1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs, room temperature
2 bottles (1 ounce each) red food coloring
1 tablespoon white vinegar
1 teaspoon vanilla extract
2-1/4 cups cake flour
2 tablespoons baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
FROSTING:
1/2 cup cold water
1 tablespoon cornstarch
2 cups butter, softened
2 teaspoons vanilla extract
3-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in food coloring, vinegar and vanilla. In another bowl, whisk together flour, cocoa, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition., Pour into 2 greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool layers 10 minutes before removing from pans to wire racks to cool completely. , For frosting, combine water and cornstarch in a small saucepan over medium heat. Stir until thickened and opaque, 2-3 minutes. Cool to room temperature. Beat butter and vanilla until light and fluffy. Beat in cornstarch mixture. Gradually add confectioners' sugar; beat until light and fluffy. Spread between layers and over top and sides of cake.

  • Gradually beat in confectioners' sugar.
  • Spread the frosting between layers and over top and sides of cake.

2 cups granulated sugar

1 cup buttermilk
1 Tbsp. vinegar
3 eggs
2 tsp vanilla
2 ounces red food coloring
1 Tbsp. cocoa powder
1/2 tsp salt
2 1/2 cups flour
1/4 tsp baking powder
1 1/2 tsp baking soda
1 cup milk
1 cup flour
1 cup granulated sugar
1 cup butter, softened
2 cups shredded coconut
1 cup chopped pecans
1 tsp vanilla

Steps:

  • Preheat oven 350ºF. Line two 9-inch round cake pans with foil and grease with a non-stick cooking spray. Set aside.
  • Cream the butter and sugar together. Mix in the buttermilk, vinegar, vanilla, food coloing and eggs.
  • In a separate bowl, mix together the cocoa powder, salt, baking powder, and baking soda. Add dry ingredients to the wet ingredients and mix until batter forms and is a uniform color.
  • Divide batter between the two cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before cutting each cake through the center to create 4 layers of cake.
  • In a small bowl, whisk together the flour and milk until thick paste forms. Set aside.
  • Cream together the butter, sugar, and vanilla. Mix in the flour paste, coconut, and chopped pecans.
  • Layer the frosting in between each layer. Garnish with additional coconut and pecans if desired.

  • Cake: 1. Cream shortening and sugar in bowl with mixer until light and fluffy. Add eggs, one at a time, mixing well after each addition. 2. Combine cocal, food coloring and hot water in small bowl; mix until smooth. 3. Stir in the creamed mixture. 4. Sift flour with salt 3 times. Add to creamed mixture alternately with mixture of sour milk and baking soda; mixing well after each addition. 5. Stir in vanilla. Pour into 2 greased and floured 9 inch cake pans. 6. Bake at 350 degreed for 30 minutes or until cakes test done. 7. Cool in pans for 10 minutes. Remove to wire racks to cool completely. 8. Spread with Red Velvet Mocha Frosting. Frosting: 1. Cream butter until light. Sift in confectioner's sugar, beating constantly until fluffy. 2. Combine remaining ingredients in small bowl and mix well. 3. Add to creamed mixture; beat until of spreading consistency, adding additional coffee if necessary.

  • Split layers fill and frost with the following frosting.
  • Frosting: Add milk to flour slowly, avoiding lumps.
  • Cook flour and milk until very thick, stirring constantly.
  • Cool completely.
  • Cream sugar, butter and vanilla until fluffy.
  • Add to cooked mixture.
  • Beat, high speed, until very fluffy.
  • Looks and tastes like whipped cream.

FLOUR FROSTING (RED VELVET CAKE FROSTING)



Flour Frosting (Red Velvet Cake Frosting) image

Although the title "Flour Frosting" doesn't sound very appetizing, this frosting is very good. It is fluffy with a slight hint of dairy from the milk and is not over-sweet. This is apparently a classic frosting for red velvet cake, but since it only has 1 cup of sugar in it (and it makes plenty to frost 24 cupcakes) it is also a great option for children's birthday parties. This comes out a very light creamy color, but can be easily tinted with gel or paste food coloring. I found this recipe on a blog: Obsessed with Baking. If you don't have vanilla sugar, add a teaspoon of vanilla extract when you add the butter. If you refrigerate this frosting be sure to bring it to room temperature before serving or, like Swiss Meringue Butter Cream, the texture can be a little stiff. If you refrigerate it prior to frosting your cake and it seperates as it warms, just whip it back up for a few minutes in your mixer and it will be good to go.

Steps:

  • Whisk together the flour, sugar and salt in a saucepan until combined. Add the milk and cook over medium heat until it barely simmers (bubbles around the edge of the pan), whisking constantly. It will thicken slightly.
  • Pour mixture into the bowl of a stand mixer and mix on high until the outside of the bowl is cool to the touch (about 8-10 minutes).
  • Reduce the speed to low and add the butter (and vanilla extract if you are using it). Once the butter is incorporated, turn the mixer up to medium-high speed and whip until the frosting is light and fluffy (about another 3-5 minutes), scraping down as needed.
  • If you are tinting your frosting, add the coloring and continue to whip until the color is evenly distributed.
  • Use immediately to frost a two-layer cake, or 24 cupcakes.

From The Lady and Sons Savannah Country Cookbook. This is definitely not a traditional Red Velvet cake, but it's very moist and sweet and it was highly complimented when I made it for my family. Some people sub a container of marshmallow creme for the mini marshmallows. I have seen versions of this recipe with 9" rounds and 8" rounds--I used 8". UPDATE: Other sources on the web, including Food Network and Paula Deen's site, list 2 Tablespoons of cocoa rather than the 1 tsp listed in the cookbook. I also have a penciled note on my copy saying to add 1/2 cup applesauce (for moistness).

  • Beat thoroughly after every addition.

  • TO FROST: In a small sauce pan cook together your milk and flour, stirring constantly until thick.
  • Let cool, then add vanilla and mix well.
  • Cream the butter and sugar in a separate bowl, then gradually add the flour mix.

1 cup sour cream
1/2 cup water
1/4 cup canola oil
1 ounce red food coloring

1 teaspoon vanilla extract

Steps:

  • MIx ingredients for cake with an electric mixer as directed on the box. Pour into a 13x9 baking pan or 2 - 9 inch layer pans greased and floured. Bake at 350* for 25-35 minutes or until done when checked with a toothpick. Cool cakes completely before frosting.
  • To prepare frosting combine the flour and milk, whisking till smooth. Cook over medium heat in a saucepan to form a smooth paste. Cover with plastic wrap and set aside until cold. In a mixer bowl cream the butter and sugar until light and fluffy. Add the cooled paste in small amounts and whip until incorporated and the frosting is no longer 'grainy' from the sugar. Add vanilla and frost the cake.
