CHEESY VEGETABLE CASSEROLE
I am happy to share this 50-year-old Cheesy Vegetable Casserole recipe. It came from my mother-in-law, who taught me how to cook. It is one of my family's favorite dishes, yielding enough for a group or you can cut it in half to serve a few. -Irene Redick, Trenton, Ontario

Steps:
- Preheat oven to 375°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add the mushrooms, red pepper, salt and pepper; cook and stir until vegetables are tender, 5 minutes. Add garlic; cook 1 minute longer., In a greased 2-qt. baking dish, layer half of the corn, mushroom mixture, cheese and brown sugar; repeat layers. , Melt the remaining butter; toss with bread crumbs and parsley. Sprinkle over casserole. , Bake, uncovered, until golden brown, 25-30 minutes.

GRANNY'S CORN CASSEROLE
This was one of my Granny's all time favorites. It's nice to look at and yummy to eat and uses simple ingredients your likely to have on hand.

- Beat eggs in medium bowl.
- Add remaining ingredients and stir until combined.
- Pour into sprayed or buttered casserole.
- Bake at 350 degrees for 45 minutes or until golden brown.
- Note: If doubling this recipe use 5 large eggs.
GRANDMAS CORN CASSEROLE
I have inherited my grandma's recipe box.... I have been going through and reviewing them and decided to begin sharing them with you all... Some of these were passed to her from her mother, and some she had cut out of magazines or newspapers and placed in her box.... This one was one of hers wrote on a recipe card.... It is wonderful...

GRANNY'S SCALLOPED CORN
This was one of my Granny's favorites and was often requested when we were growing up. The ultimate in simplicity!

- Combine all ingredients.
- Pour into oven safe casserole.
- Bake at 350 degrees for 45 minutes.
BETTER THAN GRANNIE'S CREAMED CORN
Steps:
- In a saucepan over medium heat, sweat the onion in butter and salt until translucent.
- In a large mixing bowl, place a paper bowl in the middle of the bowl. Resting the cob on the bowl in a vertical position remove only the tops of the kernel with a knife, using long smooth downward strokes and rotating the cob as you go. After the cob has been stripped, use the dull backside of your knife to scrape any remaining pulp and milk off the cob.
- Add the corn and pulp mixture to the saucepan and cook over medium high until the juice from the corn has tightened. Add the rosemary. Sprinkle the corn with the sugar and turmeric. Stir constantly for about 2 minutes. Sprinkle the cornmeal onto the corn, using a whisk to combine well. Add the heavy cream and cook until the corn has softened, about 2 to 3 minutes. Remove the rosemary. Season with freshly ground black pepper.
GRANDMA MOORE'S CREAMED CORN
Steps:
- In a large skillet, (seasoned cast iron does well here) cook the bacon over medium-high heat until crisp. Turn off the heat and transfer the bacon to a paper towel lined plate. Reserve the drippings in the pan.
- On a cutting board, cut the stalk ends of the corn cobs to make a flat surface; stand them up and shave the corn from the cobs with a sharp chef's knife. Return the skillet to medium-low heat, and add the corn kernels. With the back of the knife, firmly scrape the cobs over a shallow plate to extract as much liquid (milk) as possible and add it to the skillet.
- Season corn lightly with salt and pepper and cook until broken down and creamy, about 30 to 45 minutes, stirring often; add water if the pan gets too dry.
- Serve warm or at room temperature.
GRANNYS DRIED BEEF CASSEROLE
This was one of many casserole dishes that Grandma would make for our family Sunday get-togethers. Those long ago Sundays were darn near mandatory!! How we hated them then and miss them SO much now.

- Preheat oven to 400 Degrees F. Grease a 9x13 glass baking dish.
- Beat eggs in a large mixing bowl. Add melted butter, sugar and milk. Mix well.
- Whisking constantly, sprinkle in the cornstarch and mix very well.
- Pour in the corn and creamed corn. Stir well then pour mixture into baking dish.
- Bake for 1 hour. Let it sit for 10 minutes when removing from the oven to firm up.

- Preheat oven to 350 degrees F (175 degrees C).
- Place ground beef and onions in a large, deep skillet. Cook over medium high heat until beef is evenly brown. Drain any excess fat.
- Add the soup, rice, tomatoes, garlic powder, thyme, oregano and sugar. Mix well and cook over medium heat for 10 minutes. Place in a 9x13 inch casserole dish.

- Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain and crumble, reserving about 2 tablespoons drippings in the pot.
- Mix potatoes and onion into the pot with the crumbled bacon and reserved drippings. Cook and stir 5 minutes. Pour in the water, and stir in corn. Season with salt and pepper. Bring to a boil, reduce heat to low, and cover pot. Simmer 20 minutes, stirring frequently, until potatoes are tender.
- Warm the half-and-half in a small saucepan until it bubbles. Remove from heat before it boils, and mix into the chowder just before serving.

- In a large bowl, stir together the flour and cornmeal. Add baking powder and salt, and mix together well. Stir in water to form a crumbly dough. Work dough with your hands until it holds together.
- On a floured surface, knead dough until smooth. Divide dough into 10 to 12 pieces. Roll each into the shape of a ball. Cover lightly with saran wrap and let rest for 10 to 15 minutes.
- Flatten each piece of dough by hand, then roll into a 8 to 9 inch round.
- Heat a large skillet over medium heat. Lightly grease the hot pan, and place one tortilla in the pan. Cook tortilla until light brown, turning to ensure equal browning. Repeat with remaining tortillas.
