1 tablespoon canola oil
12 ounces skinless boneless chicken thighs
2 teaspoons bottled minced roasted garlic
¼ cup light sour cream
¼ cup fat free milk
2 teaspoons snipped fresh thyme or Italian (flat-leaf) parsley
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (.87 ounce) package 30 percent less sodium brown gravy mix, such as McCormick®
1 Sprigs fresh thyme or Italian parsley

Steps:

  • In a large saucepan cook potatoes, covered, in a small amount of boiling water for 20 to 25 minutes or until tender.
  • Meanwhile, in a large skillet heat oil over medium-high heat. Reduce heat to medium; add chicken thighs. Cook 14 to 18 minutes, or until no longer pink, turning once halfway through cooking time. Coarsely shred chicken. Cover and keep warm.
  • Drain cooked potatoes; return to saucepan. Add garlic to potatoes. Mash with a potato masher or an electric mixer on low speed. Add sour cream, milk, 2 teaspoons thyme, the salt, and pepper. Mash until light and fluffy. Cover with foil and keep warm.
  • Prepare gravy mix according to package directions. To serve, in bowls layer potatoes, chicken, and top with gravy. Garnish each serving with a thyme sprig, if desired.

2 teaspoons beef bouillon
2 teaspoons chicken bouillon
2-1/2 cups hot water
5 tablespoons flour
1/3 cup whole milk, plus additional milk as needed
1-1/2 cups cold water
7 tablespoons unsalted butter, divided
3/4 teaspoon kosher salt
1-1/2 cups instant mashed potato flakes
Ground black pepper, to taste

Steps:

  • Start by making the gravy. Add the beef and chicken bouillons to the hot water, stirring until the mixture is well combined. Set aside.
  • Meanwhile, in a small saucepan, melt 3 tablespoons of butter over medium-high and cook it until it starts to bubble and turn a light tan color.
  • Reduce the heat to medium-low and add the flour to make the roux. Stir constantly using a whisk until the mixture turns a light golden brown, about 5 minutes.
  • Add the bouillon-infused water to the pan, whisking constantly to prevent any clumps from forming. Increase the heat to medium-high and stir frequently until the mixture is the desired consistency, about 5 minutes.
  • Season the gravy with black pepper and keep it warm over low heat while you make the mashed potatoes.
  • In a medium saucepan, bring the milk and water to a boil. Reduce the heat to a simmer and add three tablespoons of the butter and the salt. Simmer the mixture until the butter is melted.
  • Remove the pan from the heat and add the potato flakes, whisking as you add. Whip the potatoes until they're light and fluffy, adding additional milk or water to adjust the consistency to your liking.
  • Place the remaining tablespoon of butter on top of the potatoes and let it melt.
  • Season the mashed potatoes with black pepper. Top the potatoes with the hot gravy and serve immediately.

1 batch homemade KFC Gravy
1.5kg/ 3lb Sebago (Aus dirt brushed), Russet (US), Maris Piper (UK) ( or other starchy potatoes)
1 tbsp salt ((for water))
75g (5 tbsp) unsalted butter, cubed
1/2 cup (125ml) cream (heavy / thickened)
3/4 cup (185ml) milk, full fat
Freshly ground black pepper
Salt to taste

Steps:

  • Peel and cut potatoes into 3cm / 1.25" cubes.
  • Place in a pot, add 1 tbsp salt and water so it's 5cm / 2" above potatoes.
  • Bring water to a boil, then boil for 15 minutes until potatoes are very soft and starting to fall apart.
  • Drain, leave in colander to steam dry for 3 minutes.
  • Meanwhile, melt butter in a saucepan over medium high heat. Add cream and milk, heat until just before simmer - do not let it boil. Remove from stove.
  • Pass potato through a potato ricer (Note 1) or use a masher with holes. Do not use beater - will make it dense.
  • Add hot milk mixture, 1/2 tsp salt and 1/4 tsp pepper. GENTLY stir until mixed through.
  • Taste for salt and pepper, add more if needed.
  • Transfer into serving bowl. Pour over Gravy and serve immediately with anything and everything!
  • For a KFC at home experience, serve with homemade Fried Chicken (it's better than KFC!)

