GRANDMA'S BEST SALMON PATTIES
Perfectly spiced and fried to perfection, this s a favorite salmon patties recipe everyone loves!

Steps:
- Mix all ingredients except panko breadcrumbs in a medium bowl.
- Once thoroughly mixed, fold in bread crumbs.
- Refrigerate for 15 minutes for easy handling or you can begin shaping into patties for frying. It's up to you!
- Once mixture has been refrigerated, make patties with your hands.
- Heat medium-sized skillet to medium heat.
- Add 4-6 tablespoons of cooking oil to pan.
- Lightly pan fry several patties at once. About 4 patties at once.
- Once patties are golden brown, flip to the other side and continue frying until golden brown.
- Drain salmon patties on paper towels.
- Repeat for every patty.
- Serve immediately.

These is another good recipe from my Grandma , I enjoy this for lunch or for a dinner meal.

Steps:
- 1. Mix together : cornmeal , water and the salmon.
- 2. Then add the egg and salt and pepper to taste.
- 3. Mix well : Make spoon patties and place into a fry pan. Fry SLOWLY on both sides.
- 4. Place on a platter and sprinkle with some grated cheese. Garnish with a tomato.

Steps:
- Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
- Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
- In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

Steps:
- 1. Drain salmon well, and remove skin and bones if not using boneless skinless. Place into medium mixing bowl and mash up with fork. Add all other ingredients except oil and butter and mix together (mixture should be stiff enough to form patties, but not too dry). Form into patties and place in a pre-heated skillet over medium heat with the vegetable oil and melted butter mixed together. Cook until deep golden brown on both sides. About 4 minutes per side, but watch so they don't burn and that they are nicely browned. Can sub 1/2 cup flour if preferred over crushed crackers. And if you prefer them "poofed" a little, add 1 1/2 tsp. baking powder. Serve with sauce of choice!
GRANDMA'S SALMON LOAF
This is the closest I could come to the salmon loaf my Grandma used to serve, always with a baked potato, often with a side of broccoli. It works great with reduced fat Ritz crackers (I have tried it out), skim milk, egg substitute and olive oil instead of butter, which brings the saturated fat content WAY down while keeping the flavor and texture.

Steps:
- Drain canned salmon liquid into measuring cup. Add milk to total 1 cup.
- Flake salmon and add to milk/salmon liquid.
- Combine with all remaining ingredients and mix lightly.
- Pour mixture 8"X4" loaf pan, either well greased or treated with cooking spray.
- Bake at 375 degrees for 45 minutes to one hour.
- Serve with lemon wedges.
