GRANDMA'S OYSTER DRESSING

Grandma's Oyster Dressing image

A family favorite - passed down from my great-great grandma. Could definitely be slimmed down, but I'm entering it in the old-fashioned way just so I know how to count it on Thanksgiving. :)

Categories     Side Items     Thanksgiving     Thanksgiving Side Items     Side Dish     Side Items Side Dish

Yield 12

Number Of Ingredients 11

20 oz. white bread
1 stick butter
1 large onion
2 stalks celery
one pint oysters (drained)
2 tbsp oyster juice (reserved from oysters)
4 c. chicken broth
1 egg
1 tsp. salt
dash pepper
1.5 tsp. sage

Steps:

  • preheat oven to 375
  • chop celery and onion, then saute in butter
  • break bread into pieces and put into large bowl
  • to the bowl, add sauteed celery and onions, salt, pepper, sage and oysters.
  • boil chicken broth and pour over the bread mixture

GRANDMA'S OYSTER STUFFING

Grandma's Oyster Stuffing image

This is my grandma's Pennsylvania Dutch oyster filling (stuffing) recipe. It's quick and easy and always a favorite at my family's holiday meals. DISCLOSURE: I simplified the recipe by using a 12-ounce bag of store-bought stuffing, however, my grandmother would toast her own homemade bread cubes in a frying pan with shortening. (No one in my family has noticed the change, so this is our little secret...)

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 14

1 1/2 lbs lean ground beef
1/2 lb ground ham
1 (10 ounce) container oysters, with liquid
1 -2 cup seasoned bread crumbs (can substitute day old French bread cubes)
1 large onion, chopped
3 -4 garlic cloves, minced
1/2 cup bell pepper, chopped
2 stalks celery, chopped fine
1 1/2 cups green onions, sliced thin
1/4 cup parsley, minced
1 tablespoon paprika
salt
black pepper
1 dash cayenne pepper

Steps:

  • Brown ground beef and ham together, breaking up chunks; drain.
  • Add onions, garlic, bellpepper and celery. Cook until vegetables are tender, about 5 minutes.
  • Add green onions, parsley, paprika and season with salt, pepper and cayenne.
  • In the meatime with food processer, process oysters with liquid until pulverized.
  • To the browned meat/vegetable mixture add the processed oysters and cook for approximately 3-5 minutes, stirring to incorporate. Begin with 1 cup breadcrumbs, mixing thoroughly. Mixture should not be too dry nor too wet. If using French bread cubes, smash cubes with back of spoon until incorporated. Adjust seasonings.

  • For patti shells, spoon into individual shells and bake 10 - 15 minutes until heated through.
  • For poultry stuffing, stuff cavity and proceed with safety guidelines for stuffed poultry.

3 cups stale white bread
3 cups stale unsweetened cornbread
2 tablespoons butter
1 teaspoon vegetable oil

Return the turkey to the oven and continue roasting for the final hour. Serve as a side dish

COLONIAL OYSTER STUFFING

Colonial Oyster Stuffing image

Adapted from the City Tavern Cookbook. If you like oysters, give this a try! You can make this ahead if you wish, through the cooking covered for 30 minutes. Cool and refrigerate, then cook the next day uncovered until the top is golden and the stuffing is heated through.

Categories     Thanksgiving

Time 1h25m

Yield 8 cups, 8 serving(s)

Number Of Ingredients 15

1 lb firm white bread, crust removed insides cubed
2 medium onions, finely chopped
2 tablespoons olive oil
2 celery ribs, chopped
5 garlic cloves, chopped
1 tablespoon salt
1 teaspoon fresh ground pepper
2 fresh thyme sprigs, leaves pulled from stems
4 fresh sage leaves, sliced finely
1 teaspoon dried oregano
1/2 cup dry white wine
2 cups oysters, shucked (small oysters are preferred)
1 cup heavy cream
1/2 cup chopped parsley
1 cup chicken stock

Steps:

  • Preheat the oven to 325°F Spread the bread cubes in a baking pan, in a single layer.
  • Bake for 20 - 30 minutes, until the bread is dry and slightly colored. Remove from the oven and transfer to a large mixing bowl (this can be done ahead, just cool the bread and place in an airtight container until ready to use).
  • In a large skillet, saute the onions and celery in the oil over medium low heat until the onions are soft, 10 - 15 minutes.
  • Add the garlic, salt, pepper, thyme, sage and oregano, and sautee for 5 more minutes.
  • Add the wine, and cook until it is mostly evaporated, about 5 minutes. Transfer the vegetable mixture to the bowl with the bread cubes and mix well to combine.
  • Add the oysters, cream, and parsley to the bread mixture, and mix to combine.
  • Add enough of the chicken stock to the bread to moisten it, but not so much that it gets soggy (this depends on how dry your bread and vegetables were, so an exact amount is impossible to give).
  • Transfer the mixture to a lightly greased baking dish and cover with foil.
  • Bake for 30 minutes , then uncover and bake for about 10 more, until the top is crisp and golden brown.
  • Serve while still hot.

Categories     Recipes

Time 1h30m

Number Of Ingredients 10

¼ cup margarine
5 celery ribs with leaves, chopped
1 medium onion, chopped
1 teaspoon crushed dried thyme
½ to 1 teaspoon crushed dried sage
1 teaspoon salt (optional)
¼ teaspoon freshly ground pepper
2 1- pound loaves sliced, white bread
¼ cup chopped parsley
2 ½ to 3 cups canned chicken broth

Steps:

  • Preheat oven to 325°F. Melt margarine in a large nonstick skillet. Add celery and onion. Sauté until vegetables are very tender, about 10 minutes. Stir in thyme, sage, salt (optional), and pepper. Set aside.
  • Meanwhile, place bread slices on a baking sheet and lightly toast on both sides, about 10 minutes per side (or you can use the toaster). Break bread into bite-size pieces. Mix in vegetable mixture and parsley. (At this point, stuffing can be made one day ahead, placed in a self-sealing container, and refrigerated.)
  • In a medium saucepan, heat broth to a simmer. Place dressing mixture in a large mixing bowl. Add hot broth and stir until bread is evenly moistened, starting with 2½ cups broth and adding additional broth to reach desired consistency. Transfer mixture to a shallow baking dish. Cover with foil and bake for 30 minutes. Uncover and continue to bake until lightly browned, another 15 to 20 minutes.

  • Either one at a time, or in two separate saucepans, brown the onions and celery separately in about 1 tablespoon of the butter each. (Over the years we've determined it's much easier not to brown them together- it takes way longer and they don't brown at the same rate.)
  • When brown, transfer the onion and celery into a large mixing bowl and set aside to cool slightly.
  • Trim the crusts of the bread (I've made it before not trimming the crusts and while it's still good, I like the crust-free texture better.) and cut it into cubes. Transfer cubes into the same bowl as the onions/celery.
  • Melt the remaining butter and pour it into the bowl along with the broth, parsley and paprika. Mix together with your hands thoroughly.
