MILLIONAIRE'S MEATLOAF
This is a meatloaf piled high with spicy shrimp. The chef David Burke created the dish for the Stadium Grill.

Steps:
- For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.
- In a large mixing bowl, combine ground beef, eggs and milk. Mix well by hand, and add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onions and garlic. Mix again, and add the parsley, salt, pepper and thyme. Mix well until thoroughly combined.
- Spread the croutons across a shallow 8-inch-square baking dish. Top with the meatloaf mix, patting the surface so it is level. Bake until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned, about 1 hour. Toward the end of baking, prepare the chili shrimp.
- For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
- To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.

MILE-HIGH MEAT LOAF

Steps:
- Preheat oven 350 degrees F.
- Line 3 (9-by 5-inch) loaf pans with wax paper and set aside.
- Make bread crumbs by placing the bread in the work bowl of a food processor and processing until finely ground. Transfer crumbs to a large bowl. Add all ingredients, except ketchup, to the bowl; mix until just combined. Divide and shape the meat mixture into loaves in the prepared pans. Spread a layer of ketchup over the top to cover the meat loaf. Bake for 1 hour and 30 minutes, or until completely cooked through. Remove from heat and let meatloaf cool for 15 minutes before slicing. Serve warm.
BILLIONAIRES MEATLOAF
Steps:
- Preheat the oven to 375 Melt the butter in a large, heavy skillet over medium heat. When the foaming has subsided, add the onion and shallots and sauté until just soft, about 2 minutes Add the mushrooms, 1/2 t salt and the brandy Continue to sauté until the mushrooms are just soft another 2 minutes Remove the skillet from the heat Beat eggs in a large mixing bowl Add the beef pork lamb and all remaining ingredients except the bacon Add the mushroom mixture to the bowl, along with the cooking liquid from the skillet Knead the meat mixture to combine, but do not mix too much or the meatloaf will be tough Form the mixture into a loaf like shape on a heavy baking sheet lined with parchment, or transfer it to a buttered loaf pan and bang the bottom of the pan against the counter to deflate any air bubbles Place the par cooked bacon in a cross hatch fashion on the top of the loaf and bake until the internal temp has reached but not exceeded 155, about 1 1/2 hours Let meatloaf to rest for at least 15 minutes before slicing.

MILLIONAIRE DATE LOAF
This is as good as the old-fashioned date loaf, but much easier and almost fail-proof.

- Grease an 8x8 inch dish.
- In a heavy saucepan over medium-high heat combine sugar and evaporated milk; boil 5 minutes. Stir in dates and cook 4 minutes more, stirring constantly. Remove from heat and stir in marshmallow creme, pecans and vanilla extract. Beat until cool. Pour into prepared pan.
- Cool and cut into squares.

MEATLOAF FROM THE WALDORF-ASTORIA
I've been using this recipe from chef John Dougherty at the Waldorf for 18 years. It's Dh's favorite, especially cold in a sandwich with lots of Dijon mustard. This recipe is easily doubled and can serve 40 at a buffet.

- Trim crusts from bread and cut slices into 1/2" dice, put in large bowl and add milk and tomato puree, let soften while preparing vegetables.
- In skillet heat oil, saute onions until softened, add bell peppers and garlic, increase heat and saute until peppers are softened but still brightly colored and onions are golden.
- Mix bread in bowl, add vegetables, meats, and remaining ingredients except bacon.
- The meatloaf can be made a day ahead and refrigerated at this point.
- Form loaf on rimmed baking sheet, arrange bacon crosswise over meatloaf and tuck edges underneath, bake at 375° for 70 minutes or until internal temp is 180°F, remove from oven and pour off grease, let stand 10+ minutes before slicing.

GOURMET MEATLOAF
Gourmet Meatloaf is made with steak sauce instead of ketchup, cilantro, green peppers and onions on the outside, and ham, cheese and broccoli rolled up inside for a delicious combination.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, combine the ground beef, bread crumbs, egg and steak sauce. Mix thoroughly. Blend in soup mix, green pepper, onion, cilantro and garlic.
- On a large piece of aluminum foil, pat the beef mixture into a thin, flat rectangle. Layer about 1/2 the ham on top of the beef from end to end. Layer ham with the Cheddar cheese. Layer cheese with remaining ham, then the broccoli.
- Using the foil, roll the meatloaf while pinching the ends. Keep aluminum foil around the meat loaf and place on a medium baking sheet.
- Bake in the preheated oven for 1 hour.
