This recipe came from a great Washington friend years ago. We enjoyed it with them many, many times as did others. I think you'll find it wonderful too.

1 cup corn flake crumbs
4 tablespoons melted butter
1/2 teaspoon dill weed
1 (7 3/4 ounce) can salmon
1 cup cream-style cottage cheese
3 eggs, separated
1/2 cup half-and-half cream
3 tablespoons flour
1/4 teaspoon salt
1 dash pepper
1 tablespoon chopped chives
1 tablespoon lemon juice

Steps:

  • Crust: Combine top three ingredients and press into a buttered 9 inch pie plate.
  • Filling: Empty salmon with liquid in mixing bowl.
  • Beat in cottage cheese and egg yolks; cream together.
  • Stir in flour, salt, pepper, chives and lemon juice.
  • Beat egg whites until stiff (not dry); fold into salmon mixture.
  • Turn into prepared crumb crust.
  • Bake at 350F for~40 minutes.
  • Serve hot.

I have never served it to someone who didn't love it and beg for the family recipe after. We always make two and freeze one for later! It is excellent paired with a side of grilled asparagus.

1 (8 ounce) package Cheddar cheese, cubed
¼ onion, diced
4 eggs
1 (12 fluid ounce) can evaporated milk
1 pinch salt
1 pinch ground black pepper
1 pinch garlic powder
1 pinch dried parsley
1 pinch dried sage
1 (14.75 ounce) can salmon, drained, flaked and bones removed
1 (9 inch) frozen pie crust
½ cup shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Place 8 ounces of cubed Cheddar cheese, onion, eggs, and evaporated milk into a blender. Season with salt, pepper, garlic powder, parsley, and sage, then blend until smooth. Spread salmon over the pie crust. Sprinkle 1/4 cup of shredded Cheddar cheese then pour the egg mixture on top. Top with the remaining 1/4 cup of shredded Cheddar cheese.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

1 9-inch unbaked pie crust, purchased or homemade
1 (14.75-ounce) can salmon, or 2 6-ounce cans
1 tablespoon lemon juice
2 tablespoons butter
1/2 cup minced onion
1 tablespoons fresh chopped parsley
4 large eggs
1 cup milk
1 teaspoon seasoned salt
Dash pepper (white or black)

Steps:

  • Gather the ingredients and heat the oven to 450 F.
  • Bake the pie crust in the preheated oven for 5 minutes. Remove the crust from the oven and place on a rack to cool. Reduce the oven temperature to 350 F.
  • Drain salmon, reserving 1/4 cup of the liquid. Pick the salmon over and remove bones and skin. Flake the salmon and set aside.
  • When the pastry has cooled, add the flaked salmon and then sprinkle with lemon juice.
  • In a skillet over medium heat, melt the butter. Cook the onion for about 4 minutes, or until translucent. Spoon the onions over the salmon and sprinkle with parsley.
  • In a medium bowl, whisk the eggs with the reserved 1/4 cup of salmon liquid, the milk, seasoned salt, and pepper. Pour over salmon.
  • Place the quiche on a baking sheet and bake it at 350 F for 40 to 45 minutes, or until firm. Remove the salmon quiche to a rack and let it rest for 5 minutes before slicing and serving.
  • Serve this salmon quiche hot with a tossed salad if desired.

350g plain flour , plus extra for dusting
1 tsp salt
140g cold butter , cut into cubes
3-5 tbsp very cold water
50g watercress , roughly chopped
200g smoked salmon , shredded
1 tbsp chopped dill
5 eggs , beaten
100ml milk
250ml double cream

Steps:

  • First, make the pastry. Sift the flour and salt together into a food processor or a large bowl if you want to make it by hand. Pulse or rub in the butter until it resembles breadcrumbs. Add enough water to make the dough come together, then wrap well and chill in the fridge for 10-15 mins.
  • Roll out the pastry on a lightly floured surface until just thinner than a £1 coin then line a 26cm tart tin - don't trim off the excess pastry just yet though, as it will shrink a little when it cooks.
  • Heat oven to 200C/180C fan/gas 6. Remove the pastry case from the fridge and line with baking parchment. Fill with baking beans, then bake blind for 20 mins. Remove beans and paper then cook for 5 mins more until pale golden. Turn down the oven to 160C/140C fan/ gas 3. Trim the edges of the pastry case with a sharp serrated knife.
  • Arrange the watercress and salmon in the bottom of the pastry case. Whisk the dill, eggs, milk and cream and season well. Pour over the salmon and watercress then bake for 30-40 mins, or until set with a slight wobble in the centre. Serve warm, or at room temperature.

5 eggs
1/3 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/3 cup milk
1/2 tsp. each dill weed, dried thyme leaves and dry mustard
1 cup frozen peas, thawed

Steps:

  • Heat oven to 375ºF.
  • Prepare crust in 9-inch pie plate as directed on package for one-crust filled pie. Cook onions and garlic in skillet sprayed with cooking spray on medium heat 5 min. or until onions are tender, stirring occasionally; spoon into crust. Top with salmon and cheese.

8 ounces smoked salmon, or more to taste, broken into small pieces
5 ounces cream cheese
1 teaspoon dill
8 eggs, or more to taste
¾ cup milk
salt and ground black pepper to taste
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust pastry into a pie dish.

4 eggs

1 cup shredded Gruyère or triple Cheddar cheese
1 cup diced fresh salmon
1/3 cup finely chopped onion
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
1 tablespoon extra-virgin olive oil
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1/2 teaspoon Italian seasoning

Steps:

  • Heat oven to 425°F. Spray 9 1/2-inch tart pan with removable bottom with cooking spray.
  • In large bowl, stir Bisquick mix and seasoned salt. In small bowl, beat 3 tablespoons olive oil and 3 tablespoons half-and-half with whisk. Stir in the seasoned Bisquick mix until mixture forms a ball. Press mixture firmly against bottom and all the way up side of pan. Set aside.

Cook, stirring frequently, until vegetables are crisp-tender. Add remaining sauce ingredients. Heat to boiling; reduce heat to medium. Simmer uncovered 7 to 9 minutes, stirring frequently. Reduce heat to medium-low; simmer until tomatoes are soft and sauce is thickened.
  • Let baked quiche stand 10 minutes; remove from pan. Serve with sauce.

1 cup shredded reduced-fat Swiss cheese

3 ounces smoked salmon fillet, flaked (about 1/2 cup)

1 cup 2% milk
