HOMEMADE TACO SHELLS #1
These are so good, you may NEVER buy taco shells again! But be prepared to be the last one to have a chance to sit down and eat. As soon as I sit down to eat my first taco, my guests are needing their 3rd or 4th or 5th one cooked...But, it is well worth it to hear that these are the best tacos they have ever had!

Steps:
- Preheat a dry skillet over medium/high heat.
- Mix the ingredients well.
- The batter will be runny.
- Drop by large utensil spoonful onto skillet, quickly spreading the batter in a circular motion, working from the inside out.
- Each side only takes about 1 minute of cooking.
- The shells are not supposed to brown.
- When the shells are removed from the pan, they can be molded into"taco shell shape" by placing, half-curled, between two objects, such as coffee cups.
- I like to serve them to each guest directly from the pan without molding them, however, becuz I find that they dont crack while still hot and pliable.
- Fill with all the taco stuffin's and enjoy!
CORN TORTILLAS/TACO SHELLS
A Mexican meal is just not complete without some tortillas to butter or wrap around fillings. Tortillas can be found on Mexican tables and at nearly every meal.

Steps:
- Combine masa harina with water.
- Mix with hands until dough is moist but holds its shape.
- Add more water if needed.
- Let dough rest for 15 minutes.
- Divide dough into 12 balls.
- Dampen dough slightly with water.
- Using a tortilla press or a flat baking dish, press dough between two pieces of waxed paper to a 6 inch round.
- Carefully peel off the top sheet of paper.
- Place tortilla, paper side up, on a hot ungreased griddle or skillet.
- Gently peel off remaining paper.
- Cook for 30 seconds or until edges begin to dry.
- Turn and cook until surface appears puffy.
- Repeat with remaining dough balls.
- To make taco shells: In a heavy skillet heat 1/4 inch cooking oil.
- Fry each tortilla 10 seconds or until limp.
- With tongs, fold tortilla in half and continue frying holding edges apart.
- Cook 1 1/4 to 1 1/2 minutes more or until crisp, turning once.
- Drain on paper towels.
HOMEMADE TACO SHELLS
these are homemade soft taco shells my mom would make when we were growing up, we always loved them. I don't know where she got the recipe i don't think she even knows, she's a great collector of recipes. My husband even likes these and he's not a big fan of soft taco shells!

GRANDMA'S HOMEMADE TACO SHELLS
Don't expect a tortilla when you make this recipe. Thin like a tortilla, but way better in flavor. Never buy taco shells from the store again. My grandma used to make these all the time.

PUFFY TACO SHELLS
I actually saw these made on Bobby Flay's "Throwdown" on the Food Network and couldn't resist reposting this for future use. They're simple to make and are a great way to mix things up on Taco Night!

Steps:
- Combine all ingredients in a large bowl and mix thoroughly.
- When the dough is consistent begin rolling dough balls about the size of a ping pong ball.
- Using a tortilla press that is lined in a thick plastic, press out the dough. You use the plastic (it can be a ziploc bag that has been cut) so that the dough does not stick to the tortilla press.
- Meanwhile have a deep pot filled with cooking oil approximately 2 inches high and heated to 250 degrees.
- Drop the flat tortilla in the hot oil and using a metal spatula repeatedly douse with the oil.
- You will see that it will begin to puff up.
- Flip it over and using the spatula make an indention in the middle of the tortilla to forma taco shape.
- Remove from oil and allow to drain.
- Fill with ground meat, shredded chicken, guacamole, bean and cheese or your favorite filling. Top with shredded lettuce and diced tomato.
- Caution: Be very careful when making these. Make sure there is proper ventilation and do not allow the oil to get too hot. Also, if you can't get your hands on a tortilla press then use a clean counter. You will still need the plastic so that the dough does not stick to the counter. Place your dough ball on the plastic and cover with more plastic and then using something heavy to press it out.

This is an excellent, easy method for making low-fat taco shells. NOTE: More than one ingredient is required. The cooking oil ingredient is not to be used.

- Bring a large pot of water to a boil over high heat. Stir in the shell pasta, and return to a boil. Cook the pasta uncovered, until just slightly firm to the bite, about 13 minutes. Drain well.
- Brown the ground beef in a large skillet; drain fat. Stir in the taco seasoning and water; cook over low heat until thickened, about 5 minutes. Stir the refried beans and 3/4 cup Cheddar cheese into the taco meat. Spoon meat mixture into prepared pasta shells.
- Spoon 1/4 cup salsa over the bottom of a 9x13 inch baking dish. Arrange filled shells over salsa. Spoon remaining salsa over shells.
- Bake in preheated oven for 40 minutes. Remove from oven; sprinkle with sliced green onion and 1/4 cup shredded Cheddar cheese. Serve with sour cream.

I got this recipe from my sister when she was living in Russia and couldn't buy shells over there. A neighbor came up with this recipe for her and she enjoyed them so much she wanted to pass it on to all of her family! Hope you like them, too! Recipe adopted 8/2006.
