This wonderful and simple cranberry sauce is my grandmother's recipe. We had it every year at Thanksgiving and Christmas, and I predict you will have people begging for more.

1 (12 ounce) bag cranberries
2 navel oranges - washed thoroughly, unpeeled, cut into quarters
3 apples - peeled, cored and halved
1 cup pecans
1 cup white sugar, or to taste

Steps:

  • Place the cranberries, oranges, apples, pecans, and sugar in the bowl of a food processor. Process until all ingredients are evenly ground, 2-3 minutes. Pour mixture into a bowl, cover, and refrigerate at least 2 days before serving.

This is the only cranberry sauce that I have found that I like. It is my grandmother's recipe. This is the original recipe. I am going to modify this year to do whole berries and just pare the apples ahead of time.

3 medium apples (I use granny smith)
1 lb cranberries, washed and picked over
1 1/2 cups water
3 cups sugar (my grandma's original recipe but I have cut mine down to 2 cups)

Steps:

  • Cut up 3 medium apples with peeling. Put in kettle with cranberries and water.
  • Boil until skins pop.
  • Push cranberries through fine sieve into bowl to capture the skins of cranberries and apples.
  • Add sugar to bowl and then put back to boil. Cook for 5 minutes. Pour into bowl.
  • Let Cool before putting saran wrap on and putting in fridge.

1 package (12 ounces) fresh or frozen cranberries, thawed
1 cup sugar
1 cup chopped walnuts, toasted

Steps:

  • Cut unpeeled orange into wedges, removing any seeds, and place in a food processor. Add cranberries and sugar; pulse until chopped. Add walnuts; pulse just until combined.

Steps:

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

1 small package of cherry Jell-O (3oz box)
1 c hot water
1 c sugar
1 Tbsp lemon juice
1 c drained crushed pineapple (8oz can) (juice reserved)
1 c pineapple juice (use the reserved juice and add water to make 1 cup)
1 c ground cranberries
1 orange (ground)
1/2 c pecans, chopped

Steps:

  • 1. Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
  • 2. Add the remaining ingredients and mix. Chill overnight.
  • 3. Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!

3 cups boiling water
1 (16 ounce) can whole berry cranberry sauce
1 (20 ounce) can crushed pineapple, drained
1 cup celery, finely chopped
1/2 cup nuts, finely chopped (walnuts or pecans)

Steps:

  • In mixing bowl, combing jello and boiling water; stir until dissolved. Add cranberry sauce to hot mixture; stir until melted. Allow to cool slightly . Transfer jello mixture to desired dish (mold, rectanglar pyrex, etc.) Add pineapple, celery and nuts over top. Place in refridgerator until set. YUM!

Steps:

  • 1. Cut orange into pieces. Do not peel orange.
  • 2. Put orange pieces and bag of cranberries into food processor. Run food processor until all pieces are chopped somewhere between fine and coarse.
  • 3. Add sugar to taste. Serve. The cranberry sauce can be frozen, if you make too much or want to save some for later.
