2 large eggs
2/3 cup vegetable oil
2 teaspoons vanilla
3/4 cup white sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
  • Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.
  • Flatten with bottom of glass moistened with water and dipped in sugar.
  • Bake at 400°F for 6-10 minutes or just until lightly golden.

3 cups sifted all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 cup white sugar
1 cup butter
1 egg, lightly beaten
3 tablespoons cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C) .
  • Over a large bowl, sift together all-purpose flour, baking powder, salt, sugar. Cut in butter and blend with a pastry blender until mixture resembles cornmeal. Stir in lightly beaten egg, cream, and vanilla. Blend well. Dough may be chilled, if desired.
  • On a floured surface, roll out dough to 1/8 inch thickness. Sprinkle with sugar; cut into desired shapes. Transfer to ungreased baking sheets.
  • Bake for 6 to 8 minutes, or until delicately brown.

Sugar - regular or colored sugar crystals

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together margarine, sugar, oil, eggs, powdered sugar.
  • Sift together flour, cream of tartar, baking soda, and salt.
  • Add sifted, dry ingredients to the creamed mixture and mix well.
  • Drop by teaspoonful onto a cookie sheet.
  • Flatten each cookie with a glass dipped in sugar.
  • Bake until slightly browned, about 9 to 11 minutes depending on your oven.
  • Let cool on baking sheet for 1 minute before transferring to cooling rack.

It's true when you're running a contest for cookie recipes, when it takes thousands of readers, dozens of cooking school students and five hungry judges to choose the best. And, it turns out, that's even true if you're one of the winners.This year's Holiday Cookie Bake-Off attracted nearly 200 recipe entries. More than 7,000 votes were cast by readers on our Facebook page. We took the top 50 vote-getters to the folks at Le Cordon Bleu College of Culinary Arts in Pasadena, and students and faculty there baked them all off.L.A. Times Food Editor Russ Parsons, Deputy Food Editor Betty Hallock and Times Test Kitchen manager Noelle Carter spent one Saturday morning tasting every single one along with Lachlan Sands, dean of Le Cordon Bleu, and one of his students, Katherine Berg.Last Wednesday, the Los Angeles Times Test Kitchen was jammed with happy bakers and their helpers for the photo shoot for today's cover story. But none of them was happier than Nicole Cleghorn, who flew in for the event from Minot Air Force Base in North Dakota.Her husband is a staff sergeant stationed there, and she follows the Times Food section online. So when she learned that her white chocolate turtle cookies were chosen among our 10 favorites in this year's contest, she planned to email us a photograph.But then her friends came through. 4 1/2 cups sifted flour (18 ounces)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup margarine
1 cup sugar
1 cup powdered sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1 cup vegetable or canola oil

Steps:

  • In a large bowl, whisk together the flour with the baking soda, baking powder, salt and nutmeg.
  • In the bowl of a stand mixer using the paddle attachment, or in a large bowl using a hand mixer, cream together the margarine with the sugar and powdered sugar until well blended. Add the eggs, one at a time, until combined, then beat in the vanilla. Add the oil and flour mixture, one-fourth of each at a time, until combined to form a dough. Cover and refrigerate the dough until well-chilled, at least 2 hours.
  • Heat the oven to 350 degrees. Take a heaping tablespoon of dough and roll it into a ball. Place the ball on a cookie sheet and press down with the bottom of a glass dipped in sugar to flatten the cookie. Repeat with the remaining dough, spacing the cookies about 2 inches apart.
  • Bake the cookies until set and lightly colored on the edges, about 10 minutes. Cool on a wire rack.

1 1/2 cups powdered sugar
3 tablespoons butter, softened
1 tablespoon vanilla extract
various food coloring
colored sprinkles

Steps:

  • In a mixing bowl, cream together sugar and butter until fluffy.
  • Add eggs and vanilla; beat well.
  • Stir together dry ingredients; gradually add to creamed mixture until completely blended.
  • Cover and chill for at least 30 minutes.
  • On a lightly floured surface, roll dough to 1/4-inch thickness.
  • Cut with various shaped cookie cutters dipped in flour.
  • Transfer cookies to ungreased cookie sheet.
  • Bake at 350° for 10-12 minutes.
  • Cool on wire racks.
  • Frosting: Mix together sugar, butter, vanilla and milk until desired degree of spreading consistency; add milk if you want thinner frosting.
  • Add food coloring to obtain desired color.
  • Spread frosting over cookies and decorate with sprinkles.

2/3 c shortening
1 1/2 c sugar
2 eggs
3 c all purpose flour
1 1/4 tsp salt
2 tsp baking powder
2 Tbsp orange juice (instead of rhind)
icing, (optional) recipe follows
sugar topping or sprinkles (optional)
ICING
2 1/2 c powdered sugar
3 Tbsp milk
1 Tbsp butter, softened
1 Tbsp light corn syrup
1/2 tsp vanilla or almond extract
food color, if desired

Steps:

  • 1. Cream Shortening, sugar, and eggs together until light and foamy.
  • 2. Sift flour, salt, and baking powder together.
  • 3. Mix flour mixture with egg mixture; add orange juice. Mix until smooth. (If mixture is dry add a small amount of cold water to moisten)
  • 4. Chill then roll and cut with cookie cutters. Bake on a cookie sheet for 5-6 minutes at 350.
  • 5. FOR THE ICING
  • 6. Combine powdered sugar, milk, 1 tablespoon butter, corn syrup and 1/2 teaspoon vanilla in small mixer bowl; mix until powdered sugar is moistened.
  • 7. Beat at medium speed until smooth, adding additional milk if necessary, to reach desired glazing consistency. Tint with food color, if desired.

Cream together the butter, sugar, salt, nutmeg and egg yolk. Add the flour a little at a time until mixture is stiff. Place onto floured board and knead lightly until the dough begins to crack. Roll out 1/4 inch thickness and cut into desired shapes. Place on un-greased cookie sheet, decorate with colored sugar crystals and maraschino cherries.
