60ml (4 tbsp) olive oil
1 lemon, juiced and zested
4 garlic cloves, peeled and crushed
15ml (1 tsbp) rosemary, washed and finely chopped
Salt and pepper
2 racks of lamb, weighing approximately 1.25kg (3lbs)

Steps:

  • For the marinade, mix the oil, lemon juice, zest, garlic, rosemary, salt and pepper in a small bowl.
  • Place the lamb in a large baking dish or resealable plastic bag.
  • Pour the marinade onto the lamb and rub the mixture all over the lamb.
  • Cover and leave to marinate in the fridge overnight.
  • Bring the barbecue to a medium temperature, about 160°C.
  • Place the lamb bone side down first and sear for 4 minutes.
  • Turn the meat and place in indirect heat for 15 minutes. This will cook them to medium-rare.
  • [Optional] Continue cooking until desired doneness. Use a meat thermometer for optimal results.
  • Remove from the lamb from the heat and let it rest for 10 minutes before cutting into chops.
  • Serve with green salad and your favourite barbecue side dishes.

3 tablespoons chopped fresh rosemary leaves
1 1/2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
1/2 cup freshly squeezed lemon juice (4 lemons)
1/2 cup good olive oil
1/2 cup dry red wine
2 racks of lamb, frenched and cut into 8 chops each
Yogurt Mint Sauce, recipe follows
6 scallions, white and green parts, chopped
1/2 cup chopped fresh mint leaves
2 tablespoons minced fresh dill
Pinch crushed red pepper flakes
1 tablespoon good olive oil
1 tablespoon freshly squeezed lemon juice
7 ounces Greek-style yogurt (recommended: Fage Total)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the garlic, rosemary, oregano, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and pulse until the herbs are finely minced. Add the lemon juice, olive oil, and red wine and combine. Place the chops in a glass or ceramic dish just large enough to hold them in a single layer. Pour the marinade over the chops, turning to coat both sides. Cover with plastic wrap and refrigerate for at least 2 hours but preferably overnight.
  • When ready to cook, prepare a grill with one layer of hot coals or turn a gas grill to medium-high heat. Remove the lamb from the marinade, sprinkle generously with salt and pepper, and grill for 4 to 5 minutes on each side. Remove to a platter, cover tightly with aluminum foil, and set aside to rest for 10 minutes. Serve hot with the cold Yogurt Mint Sauce.
  • Place the scallions, mint, dill, red pepper flakes, olive oil, and lemon juice in the bowl of a food processor fitted with the steel blade and puree until it's a coarse paste. Add the yogurt, salt, and pepper and pulse until combined. Transfer to a bowl, cover, and refrigerate for a few hours to allow the flavors to develop.

Rack of lamb is simple to prepare and quite elegant for a proper dinner party. Racks have become so popular and expensive in the U.S. that chefs have turned to overseas sources to supply their restaurants at a much cheaper price. There are many New Zealand producers selling lamb with no added hormones or antibiotics. Small organic and free range producers in the U.S. sell their animals whole, so you not only get two racks you get everything else, legs, shoulders, shanks, etc. as well. Lambs are very small, 35 to 40 pounds, so if you split a whole one with a friend it is easy to use up all of the cuts. The herb marinade for the rack really perfumes the meat if it is done a day or two ahead of time. The same marinade can be used for many other cuts as well. It is best to remove as many of the herbs and garlic before roasting as they will burn and create off flavors.

