Steps:
- Divide meat into four portions and form into half-moon-shapedpatties to fit on half a pita bread.
- Use a fork to mash the garlic with butter in small bowl; set aside.
- Heat olive oil in skillet over medium-high heat.
- Add mushrooms, onion, salt and pepper; cook until tender, about 5 minutes.
- Keep warm.
- Prepare a charcoal or gas grill for cooking.
- Spray grill rack withnon-stick cooking spray.
- Cook patties to desired doneness.
- (Can be done in a covered grill. For medium rare, cook about 4 minutes on one side; turn and cook 4 minutes more.) During the last few minutes of cooking, brush one side of each pita with the garlic butter and place, buttered side down, on the outer edges of the grill to toast lightly.
- Place a pita, toasted side up, on a serving plate.
- Place a patty on one half.
- Top patty with 1 tablespoon feta cheese.
- Place part of the mushroom mixture on the other half of pita.
- Repeat to make4 sandwiches.

- Preheat the oven to 250 degrees F.
- Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
- Put the pitas on a baking sheet and place in the oven to warm.
- Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
- Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

MY BIG FAT GREEK BURGERS

- In a small bowl, stir together the yogurt, oil, lemon juice, garlic, dill, and salt and pepper.
- Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.
- Divide the turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Put 2 tablespoons of the spinach-feta mixture onto half of the patties. Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
- Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
- To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the red bell pepper in half from top to bottom; remove the stem, seeds, and ribs; place pepper cut-side-down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the pepper has blackened and blistered, about 5 minutes. Allow the blackened pepper to cool and steam in a paper bag for 5 minutes; peel and dice; set aside.
- Stir together the 2 ounces feta cheese, mayonnaise, lime juice, the 1 sprig chopped mint, and the 1 sprig chopped parsley in a small bowl; set aside.
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Place the roasted red pepper, ground beef, feta cheese, spinach, bread crumbs, egg, garlic, onion, basil, the remaining mint, and the remaining parsley in a bowl. Sprinkle with salt and pepper, and mix gently with your hands until evenly combined. Divide the meat mixture to form 4 equal 4 1/2 inch patties.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Serve burgers on warm toasted Kaiser roll with the feta cheese spread, fresh tomatoes, and lettuce.

- In a large mixing bowl, use your hands to combine well the turkey meat with the spinach, olives, lemon zest, onion, mint or parsley, garlic, oregano, salt, and pepper. But don't overmix or the meat with become tough. Divide the mixture into 6 equal portions and shape them into burgers.
- Warm about a tablespoon of olive oil or ghee in a large skillet set over medium-high heat. Working in batches, add the burger patties and fry them on one side for about 5 minutes, then flip them, frying on the second side for another 4 to 5 minutes, or until they're golden brown.
- If you like, serve each burger on a large piece of butter lettuce and top them with any of the optional ingredients.
GREEK BURGERS
My mother never really cooked ground meat, but I have given these burgers the flavor of her Greek cooking. I like a lot of pepper on mine, coating each side liberally, but the kids prefer these burgers with just a very little finely ground pepper. Serve with a garlic mayonnaise.

- Preheat grill for high heat.

- In medium bowl,gently mix together chicken,bread crumbs,egg,milk,lemon juice,mint,oregano,salt and pepper until well combined(mixing too vigorously will result in tough burgers).Shape into 4 patties each about 3/4 inch thick.
- In a large nonstick skillet heat oil over medium-high heat.Cook patties about 8 minutes turning once,until golden brown and no longer pink inside.
- Meanwhile,cut pitas in half crosswise to make 4 pockets.Warm pitas in 300 degree oven wrapped in aluminum foil for 5 minutes or in the microwave for 1 minute.
- Spread inside of pita with mayo then place cooked patty inside with a slice of red onion ,tomato,and some lettuce.enjoy.

- Grate the onion, garlic and tomato in a mixing bowl. Add the oregano, salt, pepper, olive oil, egg and mix using a whisk.
- Add the minced beef and breadcrumbs and mix thoroughly using your hands. If the mixture is too sticky add some more breadcrumbs till the mix is solid. Pre-heat the oven to 200C. Leave the mixture in the fridge to rest for 10-15 minutes, while the oven is heating to temperature.
- Knead the mixture in flat round hamburgers. Pre-heat some olive oil or rapeseed oil (for crispier results) in a pan and shallow fry for 1 minute on each side to lock in the flavours.
- Place the burgers on a large baking tray and cook in the oven for 20 minutes. Once ready, remove tray from the oven and let the meat rest for 5 minutes.
