8 tablespoon (1 stick) unsalted butter
1 (8-1/4-ounce) can creamed corn
1 (8-1/4-ounce) can whole corn kernels, drained
1 cup finely chopped scallions, including some of the tender green tops
1 cup sour cream
1 large egg
1 (8-ounce) package cornbread mix

Steps:

  • Preheat the oven to 350°F. Coat a deep-dish pie plate or 8 x 8-inch baking dish with cooking spray.
  • Put the butter in a large microwave-safe bowl and microwave until melted, about 1 minute.
  • Stir in the creamed corn, whole corn kernels, scallions, and sour cream. Add the egg and mix well. Add the cornbread mix and stir just until no dry mix remains-do not overmix.
  • Pour the batter into the baking dish and cook for about 1 hour, until beginning to brown around the edges and a toothpick inserted in the center comes out clean. Cut into squares and serve.

A creamy Southern-style corn casserole, this dish is straight from Grandma's kitchen and ready to grace any table with it's delicious presence.

1/2 cup butter
1/4 cup flour
1/4 cup granulated sugar
2 eggs beaten
1 cup half and half
1 can whole kernel corn, drained
1 can cream-style sweet corn
salt & pepper, to taste

Steps:

  • In a large skillet, melt the butter over medium low heat. Remove the skillet from heat. When the butter's cooled, whisk in the flour until smooth and evenly incorporated.
  • Whisk in the sugar, eggs, and milk- again until evenly incorporated.
  • Stir in both kinds of corn, until evenly combined. Season with salt & pepper, to taste.
  • Transfer the mixture to an 8x8" baking dish, and use the back of the spoon to smooth out evenly.
  • Bake at 350 degrees for an hour and fifteen minutes, or until a toothpick inserted into the center of the casserole comes out clean, and the casserole is lightly browned on top.
  • Remove the dish from the oven, and let it rest for 5 minutes. Serve while still warm. Enjoy!

1 (14 ounce) can whole kernel corn
½ cup milk

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cream-style corn, whole kernel corn, milk, eggs, butter, sugar, cornstarch, and vanilla extract together in a bowl; pour into a 2-quart casserole dish.

4 large eggs
1 cup whole milk
1 can (15 ounces) cream-style corn
1/2 cup sugar
5 slices day-old bread, crusts removed
1 tablespoon butter, softened

Steps:

  • In a bowl, beat eggs and milk. Add corn and sugar; mix well. Cut bread into 1/2-in. cubes and place in a greased 9-in. square baking dish. Pour egg mixture over bread. Dot with butter. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-60 minutes.

1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 cup sugar
4 tablespoons baking powder
2 teaspoons salt
1 teaspoon crushed red pepper flakes
5 large eggs
1/2 cup melted butter
1 3/4 cups milk
2 (14 ounce) cans creamed corn

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix all the dry ingredients together in a bowl.
  • Mix the eggs, butter, milk and creamed corn.
  • Add the flour mixture to the wet and mix until just combined.
  • Grease a large 9 X 13 rimmed baking dish. Pour the pudding mixture into the pan and place it in the oven. Lightly tent the pan with foil.
  • Bake for 1 hour, until the center is just set. Take the foil off the last 10-15 minutes so the top will be golden.

8½ ounces cornbread/muffin mix (1 package, I used Jiffy)
½ cup milk
15 ounces canned corn (drained)
15 ounces cream style corn (undrained)

Steps:

  • Preheat oven to 350 degrees.
  • Spray 9x13" baking pan with non-stick cooking spray. Set aside.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add eggs in one at a time, beating well after adding each one.
  • Beat in sour cream.
  • Add in muffin mix and milk, mix well.
  • Fold in the corn.
  • Pour mixture into prepared 9x13" pan. Bake uncovered for 40-45 minutes or until set and lightly brown.
