GRANDMA'S ALL-OCCASION SUGAR COOKIES

These sugar cookies are a huge hit, they're soft and chewy and every last bit of delicious. The best sugar cookie recipes for any occasion.

2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon double-acting baking powder
10 tablespoons unsalted butter (room temperature)
1 cup sugar
1 large egg
1 large egg yolk
1 teaspoon pure vanilla extract
Sugar or cinnamon-sugar (for dusting (optional))

Steps:

  • Whisk the flour, salt and baking powder together and keep close by.
  • Working in a mixer with the paddle attachment, if you have one, beat the butter at medium speed for a minute or so, until it is smooth. Still beating, add the sugar and continue to beat for about 2 minutes, until the butter is light and pale. Add the egg and the yolk and the vanilla and beat another minute or two. Reduce the mixer speed to low and steadily add the flour mixture, mixing only until it has been incorporated. In fact, because this dough is best when worked least, you might want to stop the mixer before all the flour is thoroughly blended into the dough and finish the job with a rubber spatula. When mixed, the dough will be soft, creamy and appealingly malleable.
  • Turn the dough out onto a counter and divide it in half. If you want to make roll-out cookies, shape each half into a disk and wrap in plastic. If you want to make slice-and-bake cookies, shape each half into a chubby sausage (the diameter of the sausage is up to you - I usually like cookies that are about 2 inches or more across) and wrap in plastic. Whether you're going to roll or slice the dough, the packets must be chilled for at least 2 hours.
  • Getting ready to bake the cookies: Center a rack in the oven and preheat the oven to 350 degrees F. Have two lined baking sheets at the ready. For these, I prefer to bake a single sheet at a time. You can fill both sheets and keep one sheet covered in the refrigerator while you bake the other.
  • If you are making slice-and-bake cookies, use a ruler to mark off 1/4-inch intervals on each roll of dough. With a sharp thin-bladed knife, slice the dough into rounds and place the rounds on one of the baking sheets, leaving about 1 1/2 inches of space between each cookie.
  • If you are making roll-out cookies, work with one packet of dough at a time and roll the dough between sheets of plastic wrap or wax paper to a thickness of 1/4 inch, lifting the plastic or paper and turning the dough over often so that it rolls evenly. Lift off the top sheet of plastic or paper and cut the cookies - I like a 2-inch round cookie cutter for these. Pull away the excess dough, saving the scraps for re-rolling, and carefully lift the rounds onto the baking sheets, leaving about 1 1/2 inches of space between each cookie. (This is a soft dough and you might have trouble peeling away the excess or lifting the cut outs. If so, cover the dough, chill it for about 15 minutes and try again.) After you've rolled and cut the second packet of dough, you can form the scraps into a disk, chill, roll, cut and bake them.
  • Bake the cookies, one sheet at a time, for 9 to 11 minutes, rotating the sheet at the mid-point. The cookies should feel firm, but they should not color much if at all. Remove the pan from the oven and dust the cookies with sugar or cinnamon-sugar, if you'd like. Let them rest 1 minute before carefully lifting them onto a rack to cool to room temperature.

1/3 cup butter (room temperature)
1 cup (plus 2 tablespoons brown sugar)
2/3 cup white sugar
2 eggs
1 rounded teaspoon baking soda
1/2 teaspoon vanilla
1 teaspoon maple syrup (I used the fake stuff for years and it works fine as well if you don't have maple)
1 cup crunchy peanut butter
3 cups old fashioned rolled oats
1/3 cup semi-sweet chocolate chips (slightly heaped)
about 1/3 cup m&m candies (reserved for topping)

Steps:

  • Preheat oven to 350 degrees. Cream together the butter and sugars. Add the eggs, vanilla, syrup and baking soda. Add the peanut butter and then the oats. Stir well to combine and then add the chocolate chips, mixing them in thoroughly.
  • Scoop generous cookie mounds onto cookie sheets and then top with m&ms. Bake for approximately 12 minutes, watching carefully to make sure they do not overbake. The cookies should be barely browned around the edges and just past looking wet on top. Cool on sheet for 1 minute and then remove to wire rack.

I got this recipe from my grandma. These cookes do not last long around the house when I make them. Cooking time includes time to cook each sheet of cookies and not the whole batch.

1 cup shortening
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups M&M's plain chocolate candy

Steps:

  • Cream shortening, sugars, eggs, and vanilla thoroughly. Sift together flour, soda, and salt. Add dry ingredients gradually to creamed mixture. Mix well. Stir in 1/1/2 cups M&Ms. Reserve remaining candies for decorating.
  • Drop by teaspoon on ungreased baking sheet. Decorate tops of cookies with remaining M&M's. Bake at 375 degrees for 10 to 12 minutes, or until brown. After baking, some of the candies may be slighly cracked. This adds texture and interest to your cookies. Makes about 6 dozen 2 1/2 inch cookies.
  • If you use self-rising flour, omit soda and salt.

We took our favorite chocolate chip cookie recipe and increased the brown sugar to make these cookies extra moist and chewy. Then we super-sized them -- the better to get in more of our favorite candy-coated chocolates. Save some extra candy for topping each cookie before baking. The result, cookies that look just as good as they taste!

2 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 1/2 sticks (1 1/4 cup) unsalted butter, softened
1 3/4 cup packed dark brown sugar
1/4 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
2 cups candy-coated chocolates, such as M&M's

Steps:

  • Sift the flour, baking powder, baking soda and salt into a large bowl.
  • Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Reserve 1/4 cup of the chocolates, then stir in the remaining 1 3/4 cups of chocolates by hand. Press plastic wrap directly onto the surface of the dough and refrigerate until chilled through, about 1 hour.
  • Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Roll the dough into 24 balls, each about 3 tablespoons (alternatively, use a #20 large cookie scoop). Place 6 dough balls on each of the prepared baking sheets; stud the top of each dough ball with some of the reserved chocolates. Bake 2 trays at a time until the cookies are golden around the edges but still soft in the middle, rotating the trays halfway through, 15 to 18 minutes. Remove from the oven and let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough and chocolates.

  • Cook til sugar is melted.
  • Remove from heat and QUICKLY stir in egg well.
  • Return to med.
  • heat, stirring constantly, til boiling.
  • Boil and stir 1 minute.
  • Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
  • Roll into balls, about 1" or so, roll in powdered sugar to coat.
  • Store airtight.
