Mornings will be amazingly fast and convenient with this epic megamix of brilliant ingredients, giving us loads of nutritional benefits from the nuts, seeds, oats and fruit. Me and my wife get really frustrated about how so many - in fact most - breakfast cereals are full of added sugar, and nutritionally aren't the best start to the day. So, with my nutrition team, I developed this delicious recipe for us all to enjoy - make a big batch and it'll last a couple of weeks (or more!).

Number Of Ingredients 7

1 kg porridge oats
250 g unsalted mixed nuts, such as walnuts, Brazils, hazelnuts, pecans, pistachios, cashews
100 g mixed seeds, such as chia, poppy, sunflower, sesame, linseed, pumpkin
250 g mixed dried fruit, such as blueberries, cranberries, sour cherries, mango, apricots, figs, sultanas
3 tablespoons quality cocoa powder
1 tablespoon freshly ground coffee
1 large orange

Steps:

  • Preheat the oven to 180°C/350°F/gas 4.
  • Place the oats, nuts and seeds in your largest roasting tray. Toss together and roast for 15 minutes, stirring halfway.
  • Stir the dried fruit, cocoa and coffee into the mix, finely grate over the orange zest, then, in batches, simply blitz to a rough powder in a food processor, tipping it into a large airtight jar as you go for safekeeping.
  • To serve, you can have loads of fun - the simplest way is 50g of granola dust per person, either with cold cow's, goat's, soya, nut or oat milk or 2 tablespoons of natural yoghurt, and a handful of fresh fruit (80g is one of our 5-a-day). You can make porridge using 50g of granola dust to 200ml of milk, then top with fresh fruit, and this ratio also works for a smoothie - I like to chuck 1 ripe banana and 1 handful of frozen raspberries into the mix too. It's even a great base for pancakes - simply beat 2 heaped tablespoons of granola dust with 1 heaped tablespoon of wholemeal self-raising flour, 1 mashed banana and 1 large free-range egg, then cook as normal. And in winter, try a hot drink - heat 25g of granola dust with 200ml of your favourite milk to your desired consistency.

Number Of Ingredients 9

2 cups quick-cooking oatmeal (not instant)
1 cup mixed nuts (hazelnuts, almonds, walnuts, brazil nuts)
1/4 cup mixed seeds (sunflower, poppy, pumpkin, sesame)
3/4 cup unsweetened dried shredded coconut
1 teaspoon ground cinnamon
1 1/2 cups dried fruit (raisins, cranberries, apricots)
5 tablespoons maple syrup (or honey)
5 tablespoons olive oil
1 teaspoon vanilla (optional, My addition to the recipe.)

Steps:

  • Preheat the oven to 350. Put your dry granola ingredients including coconut and cinnamon, except for the dried fruit on a sheet pan. Stir well and smooth out. Mix maple syrup, olive oil and vanilla in a small bowl. Drizzle over granola and stir.
  • Place in the preheated oven for 25 to 30 minutes. Stir every 5 minutes take the granola out, stir it, and then smooth it down with a wooden spoon and return to the oven. Be very careful not to burn it.
  • While it is roasting chop up any large dried fruit. When the granola is nice and golden, remove it from the oven and add the dried fruit.
  • Once it is cooled, store in sealed container. It will last up to 2 weeks.

SUPER TOASTED GRANOLA WITH CHEWY FRUIT

Don't be afraid to toast the oats until really golden as this gives the granola a more caramelised flavour.

8 tablespoons honey
75 g skin-on almonds
300 g rolled oats
40 g sunflower seeds
40 g pumpkin seeds
30 g desiccated coconut
50 g dates
50 g dried sour cherries
50 g dried apricots
50 g dried peaches

Steps:

  • Preheat the oven to 150ºC/300ºF/gas 2 and warm the honey through in a saucepan.
  • Chop up the almonds then spread over a large baking tray with the oats, seeds and coconut.
  • Pour over the warm honey and mix with a spoon, then pop in the oven for 20 minutes, stirring every so often.
  • Meanwhile, destone the dates and chop up with the rest of the fruit.
  • After 20 minutes, add all the fruit, stir once (try not to touch again until it is cool) and put it back in the oven for another 10 minutes. It should be clumping together nicely.
  • Remove from the oven and allow to cool before breaking it up and storing in jars or airtight containers for up to 1 month. Serve with yoghurt and fresh or poached seasonal fruit.

2 tbsp vegetable oil
125ml maple syrup
2 tbsp honey
1 tsp vanilla extract
300g rolled oats
50g sunflower seed
4 tbsp sesame seeds
50g pumpkin seeds
100g flaked almond
100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

¼ cup packed brown sugar
3 tablespoons maple syrup
2 tablespoons vegetable oil
½ teaspoon salt
1 ½ cups rolled oats
½ cup chopped almonds
½ cup raw pumpkin seeds
⅓ cup shredded coconut
½ cup dried currants

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
  • Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well, making sure all ingredients are coated evenly.
  • Pour onto prepared baking sheet and distribute in an even layer.
  • Bake in the preheated oven for 1 hour, stirring every 10 to 15 minutes lightly with the tines of a fork so mixture toasts evenly and granola is golden brown.
  • Pour into a bowl and, while mixture is still hot, mix in currants. Cool. Store in an airtight container until ready to use.

200g rolled oats
150g bag mixed nuts
150g mixed seeds
1 orange , zested
2 tsp mixed spice
2 tsp cinnamon
2 tbsp cold pressed rapeseed oil
1½ tbsp maple syrup

Steps:

  • Heat oven to 160C/140C fan/gas 4. Mix all the ingredients in a bowl with a pinch of salt, then spread out on a baking tray.
  • Roast for 30-35 mins until golden, pulling the tray out of the oven twice while cooking to give everything a good stir - this will help the granola toast evenly. Leave to cool. Will keep in an airtight container for one month.
