Grandma Morris' Carrot Cake With Cream Cheese Frosting image

I never knew what carrot cake tasted like until Grandma sent me this recipe. I am allergic to nuts and had to make it myself to try it! Consequently I have nothing to compare it to, but I have had several people tell me it is the best carrot cake they've ever eaten. I even made it for our wedding cake.

Number Of Ingredients 15

1 cup oil
3 eggs
2 cups sugar
2 cups carrots, grated
1 (20 ounce) can crushed pineapple, well drained
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 cup flaked coconut
1/2 cup chopped nuts (optional)
1 (4 ounce) package cream cheese
1/2 cup margarine
2 cups powdered sugar
milk (just a little)

Steps:

  • Heat the oven to 350°F.
  • Beat together the oil, eggs, and sugar.
  • Add the carrots and pineapple.
  • Sift together and mix into the carrot mixture the flour, cinnamon, soda, and salt.
  • Stir in the coconut and the nuts.
  • Pour into an ungreased 9x13-inch pan and bake at 350F for 45 minutes. If you are using a glass pan, bake at 325°F.
  • To make frosting, cream together the cream cheese and the margarine, then beat in the powdered sugar, and add just enough milk, if any, to make it a good spreading consistency.
  • When cool, frost the cake with the cream cheese frosting.

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
3 cups finely shredded carrots
1 cup oil
4 eggs
3/4 cup chopped walnuts (optional)
1 (8 ounce) package cream cheese
1/2-1 cup margarine
2 teaspoons vanilla
3 1/2-4 cups powdered sugar

Steps:

  • Mix dry cake ingredients.
  • Add carrots, oil and eggs.
  • Stir till all is wet.
  • Add nuts, (optional) Put in greased and floured 9 x 13 inch pan.
  • Bake at 325* for 50-55 minutes .
  • Cool.
  • Cream together cream cheese, margarine, vanilla Add powdered sugar.
  • Spread over cooled cake.

2 c flour
2 tsp baking soda
2 tsp cinnamon
pinch salt
3 c carrots grated to which you add the brown sugar
2 c brown sugar, lightly packed and let stand with the carrots for 30 minutes
1 1/4 c vegetable oil
4 large whole eggs
2 tsp vanilla

Steps:

  • 1. SHRED THE CARROTS AND LET STAND WITH THE BROWN SUGAR FOR 30 MINUTES. PREPARE PANS.... THIS IS A LARGE CAKE OR 2 - 8 INCH LAYER CAKE PANS BAKE 350 FOR 35 - 40 MINUTES.
  • 2. MIX THE DRY INGREDIENTS TOGETHER KEEP THE JUICE FROM THE CARROTS,BROWN SUGAR ADDING; OIL, EGGS, AND CARROTS TOGETHER
  • 3. BLEND WELL AND FILL PREPARED PANS. BAKE 350 FOR 35= 40 MINUTES OR UNTIL CAKE IS DONE
  • 4. ICING: 8 oz cream cheese 1/2 cup BUTTER 1 POUND OR 16 OUNCES ICING SUGAR 1 TEAS VANILLA 1 TEAS ORANGE JUICE 1 CUP FINELY CHOPPED PECANS (OPTIONAL)
  • 5. BLEND CHEESE AND BUTTER SLOWLY ADD SUGAR, VANILLA ORANGE JUICE AND NUTS IF USING. I USE MY FOOD PROCESSOR FOR THIS STEP. FROST CAKE WHEN COOLED.
  • 6. THIS IS A LARGE CAKE AND CAN BE EASILY HALVED OR FREEZE ONE CAKE AS DESIRED

This is my grandmother's recipe. It's super moist and delicious. Frost with your favorite cream cheese frosting

2 cups carrots, grated
1 (8 ounce) can crushed pineapple in juice
1 tablespoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 cup oil
3 eggs
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees. Grease and flour cake pan to prevent sticking if you plan on serving cake out of the pan.
  • Combine dry ingredients then add remaining ingredients. Bake for 45 minutes. (oven times vary).
  • Frost with Cream Cheese Frosting.

This recipe has been in our family for years and is the most requested. It produces a moist, delicately spiced cake which improves as each day passes! Store in an airtight container and eat within 10 days. There is no pineapple in this recipe (or my other carrot cake recipe). Minus the frosting, this cake also freezes perfectly.

Number Of Ingredients 17

4 ounces soft brown sugar
1/4 pint sunflower oil (use any cooking oil except olive)
1 ounce treacle
3 ounces golden syrup
2 medium eggs, beaten
8 ounces plain flour
1 teaspoon bicarbonate of soda
2 teaspoons ground cinnamon
6 ounces grated carrots
2 ounces desiccated coconut
2 ounces chopped walnuts
1 cup icing sugar
1/4 teaspoon cinnamon
2 teaspoons margarine (or butter)
1 teaspoon lemon juice
12 walnut pieces
water

Steps:

  • Preheat oven to 175°C.
  • Grease and line an 8" square or round tin.
  • Beat sugar, oil, treacle, golden syrup and eggs till smooth.
  • Sieve flour, bicarb and cinnamon and fold into mixture. Mix well.
  • Stir in grated carrots, coconut and walnuts and pour into prepared tin.
  • Bake for 1 hour or until firm to the touch.
  • Leave to cool a little in tin, then turn out onto rack and leave till cold.
  • Beat the margarine with the icing sugar, cinnamon and lemon juice. Add enough water to make a thick but spreadable frosting.
  • Decorate with walnut pieces.
