2 bay leaves
8 cups beef broth

Steps:

  • Heat oil and butter in a large Dutch oven over medium-high. Add onion and celery; cook until translucent, 5 minutes. Add garlic, caraway seeds, salt, and pepper; cook until fragrant, 1 minute. Add bay leaves and broth; bring to a boil over high. Reduce to medium-low.
  • Stir in cooked cabbage, potatoes, carrots, and beef; cook until hot, 15 minutes. Remove bay leaves; discard. Stir in dill and parsley. Serve with vinegar on the side.

1 ½ cups chopped onion
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
10 cups beef stock
¾ cup barley
1 bay leaf
3 sprigs fresh thyme, chopped

2 cups cubed potatoes
2 cups diced cooked beef
1 teaspoon browning sauce
1 ½ cups chopped cabbage
salt and pepper to taste

Steps:

  • In a large pot over medium heat, combine the oil, onions, celery, carrots, and garlic. Saute for 5 minutes, or until tender. Add the beef stock, barley, bay leaf and thyme and simmer until barley is softened but not mushy. Add the wine, potatoes and beef.
  • Add the browning and seasoning sauce now if you want your soup to have more of a brown color. Simmer another 15 minutes and add the cabbage. Allow to simmer another 15 minutes, or until all vegetables are tender. Salt and pepper to taste.

This soup is lovingly simmered on the stove or in the crock pot to produce the richest Beef Barley Soup recipe I've ever tasted. Shredded carrots and potatoes give it a fabulous, thick texture.

2 pounds stew meat (nicely marbled beef chunks)
salt and pepper
2 tablespoons oil
10 cups water
3 tablespoons beef base (mounded tablespoons good quality*)
2 cups celery (chopped)
2 onions (chopped)
5 cloves garlic (minced)
1 large potato (peeled and shredded, about 2 cups)
3-4 large carrots (peeled and shredded, about 2 cups)
1 cup pearl barley (*** rinsed)

Steps:

  • Generously salt and pepper the beef. In a large stockpot, heat the oil over medium-high heat.
  • When it is very hot, add about 1/3 of the meat. Brown for about 1-2 minutes, then turn to brown the other side. Remove to a plate when it is browned on all sides.
  • Repeat with remaining meat in 2 more batches. (If you add it all at once it will steam the meat instead of browning it--not what you want.)
  • When all the meat is browned, add all the meat back to the pot with 10 cups of water. Add 3 healthy tablespoons beef stock concentrate.
  • Add the chopped celery, onions, and garlic. Bring to a boil, then turn the heat to medium-low. Simmer for about 2 hours with the lid on.
  • When the meat is tender and you can break it apart easily with a wooden spoon, add the shredded potato and carrots. Bring to a boil, then continue to simmer on low for another 30-45 minutes, or until the carrots are tender.
  • Add 1 cup of barley. Bring to a boil, then reduce to low. Cook for another half hour, or until barley is tender and the soup tastes...like home.

3 tablespoons unsalted butter
Heaping 1/4 teaspoon ground allspice
1 pound plum tomatoes, halved
3 cups low-sodium beef broth
4 cups chopped green cabbage (about 1/4 medium head)
1/2 pound Yukon gold potatoes, chopped
3/4 cup quick-cooking barley
1/4 pound corned beef, cut into thin strips (use leftovers or deli meat)

Steps:

  • Pulse the onion, celery and carrots in a food processor until they are pea-size pieces.

2 cups chopped carrots
1 stalk celery, diced
1/2 green pepper, diced

2/3 cup barley
1 tablespoon dried parsley flakes

  • In skillet brown beef.

1 can(s) 14 oz. corned beef hash: my fav' is first cut or mary's kitchen.
1 c cabbage, shredded. i like the three kinds for color
1/2 c corn either canned or frozen
1 Tbsp garlic powder
1 Tbsp oregano, dried
1 Tbsp butter
1 dash(es) salt and pepper
1 1/2 can(s) water

Steps:

  • 1. In a 3 qt. pot, put corned beef hash and cabbage. Break it up and add 1.5 cans of water.
  • 2. Add the other seasonings and boil covered for about 15 minutes.
  • 3. Reduce heat and simmer for about 1-1.5 hours. Once the cabbage is translucent and tender, you can turn off the heat and let cool for 10 minutes uncovered.
  • 4. With plastic wrap, make a seal on the surface of the soup and up the sides making sure nothing can get out. Chill for a couple of hours. This will allow you to lift the wrap and all the fat will come up with it. Serve with some shredded cheese and a dollop of sour cream and some bread of your choice.

