Homemade Greek pizza featuring feta, roasted red peppers, artichokes, olive and basil! This is a delicious weeknight meal made with pantry ingredients. Feel free to toss on some chopped red onion (1/4 cup or so) if that sounds good to you. Recipe yields two 11-inch pizzas.

1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
2/3 cup easy pizza sauce or marinara sauce or one 32-ounce can whole tomatoes, drained and crushed by hand
1/2 teaspoon dried oregano
8 ounces (2 packed cups) grated low-moisture part-skim mozzarella cheese
1/2 cup thin, 1-inch strips roasted red pepper (from about 1/2 medium roasted red pepper-I used jarred)
1/2 cup quartered marinated or jarred artichokes, halved lengthwise
15 pitted Kalamata olives, halved lengthwise
1/2 cup (2 to 3 ounces) crumbled feta
Optional garnishes: three to four fresh basil leaves, torn into little pieces, and red pepper flakes

Steps:

  • Preheat oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you're using a baking stone or baking steel, place it in the oven on the top rack. Prepare dough through step 5.
  • Spread marinara sauce evenly over the pizzas, or top with drained, crushed tomatoes (crush the tomatoes over the sink to get out as much liquid as possible). Sprinkle lightly with dried oregano.
  • Divide toppings evenly over the two pizzas, beginning with shredded mozzarella, followed by roasted red pepper, artichoke, olives and lastly, the feta.
  • Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 12 minutes (or significantly less, if you're using a baking stone/steel-keep an eye on it). Transfer pizza to a cutting board and sprinkle with torn fresh basil. I sprinkled mine with red pepper flakes, too. Slice and serve!

A light and flavorful pizza featuring feta, tomatoes, and spinach. I like to use a homemade whole wheat crust, rolled thin.

1 tablespoon olive oil
½ cup diced onion
2 cloves garlic, minced
½ (10 ounce) package frozen chopped spinach, thawed and squeezed dry
¼ cup chopped fresh basil
2 ¼ teaspoons lemon juice
1 ½ teaspoons dried oregano
ground black pepper to taste
1 (14 ounce) package refrigerated pizza crust
1 tablespoon olive oil
1 cup shredded mozzarella cheese
1 large tomato, thinly sliced
⅓ cup seasoned bread crumbs
1 cup shredded mozzarella cheese
¾ cup crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). If using a pizza stone, place in oven to preheat.
  • Heat 1 tablespoon olive oil in a large skillet; cook and stir onion and garlic until tender, about 5 minutes. Add spinach and continue to cook and stir until all liquid has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Allow mixture to cool slightly.
  • Unroll pizza dough on preheated pizza stone or a large baking sheet and brush with remaining 1 tablespoon olive oil. Spread spinach mixture over dough, leaving a small border at the edge of the pizza crust. Top with 1 cup mozzarella cheese.
  • Press tomato slices into seasoned bread crumbs until coated; arrange tomatoes over pizza. Spread remaining 1 cup mozzarella cheese and feta cheese over tomatoes.
  • Bake in preheated oven until pizza crust is golden brown and cheese is melted, about 15 minutes.

Cornmeal, for dusting
Flour, for dusting
1 (1 pound) ball store-bought pizza dough
3 tablespoons extra-virgin olive oil
2 leeks, pale green and white parts only, thinly sliced
Salt and freshly ground black pepper
3 cloves garlic, minced
12 ounces baby spinach leaves
1 (4-ounce) chunk feta cheese, crumbled (recommended: Athenos)
3/4 cup chopped fresh mint
2 tablespoons unsalted butter, softened

Steps:

  • For the crust: Place an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Dust a heavy baking sheet with cornmeal. Set aside.
  • On a lightly floured work surface, roll out the dough into a 1/4-inch thick rectangle about 16 inches long and 8 inches wide. Transfer the dough to the prepared baking sheet.
  • For the topping: In a large skillet, heat the oil over medium-high heat. Add the leeks and season with salt and pepper. Cook, stirring frequently until tender, about 5 minutes. Add the garlic and cook for 30 seconds until aromatic. In batches, add the spinach and cook until wilted, about 5 minutes. Remove the pan from the heat and add the feta cheese and mint. Season with salt and pepper, to taste.
  • Using the tines of a fork, prick the surface of the dough all over. Spread the spinach mixture on top and dot with butter.
  • Bake until the dough is golden and crunchy, 15 to 18 minutes. Cut into squares and serve.

1 garlic clove
1 tablespoon shallot, chopped
1 teaspoon lemon juice
1 handful parsley, chopped
1 handful baby kale
1 handful basil, chopped
1 tablespoon chives, chopped
1/4 cup olive oil
salt and pepper
2 cups baby kale
1/2 lb pizza dough
8 ounces mozzarella cheese, sliced into rounds
1/4 cup parmesan cheese
1 zucchini, shaved into long, thin ribbons
1 handful basil
1 tablespoon chives, chopped
1 avocado, sliced

Steps:

  • Pulse garlic and shallot in food processor until chopped. With the food processor running, add lemon juice, parsley, kale, basil and chives.
  • Very slowly drizzle in olive oil until kale and herbs get sufficiently chopped and everything is the consistency of a pesto. Season to taste with salt and pepper.
  • Preheat oven to 450 F and grease a baking sheet.
  • In a bowl, massage the kale with a bit of olive oil, salt and pepper until well-coated, set aside.
  • On a floured surface, roll out the dough to form a 12-inch circle. Transfer the dough to the baking sheet and cover it with the pesto. Top with mozzarella rounds.
  • Add the shaved zucchini ribbons and massaged kale, then sprinkle with half of the parmesan.
  • Drizzle pizza lightly with olive oil, salt and pepper.
  • Bake for 10-13 minutes or until crust is golden and cheese has melted.
  • Remove from oven and top with the fresh basil, chives, avocado and the rest of the parmesan.
