Slightly modified version of a recipe in Everyday Food magazine. This cake is SO good, especially while it's still warm (or reheated). Great for breakfast. Or topped with whipped cream or vanilla ice cream. I choose Granny Smith apples for their tartness and because they hold their shape after baking. The apples come out completely soft after baking. I love the tartness of the apples mixed with the sweetness of the cake. Optional: Add 1/2 cup chopped walnuts if desired. Note: The original recipe called for 1/2c of butter, but I reduced that to 1/4 and added in 1/4 applesauce to lower the fat in the recipe. You won't even miss the extra butter at all.

1/4 cup unsalted butter (melted)
1/4 cup unsweetened applesauce
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
1 1/4 teaspoons baking soda

1 1/2 teaspoons ground ginger
1/4 teaspoon ground nutmeg
3 medium granny smith apples, peeled, cored, and cut into 1-inch chunks

Steps:

  • Preheat oven to 350. Butter a 9 x 13 inch baking pan, set aside.
  • In a large bowl, whisk together flour, sugars, baking soda, salt, cinnamon, ginger, and nutmeg.
  • Add the apples, butter, applesauce, and eggs; stir just till combined. Batter will be VERY chunky, mostly apples.
  • Spoon batter into pan, smooth with a spatula. Bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean. Cool in pan.

5 jumbo-sized eggs, separated
1 cup buttermilk
4 sticks butter, plus 1 tablespoon, for pan
3 cups cake flour, plus 2 tablespoons, for pan
1 Granny Smith apple, peeled, cored and diced into 1/8-inch pieces
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice
2 1/2 cups sugar, divided
1 teaspoon vanilla extract
1 teaspoon lemon extract
3 teaspoons baking powder
Special equipment: 10-inch Bundt cake pan

Steps:

  • Preheat oven to 325 degrees F. Let the eggs, milk and butter come to room temperature on the counter before beginning. (Butter goes on the counter last.)
  • Butter the Bundt pan with 1 tablespoon of butter, then add 2 tablespoons of flour and shake and tap to coat the interior of the pan; set aside. Put the diced apples in a bowl with the cinnamon and lemon juice. In a large bowl or stand mixer add the butter and 2 cups of sugar and beat until smooth. Add the egg yolks, 1 at a time, and blend to completely incorporate before adding the next. The mixture will become very light in color. Add the buttermilk and the extracts and mix to combine. Stir in 3 cups of flour along with the baking powder and stir until incorporated.
  • In a separate clean dry bowl, whisk egg whites until foamy, then add the remaining 1/2 cup of sugar and whisk until shiny and soft peaks form when removing the whisk from the whites. Gently fold this into the cake batter. Pour half of the batter into the prepared pan. Arrange the apples in the center of the ring all the way around, being sure they don't touch the outer or inner edge of the pan. Pour in the remaining batter and bake for 1 hour and 30 minutes. Remove the cake from the oven and cool completely. Put a large plate or cake plate on top of the pan, then holding both together, flip them so that the curved bottom of the Bundt pan is on the top and the plate is resting on a flat surface. Slowly remove the pan from the cake by lifting it straight up. Slice and serve.

Steps:

  • Cream together shortening and sugar.
  • Beat in eggs, one at a time, beat until light and fluffy.
  • Stir in 1 cup apple butter.
  • Sift together flour, baking powder, soda, salt, cinnamon, and nutmeg.
  • Add dry ingredients to creamed mixture alternately with sour milk.
  • Turn into 2 greased and floured 9-inch cake pans.

  • Spread bottom layer of cake with 1/4 cup apple butter.

1 cup plus 2 tbsp unsalted butter (softened)

2 tbsp cornstarch
2 tsp cream of tartar
1 tsp baking powder
1/2 tsp salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside.
  • Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick).
  • Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the centre comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

Steps:

  • NOTE: You may adjust spices according to spices in apple butter if the butter is particularly strong flavored or extra light flavored.

  • Grease and flour a 13 x 9 inch baking pan or 3 coffee cans or 2 loaf pans.
  • Into large bowl, measure all ingredients except raisins and nuts.

