- In a small bowl, combine the red wine vinegar, Dijon, olive oil, mint and salt and pepper to taste. Blend well. In a large bowl combine the remaining ingredients. Pour the dressing over, season with salt and pepper, toss and serve.

- In a small saucepan, bring water to a boil. Add lentils, reduce to a simmer, and cover; cook until lentils are tender, about 30 minutes. Drain and rinse under cool water. Meanwhile, in a large bowl, whisk together red-wine vinegar, lemon juice, and honey. Whisk in olive oil. Stir in lentils, walnuts, grapes, celery, and thyme. Add feta. Season to taste with salt and pepper.

This is a great salad to serve with a dinner for friends or at home. If I am making it for just me & my husband then I cut the recipe in half because this isn't a salad you want to have every night. Left over dressing goes well on wraps.

- Place red wine vinegar, lemon juice, sugar, salt, and garlic cloves in a blender and pulse on high speed.
- Add the shallots and slowly incorporate the extra-virgin olive oil while blender is on high speed.
- Finish seasoning with black pepper.
- Allow the dressing to sit for 24 hours, refrigerated, before using.
- Place spinach, grapes, feta, and walnuts in salad bowl.
- Cover with dressing and toss.

- Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2- to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.
BAKED FETA WITH SUMAC & GRAPES

- Put the red onion in a bowl and add the vinegar, sugar and a pinch of salt. Massage everything together with your fingers for 1 min - this will slightly pickle the onions. Heat oven to 200C/180C fan/gas 6.
- Scrunch up a sheet of baking parchment and use to line a gratin dish. Add the grapes, drizzle over 1 tbsp olive oil, 1 tsp sumac, most of the dill and some seasoning, then toss everything to coat. Nestle the blocks of feta in among the grapes, then scatter over the onions and any of the pickling vinegar, the remaining oil and sumac. You can now leave in the fridge for up to 24 hrs, or bake straight away.
- Bake for 30-35 mins until the feta is browning and the grapes look juicy. Scatter over the remaining dill, then serve in the middle of the table with bread for scooping up the cheese, grapes and juices.

ROMAINE, FETA AND GRAPE SALAD
I discovered this salad looking for a different use for romaine lettuce. I used green seedless grapes but I think red or black would be prettier. I love the sweet pop of the grapes with the saltiness of the feta. The dressing i s lovely too. From Food Network and Daisuke Utagawa
