QUICK AND EASY CORN FRITTERS



Quick and Easy Corn Fritters image

Celebrate summer with a quick and easy recipe for corn fritters that can be made with fresh or frozen corn kernels.

Number Of Ingredients 9

3 cups corn kernels (See Kelly's Note)
1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Sour cream or garlic aioli, for serving

Steps:

  • In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Stir in the eggs and heavy cream until the batter is well-combined.
  • Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
  • Garnish the corn fritters with scallions and serve them with sour cream or garlic aioli for dipping.

I haven't had these corn fritters in years, and made my mom's recipe tonight. They are super easy and really tasty. They basically taste like pancakes with corn in them. I think they would be a great way to sneak some veggies into your pickier eaters diet.

Number Of Ingredients 9

2 cups corn (frozen)
1 egg, well beaten
1 teaspoon sugar
1/2 teaspoon salt
1 tablespoon butter, melted
2 teaspoons baking powder
1 cup flour
2/3 cup milk
1 tablespoon canola oil (more may be added to additional batches, but is not necessary)

Steps:

  • Thaw frozen corn by placing it in a strainer in the sink and run cold water over it, stirring occasionally, until it is completely thawed.
  • While corn is thawing, mix all of the remaining ingredients except oil in a large bowl.
  • Add thawed corn to batter and mix well.
  • Heat oil in a large non-stick skillet on medium-high.
  • Drop spoonfuls of batter into skillet. Brown on both sides.
  • Drain on paper towels before serving.

12 oz canned sweet corn

Steps:

  • 1. Use juice from corn and add enough milk to make 1/4 cup. Pour into bowl and add all remaining ingredients, mix well. Drop by the spoonful into fryer or hot grease. Be sure to turn them so they don't burn, cook till golden brown. Drain on paper towels, serve warm.

1 cup all-purpose flour
1 1/2 teaspoons baking powder
2 eggs
1/3 cup milk
1 1/2-2 cups leftover corn or 1 (15 ounce) can corn, drained
1 tablespoon butter, melted
oil (for frying)
salt and pepper

Steps:

  • Combine flour and powder in a large bowl.
  • In a medium bowl, beat eggs and milk.
  • Stir in corn and butter.
  • Stir gradually into dry ingredients until just blended.
  • In a deep fryer, electric frying pan or chicken fryer, heat oil until 375 degrees.
  • Drop batter into heaping teaspoonfuls into hot oil and fry for 2- 3 minutes.
  • You can also do this using less oil in a skillet, just flatten them a bit with the back of the spoon and then turn them like pancakes.
  • Drain on paper towels.
  • Some people put confectioner's sugar or syrup on these, we eat them plain.

  • Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. 4 large potatoes
1 medium onion, sliced
1 (10 3/4 ounce) can cream of mushroom soup or 1 (10 3/4 ounce) can cream of celery soup, if you prefer
salt and pepper
1/2 cup sliced carrot (optional)
1/2 cup sliced mushroom, any varity works (optional)
1/2 cup sliced parsnip (optional)

Steps:

  • Place steak in a casserole.

Fritters are a pleasing side dish. The sugar can be adjusted if you like things a bit sweeter. The recipe calls for deep frying them, but I have also done them in a skillet with just enough oil to cover the bottom of the pan.