2 lamb racks (about 8 to 9 ribs each)
1/2 cup extra-virgin olive oil, plus 2 tablespoons
4 garlic cloves, unpeeled and crushed
2 (4-inch) rosemary sprigs, crushed
6 thyme sprigs, crushed
4 rosemary sprigs, for garnish
Freshly ground black pepper

Steps:

  • Clean the rib bones well by scraping off meat and sinew with a small sharp knife. Cut the racks in 1/2 so that each has four ribs. Mix together the olive oil, crushed garlic, crushed rosemary and thyme sprigs in a large bowl. Add the lamb and coat well. Grind some coarse black pepper over all. Wrap well and marinate the racks overnight.
  • The next day remove the lamb from the marinade and scrape off as many herbs as possible. Preheat the oven to 400 degrees F.
  • Heat a large saute pan over medium-high heat and add 2 tablespoons of olive oil. Season the lamb well with salt; no additional pepper should be necessary, and sear fat side down until golden, about 7 minutes. Turn over so that the fat side is up and roast in the preheated oven for 20 to 30 minutes. Let the rack rest for 10 minutes before cutting.
  • To serve, cut each lamb rack into 4 equal pieces, 2 bones per chop and serve on individual plates or a platter with the accompaniments of your choice.

MOROCCAN-STYLE BARBECUED LEG OF LAMB

50g butter , melted
3 tbsp olive oil
2 tsp each ground cumin , coriander and praprika
1 tbsp thyme leaves
3 garlic cloves , crushed
zest and juice 1 lemon
1 tsp harissa
2 ½kg leg of lamb , butterflied
1 tsp harissa
handful fresh coriander leaves, roughly chopped
300g Greek yogurt

Steps:

  • Mix the butter and oil in a bowl, then stir in the spices, thyme, garlic, lemon zest and juice. Add the harissa, 1 tsp salt and plenty of freshly ground black pepper, and mix well.
  • Put the butterflied lamb (see step-by-step guide) in a large shallow dish and spoon over the marinade. Using your hands, rub it all over the meat. Cover loosely with foil or cling film and leave to marinate for at least 2 hrs, or overnight in the fridge.
  • Light the barbecue, adding plenty of coals. When it is ready, add the lamb, fat-side down, and cook on a fairly high heat for 5 mins until well browned. Turn over and cook for another 5 mins to brown the other side.
  • Move the coals to the sides of the barbecue to reduce the heat under the meat and cook more gently for 30-40 mins, turning occasionally. This timing will give you pink meat.
  • Remove the meat to a large board and cover tightly with foil. Leave to rest for 10-15 mins.
  • For the sauce, fold the harissa, a little salt and the coriander into the yogurt. Cut the lamb into thick slices and serve with the sauce and couscous, if you like.

4 tbsp olive oil
juice 1 lemon
1 tbsp dried oregano
1 tbsp thyme leaf
2 bay leaves
1 leg of lamb , butterflied (see step by step guide)
flatbreads , to serve
½ cucumber , halved and deseeded
170g pot Greek yogurt
1 small garlic clove , crushed
handful mint leaves, chopped

Steps:

  • Mash the garlic to a paste with a pestle and mortar. Mix with the olive oil, lemon juice, oregano, thyme and bay, and season with a little salt and plenty of pepper. Place the lamb in a large porcelain dish. Pour the marinade over the lamb and massage into the meat. Leave the lamb for at least 1 hr at room temperature, or longer in the fridge, but no longer than overnight or the meat will become too soft.
  • To cook the lamb, fire up the barbecue, or heat the oven to 220C/200C fan/gas 7. To cook on the barbecue, wait for the coals to turn ashen, then lay the lamb on the grill and cook for 15 mins on each side for meat that is pink, or 20 mins on each side for well done. To cook in the oven, place the lamb in a shallow roasting tin and roast for 30 mins for pink or 40 mins for well done, turning the lamb halfway through. Leave the meat to rest for 10 mins before carving.
  • Meanwhile, make the tzatziki. Coarsely grate the cucumber, sprinkle with a pinch of salt and squeeze out all the liquid. Tip into a bowl with the yogurt, garlic and mint, and mix well. Carve the lamb into thick slices and serve with the tzatziki wrapped up in warm flatbreads.

