GRANDPA'S MOLASSES GINGER COOKIES

Number Of Ingredients 11

3/4 cup salted butter
3/4 cup organic turbinado sugar
1/4 cup unsulphured blackstrap molasses
1 egg
1 1/2 Teaspoons Vietnamese cinnamon
3/4 Teaspoon ground cloves
3/4 Teaspoon ground ginger
1/4 Teaspoon sea salt or to taste (you'll need less if it's table salt)
2 Teaspoons baking soda
2 cups gluten free flour, I used Namaste
about 1/4 cup extra sugar for rolling the cookies

Steps:

  • Preheat the oven to 375ºF and line a baking sheet with parchment paper.
  • Cream the butter and sugar together with an electric mixer until light and fluffy, 4-5 minutes, scraping down the sides 2-3 times.
  • Add the molasses, egg, and spices, and beat to combine, about 1 minute, scraping down the sides when needed.
  • In a separate bowl, combine the sea salt, baking soda, and flour.
  • Add the flour mixture to the butter mixture and mix until combined with no flour pockets remaining.
  • Shape the cookies by spooning out 2 Tablespoons of dough at a time and rolling each portion into balls. Roll the cookie balls in the extra sugar before placing them on the parchment lined baking sheet.
  • Bake the cookies for 6-8 minutes or until they've puffed up in the middles but are still moist in the center.
  • Remove the cookies from the oven and cool on a cooling rack. Repeat the shaping and baking process until all the cookie dough has been baked.
  • Cooled cookies can be store at room temperature for 2-3 days or frozen for up to 1 month.

Yield Makes about 30 cookies

Number Of Ingredients 12

1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon fine salt
8 tablespoons (1 stick) unsalted butter, at room temperature
3/4 cup smooth peanut butter, at room temperature
1/2 cup firmly packed dark brown sugar
1/2 cup firmly packed light brown sugar
1 organic large egg, at room temperature
1 teaspoon vanilla extract
1 cup peanut butter chips
1/4 cup granulated sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Whisk together the dry ingredients in a medium bowl. In a large bowl, cream together the butter, peanut butter, and brown sugars. Stir in the egg and vanilla. Add the flour in thirds and stir until smooth. Fold in the peanut butter chips. Roll the mixture into golf ball-sized balls (about 1 1/2 tablespoons). At this point you can roll them in granulated sugar or you can press each cookie down with the tines of a fork. Either way, bake for 10 minutes, in a nonstick baking pan, rotating the pan halfway through baking time. Cool the cookies on a rack before serving.

This is my husband's grandmother's recipe that is cherished by the family. They are the best cookie that melts in your mouth. They don't have the normal peanut butter fork crossing...but more of a crackled sugar type cookie... My husband comes from a huge family - and these are one of the cherished recipes!!

1 cup brown sugar, firmly packed
1 cup white sugar
1 cup Butter Flavor Crisco
1 cup creamy peanut butter (Skippy)
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla
2 teaspoons baking soda
2 cups flour (1/4 cup more if needed)

Steps:

  • Cream together the sugars, Crisco, peanut butter.
  • Add the eggs and vanilla.
  • Sift the dry ingredients together and add gradually until blended well.
  • Roll into tablespoon size balls.
  • Roll cookie dough balls into sugar.
  • Place on cookie sheets- do not mash with fork in normal "peanut butter cookie" fashion!
  • Bake at 350° oven for 11-13 minutes.

My Grandma and Mom made these cookies often when I was growing up and I have been making them for my kids for 20 years! I have tried many other peanut butter cookie recipes, but this one is still our favorite. Crispy, but a light texture . . . they almost melt in your mouth!

1 cup softened butter
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 large eggs
1 cup carnation powdered milk
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Cream butter and peanut together in a large bowl.
  • Add sugars and eggs, mix well.
  • Sift together dry milk, flour, baking powder, baking soda and salt, stir into butter mixture.
  • Let dough stand 15 minutes.
  • Roll into balls, about the size of a walnut and place on a slightly greased baking sheet.
  • Flatten with a fork, dipped in flour, criss-cross fashion.
  • Bake at 375 degress for 10-12 minutes.
  • Watch closely and remove when tops just start to brown.
  • Wait about 5 minutes before removing from baking sheet. Cool on racks.

1/2 cup brown sugar, firmly packed
1 cup shortening
1 teaspoon vanilla
2 large eggs
2 1/4 cups flour
1 teaspoon baking soda

1 (12 ounce) package chocolate chips

Steps:

  • Preheat oven to 375°.
  • In a mixing bowl, cream together the first five ingredients.
  • After creaming the first five ingredients add the last four and make sure everything is mixed together well.
  • Drop by tablespoonfuls on to cookie sheets and bake for 9-10 minutes.
  • For M&M cookies: Replace chocolate chips with M&M plain baking bits.

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.
