2 bananas
⅓ cup honey
1 teaspoon almond extract
1 ¼ cups rolled oats
1 teaspoon cinnamon
1 pinch salt
yogurt
blueberry
raspberry

Steps:

  • Mash two bananas in a small bowl.
  • Add the honey and almond extract. Mix well and set aside.
  • Mix the rolled oats, cinnamon, and a pinch of salt in a large bowl, then add the banana mixture to it. Mix well.
  • Transfer to muffin tin tray, pressing down on the middle and sides to form the cup. Chill for 1-2 hours.
  • Bake for 10-12 minutes at 350°F (180°C).
  • Leave to cool for 10-20 minutes.
  • Top with yogurt, blueberries, and raspberries.
  • Enjoy!

½ cup almond, sliced
½ teaspoon cinnamon
¼ teaspoon salt
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
¼ cup maple syrup
2 tablespoons honey
greek yogurt, to serve
assorted berry, to serve

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, almonds, cinnamon, salt, coconut oil, vanilla extract, maple syrup, and honey until well combined.
  • Transfer the mixture onto a the prepared baking sheet and spread into an even layer.
  • Bake for 20 minutes.
  • Carefully remove from the oven and allow to cool for 10 minutes.
  • Break up the layer into chunks with your hands.
  • Store in an airtight container for up to 1 month.
  • Serve with Greek yogurt and fresh berries, if desired.

1 cup granola
1 tablespoon unsalted butter, room temperature
1 tablespoon honey
2 tablespoons light brown sugar
yogurt, for serving

Steps:

  • Pour the granola into a food processor. Pulse until the granola is broken into small pieces. Set aside.
  • In a small saucepan, mix together the butter, honey, and brown sugar over medium-low heat. Stir until the butter is melted, the sugar is dissolved, and the mixture begins to bubble, about 5 minutes.
  • Remove the pan from the heat and add ½ cup (60g) of the crushed granola. If mixture is still too wet to shape, add more granola.
  • Wrap 4 spoons tightly in aluminum foil. Lightly grease with nonstick cooking spray and set on a parchment-lined baking sheet.
  • When the granola mixture is cool enough to handle, mold onto the front of each foil-covered spoon.
  • Freeze for 30 minutes.
  • Preheat the oven to 350˚F (180˚C).
  • Place another piece of aluminum foil under the spoons. Fold it up around the edges of each spoon so the granola mold is nestled inside.
  • Bake for 10 minutes.
  • Cool the spoons for 10 minutes, then remove the granola spoons from the molds.
  • Chill in the refrigerator for 20 minutes.
  • Serve with yogurt, if desired.
  • Enjoy!

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

Steps:

  • In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

3 cups oatmeal (Either Quick Oats or Old Fashioned, they both work well)
1/3 cup coconut (may be ommitted)
1/2 cup vegetable oil
3/4 cup brown sugar
3 tablespoons honey
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup raisins (may be ommitted)

Steps:

  • Pour oatmeal into a glass microwaveable dish and cook for two minutes; stirring once. (YES microwave the oats! I'm not sure why, but this is how I learned to do it in my 7th grade home ec class and it has worked for me every time).
  • Combine all other ingredients into a bowl.
  • Add in oatmeal.
  • Stir until well blended.
  • To finish, use either the microwave or oven. Both methods are listed below --
  • Microwave method: Pour mixture into a glass dish and microwave on high for 4 minutes or until golden brown.
  • Stir every minute.
  • Cool on wax paper.
  • Enjoy!
  • OR --
  • Oven method: Pour mixture into a large cake pan and bake at 350 degrees for 20 minutes.
  • Stir every 5 minutes.
  • Add 1/2 cup of raisins.
  • Cool on wax paper.
  • Enjoy!