2 tablespoons olive oil
1 (3 pound) beef sirloin tip roast
1 onion, chopped
4 cloves garlic, minced
2 cups brewed coffee
1 ½ cups water
2 cubes beef bouillon
6 basil leaves
1 tablespoon salt
1 teaspoon ground black pepper
½ cup all-purpose flour
½ cup water
salt to taste

Steps:

  • Heat olive oil in stock pot over medium heat; sear roast in the hot oil until slightly browned, about 2 minutes per side. Remove roast from pot and place on a plate. Cook and stir onion and garlic in the hot oil until onion is lightly browned, 10 to 15 minutes.
  • Return seared roast to the stock pot; pour coffee and 1 1/2 cup water over roast. Add beef bouillon, basil leaves, 1 tablespoon salt, and pepper.
  • Bring broth to a boil; reduce heat to medium low, cover stock pot, and simmer until meat is falling apart, 2 to 3 hours. Remove and discard basil leaves. Transfer roast to a serving dish and cover with a lid or aluminum foil, keeping the broth in the stock pot over medium heat.
  • Whisk flour and 1/2 cup water together in a bowl until smooth. Slowly whisk flour mixture into broth until gravy is smooth and somewhat clear; season with salt. Pour about half the gravy over the roast and pour the rest into a gravy boat for serving.

6 medium potatoes boiled
WHITE GRAVY
2 Tbsp butter
2 Tbsp flour
2 c milk
2 tsp salt
2 tsp pepper

Steps:

  • 1. Peel potatoes and chuck, boil until tender. When potatoes are about done, start the gravy. Heat the butter in a medium skillet over medium heat. Whisk in the flour, salt and pepper ( you may need a little more salt or less, according to your taste buds ) until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

  • Pour gravy into an ice cube tray and freeze until the cubes are solid and can be removed easily.
  • Place the potatoes into a pot with cold, salted water and bring to a boil and cook until the potatoes are fork-tender.
  • Drain the potatoes until completely dry.
  • While still hot, mash the potatoes with a potato masher, fork, potato ricer, or food mill. If the potatoes get too cold, reheat them in the oven or microwave until hot and dry again.
  • To the mashed potatoes, add the sour cream, butter, egg yolks, salt, pepper, and nutmeg. Fold the mixture together with a spatula until just incorporated, making sure not to overmix.
  • Transfer the mixture to a piping bag or a zip-top bag with a star tip.
  • Pipe a disc of the mashed potatoes on a parchment paper-lined sheet tray.
  • Place an ice cube of frozen gravy in the center, and pipe more mashed potatoes around the gravy cube,
  • Freeze until the potatoes are firm.
  • Preheat oven to 425°F (220°C).
  • Brush with egg wash until completely coated.

1 packet brown gravy mix

Steps:

  • Fill a large pot halfway with water. Add the cubed potatoes and cook at a gentle boil until tender, about 15 minutes.
  • Meanwhile, add the breadcrumbs and milk to a bowl and allow to soak until it turns into a paste.
  • Combine the ground beef with the paste and mix together thoroughly with your hands.
  • Form evenly sized meatballs, around 1 1/4 inch in diameter, compacting the meat into a sturdy ball.

2 pound(s) baby potatoes
1 large yellow onion, rough chopped
1 package(s) onion soup mix
1 can(s) cream of mushroom soup
1/2 cup(s) beef broth
1 tablespoon(s) worcestershire sauce
1 tablespoon(s) dry mustard
1-2 teaspoon(s) hot sauce of choice
seasoning salt to taste
ground pepper to taste

Steps:

  • Place potatoes in slow cooker. Sprinkle onion ontop.
  • Sprinkle one side of steaks with seasoning salt and pepper. Place seasoned side down on top of vegetables.
  • In a mixing bowl, mix together soup mix, canned soup, broth, worcestershire sauce, dry mustard and hot sauce. Pour over top of everything as evenly as possible to cover meat.