1 tbsp sunflour oil
1 medium onion (peeled and diced)
340 g (12 oz) tin of corned beef (roughly chopped)
1 1/3 litres (5 1/2 cups) beef stock ((Hot water plus 3 stock cubes. Use gluten free cubes if required.))
4 medium carrots (peeled and chopped into bite-size chunks)
2 medium potatoes (peeled and chopped into bite-size chunks)
1 small head cauliflower (chopped into small florets)
1 tsp cider vinegar (or use the vinegar from a jar of beetroot or pickled cabbage as I often do)
¼ tsp salt
¼ tsp black pepper
1 tbsp cornflour ((cornstarch))
3 tbsp cold water
Freshly chopped parsley - to serve

Steps:

  • Heat the oil in a large saucepan. Add the onion and cook on a medium heat for 3-4 minutes, stirring occasionally until the onions softens.
  • Add the chopped corned beef and stir into the onions (no need to cook it through).
  • Pour in the beef stock, stir and bring to the boil.
  • Add in the carrots and potatoes and simmer for 10 minutes. Stir a few times to break up the corned beef.
  • Stir in the cauliflower, cider vinegar, salt and pepper, then simmer for a further 10 minutes, stirring a couple of times during cooking.
  • Mix the cornflour with the cold water in a small bowl to make a slurry. Stir a little of the slurry at a time into the soup, until the soup thickens to your liking.
  • Taste the soup and season further if required, then divide between four bowls. Top with parsley before serving for a dash of colour.

2 pounds (1kg) boneless beef chuck roast, cut into 1 1/2-inch steaks, or 3 pounds (1.3kg) bone-in beef short ribs, ribs removed and reserved (see note)
Kosher salt and freshly ground black pepper
1 tablespoon (15ml) canola oil
3 large carrots (10 ounces; 280g), diced
1 large yellow onion (12 ounces; 340g), diced
2 ribs celery (6 ounces; 170g), diced
4 medium cloves garlic, roughly chopped
3 quarts (3L) homemade or store-bought chicken stock (see note)
Sachet of 2 sprigs fresh thyme, 1 bay leaf, and about 5 whole black peppercorns
1 cup pearled barley (7 ounces; 200g)
1/2 teaspoon (3ml) Asian fish sauce (optional)
Minced fresh parsley, for garnish

Steps:

  • Season beef with salt and pepper. In a large pot or Dutch oven, heat oil over high heat until lightly smoking. Working in batches if necessary, add beef and cook, turning occasionally, until well browned on all sides, about 5 minutes per side. Transfer to a large platter.

  • Add the leeks, carrots, onion, celery, and garlic to the fat in the pot and cook over medium heat, stirring occasionally, for 10 minutes, until the vegetables start to brown. 1/4 teaspoon freshly ground black pepper
2 cups diced cooked corned beef (about 10 to 12 ounces)
1 (14 1/2-ounce) can diced tomatoes (undrained)
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Peel the onion and chop it coarsely. Cut the celery into 1/4-inch slices and then peel and mince the garlic . Peel the carrots and slice them into matchsticks or dice them into 1/4-inch pieces.
  • Heat the butter in a large stockpot or Dutch oven over medium-low heat.
  • Add the onion and celery to the pot and saute until tender, stirring frequently.
  • Add the minced garlic and continue cooking for 1 minute. Add the carrots, chicken stock, chopped cabbage, and barley. Add the bay leaf , parsley, thyme, and pepper; bring to a boil.
  • Reduce the heat to low to maintain a simmer. Cover the pan and simmer for 45 minutes.
  • Add the corned beef and tomatoes; increase heat and bring it back to a boil. Reduce heat to low and simmer, uncovered, for 15 minutes.
  • Taste and add salt, as needed.
  • Serve and enjoy!