1 cup sweet butter
3 teaspoons baking powder
1 teaspoon salt
2 cups super fine sugar
4 large eggs
1 cup milk
1 1/2 teaspoons vanilla extract
1 teaspoon lemon extract
1/2 teaspoon almond extract
2 cups dark brown sugar
1 stick butter
3 to 4 cups confectioners sugar, sifted
8 to 10 tablespoons heavy cream

Steps:

  • Preheat gas oven 350 degrees, electric 325 degrees. All ingredients should be room temperature. Grease and flour 2 (9-inch) round cake pans. Sift flour, add baking powder and salt. Set aside. On medium speed, cream butter and sugar, until light and fluffy. (Or 150 strokes by hand.) On medium speed, (or another 150 strokes) add 1 egg at a time. After 2 eggs add 2 tablespoons flour. Add flour mix alternating with the milk, ending with the flour. Add extracts. Place cake pan in middle of oven. Pans should not touch. Baking time approximately 35 minutes.
  • In a hot cast-iron skillet or heavy saucepan melt butter and brown sugar together on high heat, stirring until sugar is thoroughly melted. Transfer into mixing bowl and, using mixer on low speed, starting and ending with confectioners' sugar; alternately add heavy cream with vanilla, beating until frosting becomes spreadable. Spread on cooled cake.;

2 c vegetable oil
1 orange (squeeze juice save peel for zest)
3 c all-purpose flour
1 tsp baking soda
1/4 tsp salt

2 tsp pure vanilla extract

3 large Granny Smith apples, peeled and cored and cubed in small pieces
1 c chopped pecans
GLAZE
1 c powdered sugar
1 tsp orange zest
1 dash(es) orange extract (optional)
1 Tbsp milk (depending on how thick you want your glaze)

Steps:

  • 1. Prepare Bundt pan (butter and flour or Baker's Joy) and preheat oven to 325 degrees.
  • 2. Beat together sugar, eggs, oil, vanilla, and orange juice. Mix until smooth.
  • 3. Then slowly add the flour, salt, baking soda, cinnamon, and nutmeg mixing as you go.
  • 4. Fold in apples and pecans. The batter will be very thick and dense.
  • 5. Spoon batter into prepared pan evenly.
  • 6. Bake in preheated oven for 1 hour and 15 minutes or until a tester comes clean. Allow cake to sit in the pan for 10-15 minutes and then turn onto a cake plate. Allow to cool completely.
  • 7. Mix glaze to desired consistency.

2 pounds (1 kg) McIntosh apples, peeled and cored (6 large apples)
2 pounds (1 kg) Granny Smith apples, peeled and cored (4 large apples)
1 cup (250 mL) apple cider
2 cups (500 mL) granulated sugar
2 tablespoons (25 mL) lemon juice

Steps:

  • 1. Cut McIntosh apples into 1-inch (2.5 cm) pieces. Cut Granny Smith apples into smaller dice.
  • 2. Combine apples and cider in a very large stainless steel or enamel saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and boil gently for 20 minutes or until mixture is reduced by half.
  • 3. Stir in sugar and lemon juice. Return to a boil, reduce heat, and boil gently for about 25 minutes or until mixture is very thick. There should still be some tender apple chunks remaining. Remove from heat.
  • 4. Ladle into sterilized jars and process as directed for Shorter Time Processing Procedure .
  • Variation: Spiced Apple Butter
  • Add 2 tsp (10 mL) ground cinnamon and 1/2 tsp (2 mL) each ground cloves and allspice with the sugar.

Like all "Cake-Mix" cakes, it is a breeze to prepare, but it looks and tastes like you labored in the kitchen for hours! It is lovely topped with either vanilla or cinnamon icing and goes great with a fresh cup of coffee. It also keeps very well.

1 box yellow cake mix
1 package instant vanilla pudding
1/2 cup orange juice
1 1/2 cups water
1/3 cup oil

  • Preheat oven to 350 and grease a Bundt pan with shortening.
  • Peel, core, quarter and slice the apples very thinly.
  • Set aside.
  • Combine all the other ingredients in a large mixing bowl and beat with electric mixer set to"low" for 30 seconds.

10 cups apples (peeled, cored & chunked)
1 cup sugar
1 tablespoon cinnamon
1/2 teaspoon nutmeg

  • Place apples in crock pot; cook on high for 4-1/2 hours (covered).
  • After 4-1/2 hours stir and add remaining ingredients. Cook for another 4-1/2 hours with NO lid.
  • Stir and seal in jars.
  • *Can seal in hot water bath or top with paraffin.
