
  • Deglaze with the balsamic vinegar and wait for it to evaporate. Pour in the juices from boiling the octopus, that you kept aside, and 2 tbsps of honey. Season well with freshly ground pepper, sprinkle with some chopped pasley and cook for 3-5 minutes.
  • Serve with some crusted bread and ouzo or tsipouro.

This is really quite delicious. If you've never tried octopus, I urge you to. It is meaty and rich-tasting, and the macaroni tastes wonderful cooked in the rich juices it produces.

2 lbs octopus, thawed if frozen
1 cup red wine
1 garlic clove, minced
1 medium onion, chopped fine
1 bay leaf
1/2 cinnamon stick (or 1/2 tsp ground)
3 cups diced fresh tomatoes or 3 cups canned tomatoes, diced
1/4 cup olive oil
1/2 lb similar type like ziti pasta or 1/2 lb penne
1 1/2 tablespoons butter

Steps:

  • Rinse the octopus under cold, running water and place in pot dripping wet (you don't want to dry it off - this is the moisture it will cook in).
  • Add the red wine, garlic, onion, bay leaf and cinnamon and cover the pot.
  • Bring to the boil over low heat.
  • It is tender when pierced easily with a fork (this can vary from octopus to octopus, so time is not a good indicator of doneness in this case).
  • Remove the octopus and let cool until cool enough to handle and cut into bite-size pieces.
  • Meanwhile, in pot you have cooked the octopus in, add tomatoes and olive oil. Boil for 8-10 minutes to bind the sauce.
  • Stir in the cut octopus and nearly-cooked macaroni and simmer for the remaining 3-4 minutes required to cook your macaroni (if mixture appears too dry, add some of the pasta cooking water - you want this quite 'moist' but not soupy).
  • Stir in butter. Remove bay leaf and cinnamon stick.
  • Note: I use digitali pasta for this, but I can't get it into the ingredient list with the new Zaar format.

I have always liked Greek pickled octopus but didn't realise it was easy to make. I got this recipe from a class I attended at the Sydney Fish Market Cooking School. If you can't find a pre bashed octopus you can do this using a wooden rolling pin and belting the octopus about 30-40 times (advice from the fishmonger) I suggest doing it outdoors!

1 -1 1/2 kg octopus
3/4 cup olive oil
2/3 cup red wine vinegar
5 sprigs lemon thyme
1 garlic clove, peeled & sliced
1 -2 sterlised jar

Steps:

  • If you can buy cleaned octopus you can skip the next stage.
  • Gut the octopus and peel the skin from the octopus. Remove the beak (it is located at the top of the legs).
  • Place the octopus in large pan with 1 cup water. Cook over medium/low heat. The octopus will give off a lot of liquid but check ocassionally that there is still enough liquid in the pan.
  • Cook for about 1 -1 1/2 hours. Test with a skew, it should easily pierce the flesh.
  • Remove from pan and allow to cool slightly or cool enough to handle.
  • Slice tentacles into 3cm lengths and body into pieces.
  • Mix up the dressing ingredients. Check dressing that it is not too vinegary as vinegar strenght is so variable.
  • Pack the octopus in the sterlised jars and pour over the marinade.
  • Let sit in the refrigerator for 5 days before eating.
  • Serve as part of meze.

Divide the octopus into eight pieces, keeping the tentacles intact. Place in a heavy saucepan with the garlic, bay leaf, rosemary, thyme, vinegar, balsamic, half cup of olive oil, and black pepper. Cover and bring to a boil. Reduce heat and simmer for about 45 to 50 minutes, or until the tentacles are tender but al dente and not at all stringy.
  • Remove the octopus from the heat and place it in a bowl with enough of the pot juices to cover. Set aside until ready to grill. (At this point, you can bring the octopus to room temperature, then refrigerate in its cooking liquid for up to 24 hours.)
  • Strain the octopus cooking liquid and discard the solids. Transfer the liquid back to the pot and simmer over medium-low heat until reduced to a loose syrupy consistency.

  • Cook the octopus as above. When there is only a little bit of pink liquid left, add the olive oil, the wine, bay leaves and peppercorns (I do not add salt) and when it begins boiling lower heat and simmer until the liquid has been reduced to just a few tablespoons.
  • Meantime bake the potatoes with skin on, cooking them either in the oven or in the microwave, until soft. You can also steam them in the basket of the pressure cooker (again with skin on), for about 15 minutes.
