3 pounds pork shoulder, fat trimmed
1 onion, chopped
3 cloves garlic, minced
1 tablespoon oregano
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon black pepper
pitas
tzatziki
toppings of choice! like lettuce, tomatoes, red onion, feta, lemon, etc.

Steps:

  • Place all ingredients for the pork in a slow cooker on low heat for 10-12 hours, OR in an Instant Pot on the meat/stew setting (about 45 minutes). Shred the meat and stir it around in all those juices. YUM.
  • Assemble pitas!

Greek Pitas with Pulled Pork image

Both picky and adventurous eaters will go for this Mediterranean spin on pulled pork. Serve the meat wrapped in soft, whole-wheat pita bread topped with chopped fresh veggies, tangy feta cheese, and our creamy, herb-infused Tzatziki Sauce. If your people are picky, they'll still love the pulled pork just wrapped by itself in a warm pita.

2 teaspoons dried oregano
2 teaspoons ground cumin
1 1/2 teaspoons salt
2 teaspoons ground black pepper
1/2 teaspoon red pepper flakes
6 garlic cloves, minced
1 (3- to 4-pound) boneless pork shoulder* (also known as Boston butt), trimmed of excess fat
1 red onion, thinly sliced
1 cup low-sodium chicken broth
8 to 10 pocketless pita breads (preferably whole wheat or try our Whole Wheat Pita Bread)
Easy Tzatziki Sauce (Highly recommended!! Or buy some at the store.)
Optional toppings: chopped cherry tomatoes, sliced cucumbers, chopped Kalamata olives, crumbled feta cheese, a squeeze of lemon juice

Steps:

  • In a small bowl, stir together the oregano, cumin, salt, black pepper, red pepper flakes, and garlic.
  • Pat the pork shoulder dry with paper towels. If making in the Instant Pot, cut the pork into four equal pieces. Rub the seasoning mixture on all sides of the pork. (Freezing instructions begin here.)
  • Place the pork, onion, and broth in the slow cooker or the Instant Pot. Slow Cooker Instructions: Cover and cook on Low for 7 to 9 hours or on High for 4 to 5 hours.
  • Instant Pot Instructions: Lock and seal the lid. Cook at high pressure for 45 minutes. Allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  • Transfer the pork and onion to a cutting board and discard any liquid remaining in the cooker. Shred the meat, then return the meat and the onion to the cooker to keep them warm.
  • Serve some shredded pork wrapped in a warm pita, topped with our Easy Tzatziki Sauce and your favorite Greek toppings.
  • Slow Cooker Instructions: Thaw meal completely using one of these safe methods. Follow Steps 3 through 5.
  • Instant Pot Instructions: Set the Instant Pot to "Sauté." Transfer the frozen meal to the pot and cook for 5 minutes to release some liquid. Press "Cancel." Follow Step 3b, but cook for 45 to 50 minutes. (The frozen meat will cook in about the same amount of time as fresh.) Follow Steps 4 and 5.

Enjoy these slow-cooker pulled pork sandwiches, inspired by souvlaki-Greek lemon and herb-flavored kabobs served with tzatziki.

1 large yellow onion, cut into wedges
3 lb boneless pork shoulder, trimmed of all visible fat
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
3/4 teaspoon coarse ground black pepper
1/2 teaspoon salt
3 large cloves garlic, finely chopped (3 teaspoons)
1/2 teaspoon salt
1 1/2 cups plain nonfat Greek yogurt
1 English (hothouse) cucumber, peeled, seeded, diced (1 1/2 cups)
1 tablespoon lemon juice
1/2 teaspoon salt
6 whole wheat thin pocket flatbreads (7 inch), cut in half
2 cups baby spinach
6 plum (Roma) tomatoes, cut into 6 slices each
12 lemon wedges, if desired

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. Place onion in bottom of slow cooker. Top with pork. In small bowl, mix lemon juice, oregano, pepper, 1/2 teaspoon salt and the garlic. Pour and spread lemon mixture over pork. Cover; cook on Low heat setting 8 to 10 hours or High heat setting 4 to 5 hours or until pork is very tender.
  • Meanwhile, in medium bowl, mix Tzatziki ingredients. Refrigerate until serving time.
  • Remove pork to cutting board; pull into bite-size pieces. Pour juices and onions into small bowl. Place pork back in slow cooker. Sprinkle with 1/2 teaspoon salt. Using slotted spoon; remove onions from juices, and place in slow cooker with pork; gently mix. Add juices back to pork 2 tablespoons at a time until desired moistness is reached. Discard remaining juices.
  • To serve, fill each pocket flatbread half with spinach leaves, 3 tomato slices, and about 1/2 cup pork mixture. Top with tzatziki and a squeeze of lemon juice.

This recipe is so simple to make, and tastes so good. A nice change of pace, and the pork with the sauce are so light tasting. Prep time includes marinating time.

1/4 cup lemon juice
2 tablespoons olive oil
1 tablespoon prepared mustard
1 3/4 teaspoons minced garlic, divided
1 teaspoon dried oregano
1 lb pork tenderloin
1 cup chopped cucumber, peeled and seeded
1 cup plain yogurt
1/4 teaspoon salt
1/4 teaspoon dill weed
pita bread (syrian)
1/2 cup chopped green onion

Steps:

  • In a large zip top bag, combine lemon juice, oil, mustard, 1 1/4 tsp of the garlic, and the oregano.
  • Add the pork loin, seal the bag, and turn to coat.
  • Refrigerate for at least 2 hours.
  • In a bowl, combine the cucumber, yogurt, salt, dill, and remaining garlic.
  • Cover and chill till serving time.
  • Heat oven to 400°.
  • Place pork in pan lined with foil, or sprayed with non stick spray.
  • SAVE MARINADE.
  • Bake for 10 minutes, then brush with remaining marinade.
  • Bake for 15 minutes more, then check temperature with meat thermometer.
  • Temp should be 160° (slightly pink).
  • Bake longer if necessary.
  • This is how I serve the meat in the pitas: split the pita so you have 2 rounds.
  • Place some sliced pork in the center, top with yogurt sauce and green onions, and roll up.
  • Or if you prefer, you can slice off the top of the pita, and put meat and sauce in to make a pocket.