Lamb's subtly sweet gaminess works perfectly with the funky goodness of gochujang chile paste. The salt and sugar content of the simple Korean marinade acts as a brine for the lamb, producing a juicy interior when soaked overnight. In the final stage, the marinade is reduced, doubling as a sauce. I love using rack for this, since it's more tender and easier to work with than leg and a little more user-friendly than chops.

2 tablespoons gochujang (Korean hot pepper paste)
6 cloves garlic, crushed
¼ cup minced green onions, white and light green parts only
1 ½ tablespoons brown sugar
3 tablespoons rice vinegar
1 tablespoon sesame oil
¼ cup soy sauce
1 teaspoon kosher salt
2 (1 pound) racks of lamb, trimmed
kosher salt to taste

Steps:

  • Combine gochujang, garlic, green onions, brown sugar, rice vinegar, sesame oil, soy sauce, and salt. Whisk marinade until thoroughly combined.
  • Trim any excess fat along the surface of lamb. Cut a slash about 1 1/2 inches deep between each rib bone, stopping above the loin. Transfer racks to a zip-top bag. Place bag in a bowl; pour marinade inside. Seal the bag and massage the marinade onto the lamb. Marinate in the refrigerator, turning once or twice, 8 to 24 hours.
  • Remove racks of lamb to a plate and return marinade to the fridge. Blot off extra moisture from the fatty side of the lamb. Sprinkle more kosher salt on top.
  • Preheat grill to 350 degrees F (175 degrees C). Add racks fat side-down and cook until browned, 7 to 8 minutes. Flip and continue to cook until internal temperature reaches 125 degrees F (52 degrees C), 12 to 15 minutes more. Plate lamb and let rest for 10 minutes.
  • Pour the reserved marinade into a saucepan over medium-high heat. Bring to a boil; continue cooking until reduced to a glaze, 1 to 2 minutes more. Brush glaze over the lamb.

1 cup fresh oregano, chopped
1 1/2 teaspoons ground nutmeg
2 (1 1/4 kg) boneless leg of lamb

Steps:

  • Finely grate the rind off all 3 lemons, then juice the lemons.
  • Combine oil, lemon rind and juice, garlic, oregano, nutmeg and salt and pepper and whisk to combine.
  • Using a sharp knife butterfly the lamb legs so they open out flat.
  • Place lamb into ceramic dishes and pour the marinade evenly over each piece, rub the marinade all over the lamb.
  • Cover and refrigerate overnight.

  • Preheat a greased BBQ to high heat.
  • Add both the lamb legs and cook each side 3 minutes to seal.
  • Reduce heat to low.

  • Cook for 20 minutes each side for medium done.
  • Baste with marinade every 10 minutes.
  • Remove lamb from the heat and cover to rest for 15 minutes before slicing.

Greek marinated Rack of Lamb on the BBQ
-4 X Rack of lamb
-1 cup dry white wine
-¼ cup fresh lemon juice
-¼ cup extra virgin olive oil
-1 Onion large dice
-8 Cloves of Garlic crushed
-3 Tbls Fresh mint finely chopped
-1 Tbls Fresh Rosemary finely chopped
-1 Tbls Fresh thyme finely chopped
-Salt and pepper to taste ( I like very little salt and a lot of pepper)

Steps:

  • Trim virtually all of the fat off of the lamb racks, being careful to leave the loins attached to the bone. Cut each rack in half and place them into a large freezer bag. Mix the remainder of the ingredients in a bowl and add to the lamb. Let the lamb marinate over night in the fridge. Half an hour before cooking, take the lamb out of the fridge to bring it up to room temperature. Remove the lamb from the marinade and discard the marinade. Pat dry the lamb and brush with Olive oil then sprinkle with salt and pepper. Cook on a medium hot BBQ (375 - 400 if you have a thermometer) for four minutes per side. Let them rest for five or six minutes then serve on a little wild rice cooked in chicken broth and a Greek salad. Enjoy
